The green sauce, we called it "seafood sauce" or "nam jim seafood." It's made of Thai bird chilies, fish sauce, sugar (some ppl put palm sugar), lime and garlic. It's the mother of sauce. You put that on everything...well mostly seafood. LOL

I used to be a fast-eater before (like i'm just inhaling the food) becoz i think it's how i'm gonna enjoy the food but ever since i started watching your channel ( and mark wiens too you two are my faves), i started eating slowly and enjoy the food so i think that's a plus

I get to go back to Thailand this week and I'm definitely going back to that market again. I went to it for the first time the last time I went there and it was amazing XD. Hey if you're still there you should check out a mall called Mega Bangna and go to a restaurant called Pepper Lunch and another one called Fuji (Japanese restaurant). It's pretty great. Don't get confused lol I'm a Thai girl living in the US. I go back to Thailand every summer.

Too many people are too uppity about "ethnic" food they aren't used to. That's why most Thai restaurants can be found in larger cities. Just consider how many people make stupid jokes about keeping their pets safe because there's a Chinese restaurant in town, and those are pretty much everywhere and very American.
You can get most of these foods in larger cities that have Asian districts but it's going to cost a lot more considering the ingredients have to be shipped half way across the world. Also there is different regulation when it comes to food and safety.
Yeah. I can't find hot Thai or any other type of spicy ethnic food in my area. I am in Arizona and grew up on hot chiles in everything. My guess is that they get tired of customer complaints and having food sent back. Some restaurants try to go bold but eventually dummy it down to appease the masses. Ran into an interesting problem at an authentic Chinese restaurant. Ordered something exotic, (don't remember what), and the server refused my order saying I would not like it. Adamantly refused even when I argued. Never went back. It's OK. I have been cooking for 50 years and just enjoy my meals at home now. Seldom go out.

Yup, yup. We should visit the places where Thai people go or popular among them, because we will find good quality and delicious food there. It's REAL Thai taste.
Most Pad Thai and noodle soups in Thailand are rather bland. Thai customers usually season their noodles with traditional condiments like sugar, fresh lime juice, ground peanuts, fish sauce, pickled green chilis, and dried red chilis. The "orange" Pad Thai found in the US is flavored with ketchup (hence the color) because Western customers don't know how to season their food. I also cringe every time Mike says Thai food tastes "vinegary" -- except for some Thai-Chinese food -- the primary acid flavor in Thai cuisine comes from fresh lime juice.

That Pad Thai looked very bland because good Pad Thai has an orange tint to it from the sauce. Those noodles look absolutely white.

Most Pad Thai and noodle soups in Thailand are rather bland. Thai customers usually season their noodles with traditional condiments like sugar, fresh lime juice, ground peanuts, fish sauce, pickled green chilis, and dried red chilis. The "orange" Pad Thai found in the US is flavored with ketchup (hence the color) because Western customers don't know how to season their food. I also cringe every time Mike says Thai food tastes "vinegary" -- except for some Thai-Chinese food -- the primary acid flavor in Thai cuisine comes from fresh lime juice.
