What size did you get? Is the smallest one sufficient?

Started a small business 1st of 2022, bought the Emery Thompson CB-350 after a lot of research, also bought the blast chiller they have made by Carpagiani…. The ET is so easy to run and clean, and the blast chiller has 2 separate doors and 2 complete separate refrigerant systems, I think that is a good idea….. Nothing cheap is ever good and nothing good is cheap……. Buy once …. Cry once…….4 months in and well on my way to ROI……ET made in USA and they have been in business over 100 years……..

I’m in America and I was wondering what brand of machine do I need for hard serve ice cream? Used?

Hi Steve, love your content btw, I have two soft serve stoelting challenger 1988 in my ice cream shop and they are pretty complicated to clean and sanitize. It takes me about 3 hours to wash one. I do love Stoelting machines tho and I was wondering if the more recent ones were a lot easier to clean and also if my employees would be able to wash them with ease. Thank you so much for your content. I send you love from Quebec Canada

Hi Steve. I really appreciate your generosity of time and knowledge to educate us who are pursuing the ice cream industry. Therefore, I have a question for you, do you have a go-to source for used blast freezers?

Which machine do you recommend if I am making various dips for my soft serve. Gravity or pump? So that the ice cream doesn't fall. Sorry I have no idea about the ice cream business.

Here I rolled into this video hoping you’d just tell me which custard machine to buy. Curse you, Steve, making me make my own decisions! 😂 I’m currently drooling over one of the original Carvel Custard King machines, but I know it’s not the most logical purchase to start up my shop.

You are spot on with SAFES. Serviceability and functionality are the biggest things to consider. The best machines in my experience, Taylor, stoelting, electrofreeze
I am getting a Taylor softee for home use soon 😜
