    Marmalade originates from Portugal as a thick quince paste. It gets its name from Portuguese word for quince: marmelo. I think the first mention of marmalade in English comes from the 16th century, when Henry VIII got send some as a gift from Portugal.

      In the 19th century in England and America it was called Quince Cheese. I’ve made it a few times and it’s delicious!

      Quince paste with cheddar cheese is delicious. It is often included on a cheese board.

    For me, you two are the most relaxing,, soothing couple on TH-cam. I know your lives that haveto be really stressful, but when I watch either Max's shows or this, I feel like I can just relax. I am not even a Disney fan but keep doing what you are doing. It really helps after a bad day at work.

      Same. I started watching when he first started out. He had been furloughed due to Covid but was pretty confident things would turn out OK. I was not furloughed, but was in fear of being laid off in the middle of a pandemic with no jobs or heath insurance to be found. I found Max very reassuring and relaxing and he made me believe things would get better. A year later things got worse for me, I was let go and spent half a year trying to find another job but I stuck with Max and he always helped my anxiety level. Things are better now and it's hard to believe it's almost been 3 years.

      @@benjalucian1515 Going into the whole Covid thing, I had finally spent a few years with a solid job and luckily my company was able to weather things pretty well. But I was coming off a decade of struggling to find a job with proper benefits and a decent salary. I am glad things are better for you now, money doesn't buy you happiness, but neither does oxygen and having too little of either is a bad place to be.

    I love quince- usually available late fall. A ripe quince in the house will fill the house with floral apple-pear scent. I usually make a galette or small pie with them… but yeah, they can be hard to find.

    When I lived in the Florida Keys, Hibiscus grew in many places. For awhile, a fad erupted where folks bought many iguana lizards. I discovered that Iguanas LOVE to eat Hibiscus flowers! Folks then discovered that Iguanas grow very large!! As such, my Island became a sort of Jurassic Park. One day while driving, a 4' Iguana ran across the street in front of me, and climbed up a telephone pole!! WOW. I have a Mexican friend who makes Agua de Jamaica - a really refreshing drink made from Hibiscus flowers.

    Thank you, Jose, for your wonderful job on the subtitles! I am an old and my hearing (actually more like a slight aphasia that I've developed) sometimes necessitates subtitle use. This is one of the few channels that I don't hurt my eyes (from rolling them) when using subtitles.
    That being said, Max is very easy for me to understand unless I have to lower the volume on my computer when someone is sleeping in the next room.
    I really love your channel, keep up the excellent work!

    Hey guys, thanks fur all you do 😄 love it so much. It combines two of my biggest passions.
    Also, have you thought of doing Gardening History with Jose? I think it could be awesome, you could do tie in episodes, and how to grow certain stuff, plant origins, supposed medicinal properties, etymologies, farming/gardening practices in different ages/countries, folklore, in art, etc.
    Food for thought.

      Yes! to this idea and there's many brilliant books out there about the history of gardening and gardens. The Founding Gardeners is a great book and it's interesting to see that Franklin's war diplomacy may have been really about getting certain seeds, lol.
      This channel just gets better and better.

      In Canada we grow Quince to make Quince Jelly (gorgeous pink colour) and Quince paste to cut into slices for a cheese board.

    Boston Baked Beans candy has always been my favorite ... and yes, Max, they were peanuts surrounded by a hard candy shell. They can ordered on line from various suppliers. I occasionally come across them in "country stores" here in New England that like to feature old-fashioned candies.

    Well, I hit the like button on the St Columba episode, but I just couldn't think of anything to say that wasn't already in the comments. I really did enjoy it!
    My quince story: One of the good things to see in NYC in October is the Metropolitan Museum's collection of Medieval art housed at The Cloisters. It's an impressive castle-like building in Fort Tryon Park (up in the Bronx), which is a really gorgeous place in the Fall, due to the many trees which put on a show of riotous color. And one of the lovely sights at The Cloisters is [bad grammar, I know] the small terraces with small Medieval-style gardens, which you can step out to from several of the galleries. And one of those little gardens has a little quince tree in it. That garden looks like a living tapestry, with its neatly trimmed little fruit tree. And in October the quinces are ripe. They have an enchanting aroma. Just wanted to share my quince story. PS: Hi, Jaime!

    I really enjoy the videos where it's you and Jose". Plus I'm always excited when the video includes Mead. I have finally made the Mead recipe from the Mead episode.     I love the st. Columba episode!!!!! Oh also I accidentally chopped a Christmas tree that had a praying mantis nest in it. There was 40,000 praying manti climbing up my wall 😮

    Oatcakes are commonly served as crackers with cheese in the uk. Great with soft cheese, Brie or similar, and grapes.

      Or a nice strong cheddar. Plain oatcakes are basically sheets of dried porridge so any sweetness is a delayed enzyme reaction to the carbs.

    You two are so cute together! It was awesome getting to watch you taste all these treats and see your plants and kitty. My husband and I have been going through and marathoning your videos starting with most recent working backwards. We got to the trencher one yesterday so pretty close to all caught up. Definitely was surprised to see you didn't taste the food in your oldest videos. The quality now vs than is incredible. You should be so proud of what you've made!

    Quince are very available in North America! Several varieties, tree and shrub grow well in most zones here. You see them wild in Nova Scotia, the shrub variety. Quince paste or marmalade is called 'membrillo' in Spanish and is served as a condiment with cheese. It is very firm because quince is naturally loaded with pectin!

    You can get quince here in the US, just look in Latin stores for "Dulce de Membrillo", and is usually a product of either Uruguay or Argentina.
    A popular desert in Uruguay and Argentina is "Martin Fierro", which is essentially a hunk of dulce de membrillo, and a cheese, like a gouda or a slightly salty queso blanco.

      Also look at your fancier cheese shops and wine retailers. It’s usually sold as a paste. My local grocery has had it on occasion at the charcuterie cheese counter…

      You can also get fresh quince in some grocery stores in the San Francisco Bay Area, occasionally. It's not a regular thing, it's a seasonal specialty, but I was able to get enough a few years ago to make some quince marmalade. It's delicious!

      I find quince paste all the time. More higher end grocery stores, but go by the cheese section. It's usually an accompaniment for cheese.

    Great episode-as always! Thank you both…Max you must try cooking quince…Perhaps for an episode of Tasting History?! They look like large hard greenish-yellow apples,but start to smell amazing as they get ripe-but they don’t get soft. Peel,cut them up,sweeten,and cook ridiculously low & slow. Their light flesh softens and turns brilliant red-orange. Very popular in the Middle Ages,with much symbolism read into the fruit & it’s cooked transformation.

    A few people in our area, Tulalip WA, grow quince so I get plenty every year. Lots of Northern European and Turkish and Persian recipes. Asian groceries also carry them here.

    It's funny, I stumbled over the same store, when I was in York. Sadly my favourite gin we tasted, had only one bottle left and my friend got that one. My brother actually ordered me a bottle for my birthday.

    I think you would like Portuguese quince marmalade. Quince is widely grown is Portugal. Tastes great.

    In Europe, many expiration dates are printed in the format DD/MM/YY. Possibly the date of the tablet is in that format.

    Sloe berries are a type of plum too. I found that out when I bought a book of jam recipes that was very British. Australia does not have access to a lot of the common berries and stone fruit available in Britain, simply because we are sub-tropical to tropical, and those we do have are expensive and very seasonal.

    Omg its those berries! One of my most vivid highschool memories is being at a science day and one of the profs there fed these to a small child who HATED lemons. I loved seeing his facial expression after biting into a lemon. He immediately asked where he could get those

    We make tablet from a recipe that has been in my family for 150+ years. My dad remembers his grandmother making it, and his mom remembers her grandmother making it. The first mention of Tablet in Scotland is from the house books of Lady Grizel Baillie's from the early 1700’s.
    We would make and eat tablet before soccer games for energy boost. 🤣

      ​@@KetchupwithMaxandJose I have been a tea connoisseur all my life (grew up drinking sweet tea, sun tea, and hot tea), and, while a pet peeve of mine is calling things without tea leaves in it "tea" (herbal tea is most definitely not tea! lol), all of my hot or flavored teas (including fake tea like herbal) have to be sweetened. Only unflavored cold teas can be drank by me without being sweetened. To me, not sweetening hot or flavored tea is no different than not seasoning your food. So you sweetened your drink to your heart's content.

    The membrillo (quince) paste is available everywhere in Mexico, Jose! Our two quince trees thrive in Tucson despite the furnace heat so you can include one in your garden without fear. Max: have you tried medlars on your trips to the UK?

    I looove quinces! In my grandma's garden in Bulgaria there was a quince tree! Every autumn will have them and make preserves for winter, bake them, boil one special "tea" with them(wich includes other autumn fruits too and is good for colds) or just eat them like that when they ripen! Soooo yummy!

    Oatcakes especially in the north east are served with stovies and pickled beetroot. Stovies are diced leftover roast lamb or beef stewed with potatoes, neeps, gravy and a little stock

    Such a great video! Always fun to see you and Jose on camera together. These a Mead brewery in Portland, ME called Maine mead works that I’ve been to that had good Mead (but it was the only Mead I’ve ever had so not much to compare to..). And I watched you last video! Great as always!
