    You can also put a 1 cup to 1 1/2 cups in a quart jar and some sugar. Add boiling water. Wipe rims and put lids. Can in water bath canner. Let sit at least 3 weeks. Strain out berries and you have juice.

    Amazing. I know you are done by now with house landscaping but if I can give you any advice I have learned over the years. Make your happy landscaping beds. With a VERY wide birth from house with mulch only then put a sidewalk THEN put your landscaping with bushes and things. Not only to minimize termites that will eat into a rock/brick home THAT HAS WOOD FRAME BUILT INSIDE (learned that the hard way after buying one) but to minimize fire hazards with plants being super close to house but still give the illusion and space of everything you dreamed of. Along with a path you would enjoy every single day.

    I have found several juicers at our local deseret industries for only a couple of dollars each. I have about four of them. I juice so many things. Grapes. Plums. Rhubarb I make juices or jellies out of them. It makes for such quick work. I swear by them!

I loved the funny clips you added with Riggs doing his taste test 😂 Living traditions homestead made cucumber chips one year and they used the organic powder Ranch, Italian and Dill salad dressing.packets from Azure. They looked really really good 😋🤤

    I've had the same results with freeze drying most vegetables for snacks. The whole flavor seems to mellow a lot so I've bumped it up. We love freeze dried green beans for a snack. I'll have to try the sweet potatoes now!

    I love watching you cook and preserve the bounty you’ve worked so hard for. What great ideas for the sweet potatoes! I wonder if just dehydrating might work for me since I don’t own a freeze dryer? I’m definitely going to use your hint about soaking the sweet potatoes for oven fries too. Regarding following canning rules…I use the same salsa canning recipe you use and every time I make it, it frustrates me to have to process it in half pint jars per the instructions. I’ve seen you process yours in pint jars and wondered if you could share your processing time for pints. I’m referring to the Roasted Tomato Lime Salsa recipe in the ATK book “Foolproof Preserving.” A half pint of salsa is a joke! Love the carved out face on the giant sweet potato! Ingenuity abounds in your household. So cute watching Riggs enjoy those sweet potatoes too.

      I think it would work to dehydrate sweet potatoes! I was thinking about testing this soon too. I'm curious if it's similar. Processing time is the same for the pint size salsa jars. I found that out by looking at every salsa recipe in the Ball Complete Book of Home Preserving. They have it listed that half pint and pint get the same processing time. Only in one recipe of the fifteen listed in the book is it 5 minutes longer processing for the pint size. So if you wanted to do the pint size and be on the safe side you can add an additional 5 minutes. But I've always done the same time and have had no problems.

    Love the boxwoods! We have some as well. They are the easiest for maintenance of all our shrubs. They'll look lovely! Can't wait to see the final look of your landscaping!
    I was super excited to teach myself canning a couple of years ago. Bought a water bath canner and a couple of books I saw you recommend. When I started reading, I realized my glass top stove was not the most ideal, mostly because I don't have a big enough element for the canner. So, I had to put that idea aside for the time being until we possibly get something like your old one for outdoors or when we move to our land where I can get a more suitable stove. I have had to freeze my jams and other recipes for now.
    I'll be looking at your sweet potato chips recipe to see if I can adapt it. I haven't been very successful growing sweet potatoes, partly probably because of our climate where we live in Canada. I buy organic sweet potatoes often though and use them in recipes. Looking forward to get a freeze dryer in the future when we have space after we move to our land, so for the time being I dehydrate certain things and my youngest has been pestering me to make chips.

    I have the same mandoline as you showed here in this video but I use it also with a cut resistance glove as a doble protection cause I know a person who sliced her fingers with one of this so please be very careful with it!! Sometimes even with the food holder it can get slippery.

    Lovely people ✨an idea about the landscaping around the house: one simple way to make it both very natural and interesting is to use logs and rocks. It's the most ornamental thing you can think of and creates a tiny mystery forest thing even if it's just a few square yards (or 20-30 sqf). You sont believe how effective of an illusion it creates...! The magic happens if the logs have stuff like moss and mushrooms growing on them and the rocks look spectacular when the rain or sunlight hits them. It looks both natural and luxurious, really interesting combo. The problem is of course there will be lots of life in this space so maybe having it right by the house isnt a good idea 🤔but it's so, so inspiring... It would look amazing with like an elder growing there. That space would be great for perennial stuff. Both pollinator plants and strawberries and maybe you can grow mushrooms as well! Standing mushroom with mycel plugs on the shadow side 👍 oh, and if this idea was too woo woo for you: the concept of rotting logs can be transferred to small garden beds! I know you garden on a much larger scale BUT if you have wood to spare you could make small beds and on the north side you implant mushroom mycelium 👍 and anywhere you put down wood chips for mulch - either in paths or by bushes and stuff - you can blend mycelium with it. Nd if you dont eat lots of mushroom yourselves then freeze dry them and/or grow really expensive kinds you can sell 👍

      I use a vacuum sealer for the jars, they stay super crunchy if the air is vacuumed out. If you don't vacuum seal and package right away they will still stay crunchy a reasonable amount of time, maybe a month. The problem we run into is my kids often snack and leave lids off accidentally so that's the main reason ours get soft, haha.

    Here’s an idea for preserving sweet potatoes. Don’t know if you like mashed sweet potatoes. You could cook and then freeze.

      I never like the taste or texture of frozen mashed potato when its thawed and heated. I can not put my finger on why the taste changes but to me its not pleasant. Unless its on a cottage pie covered with a little extra butter and a little mozzarella cheese.

    I have the same landscaping problem. My house is beautiful but surrounded by weeds. I have no desire to care for vegetation I can't eat ha ha. I tried to start planting edible things near my house so I would want to care for it more.

      Yes, I believe that would be the better way to do it if you wanted to bake them later. But I haven’t tested it yet.

      I got it from Roots and Harvest. That’s not the brand though … I can’t really remember what the actual brand is since it’s not anywhere on the pot that I recall.

    Watching a video is not the same as being there, but I noticed in one clip time stamp 6:35 you tighten the lid (in my opinion) too much. Again its hard to tell on video. Love the taste test on sweet potatoes.

      All good. Maybe just the video. I’ve canned thousands of jars with the same technique. Finger tip tight is what is recommended. The trouble usually comes when they’re a little too loose- especially with pressure canning all the jostling loosens the rings. If it was too tight, the lids would’ve buckled. It happened to a friend of mine once.
