      you should try davinci resolve for editing! its free and while it looks scary, if you ignore the parts you don’t need it’s simple

    Big thanks to Jose for doing the subtitles! Captions are hugely important to have for people with hearing loss and auditory processing disorders, and I'm always incredibly thankful for people who write up captions for videos!!

      Yes, ITA -thanks so much for the subtitles. I usually watch TH-cam because they very often have subtitles or the CC option. I wish other media sites for creators would do the same. Great work and clearly helps.

      I am hard of hearing and use the subtitles all the time! They are so accurate and helpful! I have recommended your show to my deaf customers at work for that reason!

    HA! So I said to my husband that the reason it is mostly that men watch you, is because of the history content. He goes "nah, it's cuz Max is incredibly good looking. Very symetrical. And as a straight heteosexual dude, I have no shame in saying he's pretty". So. There's a compliment to you Max. My husband thinks you are gorgeous. 😂We watch because of how calming, knowledgeable, and witty the videos are. Thanks to Jose for the subtitles! 💜

    One of the reasons people love the pemmican was that there is a CRAVING for ancient indigenous dishes. It's starting to become trendy as Native chefs are opening restaurants and educating people on their cooking. I definitely want to see more of it.

      A good friend of mine opened a restaurant with elements of her native Dine (Navajo) cuisine with her culinary background. The food is awesome I miss it for I no longer live in that state. Black Sheep Cafe in Provo, their Navajo Tacos and other dishes are to die for.

    Just so you know, I deeply appreciated you doing the Japanese-Portugal episode. Even if it had low views, every one of your videos is educational and interesting. Never doubt yourself.
    I loved Titanic week. It was a neat idea to group it together and not separately.

      Definitely agreed! It's so fascinating hearing about these inter-cultural influences, and food from eras & places we don't usually learn much about? Max's plans mentioned here for doing all parties to the world wars, or both sides of the Crusades, are great examples of this and I really really hope he pursues them!!

    Even if the Tudor salad wasn’t as popular, let me just say that I’m so glad you made that one! It has transformed my salads. I put a lot more aromatics and herbs in, and I always get compliments on the varied and flavorful result.

    My sons and I just (and I mean like less than an hour ago) finished making a big batch of ANZAC biscuits and a WW1 ration pudding that they are giving to their grandparents as their DIY Xmas gifts. We are all history buffs, especially the world wars, and love the ability to actually make these recipes and literally taste history.
    Never forget, your worst performing video is going to be someone's favorite one. Keep up the great work!

    For what it's worth, thanks to Jose for the subtitles in particular, because they really help people like me who speak English natively but struggle with ADHD and other forms of neurodiversity. Sometimes I struggles to keep up with the audio, either because I'm overstimulated and just can't handle much sound that day, or because my brain is just going a mile a minute and I can't focus. So being able to read along as Max talks really helps ground me and makes the content much more accessible for me and my neurodiversity.

      Very true! I often have captions on when I watch stuff because it can turn into blah blah blah as my brain is just distracted and... lol the amount of times I have to hit the rewind button. It's great to have that option.

      Absolutely same here! I speak english natively and have no hearing issues but still usually watch w subtitles on bc it helps w focusing. So I always notice and appreciate when the captions are well done.

      I am hard of hearing now and creators that take the time to make captions mean the world to me. It's nice to enjoy a video like normal even if my life isn't anymore. 💛💛

      I’m also hearing impaired, but have found Max’s diction to be wonderfully clear most of the time. However, I’m sure CC in many different languages are a godsend to many.

    I am a percussionist and my girlfriend is an orchestra teacher. We like to keep the volume very low and use subtitles whenever we watch TV. Jose's hand written subtitles make the viewing experience so much more professional. Thank you both!

    Oh Max and Jose, you two have put together so much simple, unalloyed joy this year.
    There have been weeks in which the best thing that's happened is notification that you're released a new video.
    The Titanic series wasn't just the best thing on TH-cam I've ever seen, it was one of the best things I've seen on any broadcast media for years. I've never paid a great deal of attention to the story of the Titanic, but the stories and details of that series left me quiet for hours afterwards. Something happens when you talk about food - you make a connection to other human beings, even in history. It was immensely powerful.
    All of your plans for 2023? Wonderful.
    Can I meekly remind you (as soft as "rain that droppeth gentle unto the place beneath") that you once said you were considering a series on tea? That would be a heady brew. Stonking, even.
    So much love to you and Jose for this year and the next.

    Sitting here happily in my 28%. You are everything I want in a spoken word presenter. I adore everything you do. I love history but having it set out in easily relatable, grounded ways makes it so much more fun and accessible. Thank you, Jose, for doing our subs.     I really hope you and Jose read this comment. I found your channel this year and have watched every episode. I made the pumpiom pie for thanksgiving and it was wonderful and everyone liked it better than the regular pumpkin pie.
    What I really wanted to tell you all is thank you. This year has been one of the worst of my life personally. Your videos have given me some much needed light in my darkness. I absolutely loved your episode on pozole and I made it on Christmas Eve. I need you to tell Jose’s mom I am so unbelievably grateful for her sharing her recipe. After such darkness this year, I put as much happiness into that recipe as possible, I sang, I danced, I smiled. I truly felt happy. And when my family and I tried it, I had tears in my eyes because of the joy and wholesomeness and healing it gave me. It truly is a hug in a bowl. I felt an almost spiritual moment eating it. To end this year with that light is the best gift I could ask for. Thank you so much Max, Jose, and especially Jose’s mother for bringing this to me.

    I am so surprised that not all of your shows get 100% viewership. I watch every episode every week. And have not missed one in two years! Every episode is thoroughly delightful and enjoyable.     I appreciate that the first few days/weeks after releasing a video are really important but your channel is so binge-able that I feel like even the ‘stinkers’ will get their time in the spotlight!
    It’s so nice to realize you missed an episode because maybe it didn’t jump out and now there’s another 20 minutes of wonderful content you didn’t know existed.

    It's funny that all the "flops" are episodes that I love lol. My husband is even still begging me to make the dish from the Portuguese barbarian episode lol. Make sure you're taking time for yourself too, though! When you said "I've been tired the whole year" I felt that and I have to remind myself to take breaks too.     If you're going to be doing more WW2 topics I have a suggestion. "What did Jewish Refugees Eat?" might be the title and the history could be the various means by which Jews escaped Europe. As for the recipe you might look at the kosher menu for the RMS Queen Mary, which is the ship at least half a million American Jews had their grandparents escape on and the first ship in history to have a dedicated kosher kitchen (and also the first with a synagogue).
    The ship has had a resurgence of interest during Covid and will have even more when it reopens its hotel and museum in early 2023, so that might be a good time for it. It's also in Long Beach which I think isn't far from where you two live if you wanted your own footage for it. It'll be a working kitchen but you could probably even arrange to film cooking there if you asked nicely.

    I don't think anyone would get bored or annoyed of watching educational fun content like this. The presentation is great. The facts are clear and concise, and also, with it being about food, it brings everyone together since I classify it as a universal language of sorts

    I also love the Vinegar Valentine's episode. I clicked it specifically to learn about them, and less about the drink, but both were interesting. I'm surprised it didn't do well!

    I don't understand how you had those few videos do poorly. I only just found your channel in late October, and I've already gone through and watched every video you have published on the main channel, and must say that they were all top notch! Seriously though, I don't know how your viewership graph isn't just straight vertical, because it seems like every video you release is better than the one before it! Wishing you and Jose all the best for 2023, and I can't wait to learn all of the wonderful recipes that are too come, as well as the history behind them!

    the feijoada episode would've blown up if it were advertised here in Brazil, but somehow it wasn't showing up in our 'recommended' page
    I binged your videos in a few days, I got hooked in them for a while and I didn't know you had a feijada episode, when It showed up in one of your playlists I got surprised, as a Brazilian, didn't expect a feijada episode in your channel, somehow I thought you only did medieval stuff about Europe. lol
    But it can still blow up, as long as youtube let us know it exists, Brazilians love these kind of videos, a storm of Portuguese comments always come when people do them hahaha

    Id love to see an episode talk about the food in the LITTLE HOUSE ON THE PRAIRIE series of books. The foods are a major component (maybe cause released in depression?) And it would br great to know how realistic the foods were. What some if the items actually were, and how those folks actually ate.

      @@KetchupwithMaxandJose One dessert from the Little House books that has stuck with me was named "vanity", which it turns out is a kind of sugar cake? But I kept thinking of "divinity", which I think is like a meringue cookie, so it turns out I may have been confusing them for each other.

    Max, you are adorable, and I think your channel is just lovely. I finished binge watching 3 years' worth of episodes, and now I need to catch up on all your Ketchup episodes. So pleased for your success and hope to get your cookbook for my upcoming 65th birthday. I've dropped hints with the family, so fingers crossed, lol. I'm so very disappointed to discover that some of your viewers apparently never watched Bambi or learned from their mothers the oft repeated lesson that Thumper's mother scolds him for forgetting...
    "If you can't say something nice, don't say anything at all." Wish I could hug these poor orphans, teach them better manners. Maybe someone could start a channel of lessons your Mama should have told you. Bless you for not letting the mean comments diminish you. You, Max Miller, are perfect and loved just as you are.

    Even your lower viewed videos are somebody's favourite! I'm one of your women viewers but my other half and I watch together so that probably doesn't show on your stats. He particularly loves ancient history and food and I'm here for the social history generally, so it's perfect to watch your channel together. We both appreciate that we have a man talking about history but it's not just who killed who, and love that you give context and are clearly aware of being culturally sensitive.
    A book you might enjoy is The Hakka Cookbook, there's a great chapter at the start tracking how the Hakka diaspora took their food with them and how it's changed in different places and through time!

    I loved the "The Japanese and Portuguese barbarians" episode! It was such a tasty looking dish and such an interesting story. 😢 The Titanic episodes were cool too. I was a,little let down what you had made in October, my birth month. ☹️😆

    I gotta say, I'm really excited about the war food series. This year's christmas pudding episode was probably my favorite episode you've ever made. That moment of genuine shock and delight that a thing made of rationed ingredients, that by definition was *supposed* to be a shadow of another dish, but made anyway to keep up hope in a desperate time, was actually *better* than the original dish, was a delight to behold.
    Your videos are the highlight of every Tuesday! I watch them while I'm eating lunch in my truck every week. If I get to where I usually eat lunch before the video is out, I'll keep working until the video is out and I can enjoy it with lunch.

    Every video is a win for me. First video I saw was one about the Titanic. And I cooked the rice soup several times. After that I watch all your older videos and it was such a joy! ❤️
    My grandparents left a diary. They needed to leave their home at the end of WWII. They used this diary to tell a lot about their way from what is today Poland to Germany. They wrote down their meal from their wedding after WWII. This my own "Tasting history". 😊 If you need any inspiration for your WWII-videos, I would be glad to tell you the whole story. If not, I will still love your videos and everything you will tell us. 😁❤️

    Hey Max & José!
    There was a book series; Journeys into the Past- my mum only got two of them, but one was _Life on the Home Front_ - which was focused on WWII. It had multiple mentions of food- & artefacts like period recipe cards, & extracts from government-issued cookbooks, as well as people's thoughts from the time- but page 124 gave a great visualisation of what a weekly ration for Germans & Brits looked like.
    I only have DK's WWI book, but I know there's a WWII one as well. I don't know if you can find them at your local library, or if you buy your reference books online. Journeys into the Past was a Reader's Digest series, so it could be found second-hand.

    You should do a special 3-year anniversary episode for February 25th. Enrico Caruso was born on that day, so you could do Spaghetti Alla Caruso. Pierre-Auguste Renoir was also born on 2/25 so maybe his painting Luncheon of the Boating Party or Lunch at the Restaurant Fournaise could inspire a video.

    What a great year of food. The reason I liked the Titanic series was that it took me to a place that I am not likely to experience, culinary wise, out side of my own kitchen. I would love to see food from the Orient Express, Concord, the White house, and other exotic amazing places with great food. Since the King of England is not likely to invite me for dinner I am always game to try my hand at preparing the dishes that would be served to said. Not to mention that there is so much wonderful history out there that surround these wonderful places. It is like a balanced meal - the food and the history... Max I am grateful for every thing you do.

    Hello Max and Jose, I'm not sure you'll read this but I wanted to thank you for everything you do. I am the kind of person who doesn't watch every episode every week but instead binge-watch. I was sad to hear about the Japanese sugar egg noodles video not doing well, I was keeping it for a day where I'd need comfort. I know one more view wouldn't have necessarily helped, but still, given the work you put into each of your video, they simply need to be seen!
    I found your channel through a friend and you have helped me so, so much. When I need to do some tidying up in my apartment, I put on an episode that I've already watched and it motivates me. Max's voice is just so soothing that it keeps me going.
    A lot of people who have channels with over a million subscribers just hire editors - sometimes they still edit parts of it then leave the bigger work to their editor. It might be a thing to look into, if Max doesn't want to feel as much tired as he felt this year? This way he could put more energy into something else. Jose, thank you so much for taking the time to put up the subs, it's such hard work and it helps so many people since the videos are just that much more accessible to them.
    I wish the both of you (and your kitties, too!) a wonderful year 2023, with health, fun and happiness.

    Random fact about ww2 here in the netherlands. During the winter of 44'-45' there was a scarcity on food so people ate 'unusual' things such as flower bulbs among other things to keep themselves fed. The “Voorlichtingsbureau van den Voedselraad” made pamflets and spread them amongs the people to instruct them on how to prepare it.

    There are no 'flops' only the ones I haven't seen yet. Your channel is one of my newer ones and I tend to watch my new channels as filler when my older channels slow down in the new content department. I'm catching up atm.

    Discovered Tasting History earlier this year. I have seen almost every video now. Some multiple times because my attention sucks! I probably singlehandedly drive up the Netherlands view KPIs 🤣
    Also, the Japanese-Portugese noodles video was one of my faves. Sucks that it didn't do well, I'd love to see more of that cuisine.

    I recently discovered your Tasting History, and I love them. I am retired, so about all I do is cook new dishes I learn from cooking shows and cookbooks. (I bought your beautiful cook book Tasting History.) And I love history, especially about food.
    You do excellent, entertaining work. Keep it up! I will be watching, and cooking.
    Loved the history of Ceasar's Salad, and the no-crust pumpkin cheese torte.

    I think a Borscht episode could be really interesting, like how it's often called Russian because it was considered a national dish of the USSR, but was from Ukraine, and a lot of other countries use Soviet/Russia interchangeably

Then when I thought about how often Max must have rehearsed all of those old English and other language pronunciations only to have them mangled beyond hope by whatever AI Alphabet is using with TH-cam to train it's Contemporary Natural Language Text-To-Speech algorithm.

      Yeah it aint pretty. TH-cam does a decent job to start but doesnt capitalize well, missing punctuation, doesnt know old language, and timing is very important too.

    I love the hardtack references, I think you have beautiful eyes, and I love it when you ramble, and the sugar plum candies, there is a version of a similar candy that gets made in Mexico, where I’m originally from, maybe Jose has heard about them “colaciones”, and you can find most ingredients anywhere, keep up the good work!

    Keep up the good work. Very enjoyable and informative. I'd be interested in knowing how many Icelanders you have as viewers, especially for the volcano bread. We travel to Iceland regularly and have tried the bread on a number of occasions. Maybe you could do a series of episodes in Iceland on the various and very curious cuisine of that country! ;-)

    I'd like to suggest that you consider doing some other transportation related food videos. At one time the railroads were very competitive about their dining car foods and I know there are a lot of their old recipes out there. And I suspect the airlines were the same!

    Thank you for helping me during one of the worst years of my life. I love history and cooking and your channel is great. On January 9, 2022 I was was admitted to the hospital, put in ICU on ventilator and was on the ventilator for 2 1/2 weeks. I was in the hospital for a month and was in rehab for three weeks. I came home in a wheelchair, had to have help for everything and was discouraged. It was through your channel that I found by accident that I realized that I could still learn and I really enjoyed both the history and cooking. I am now able to walk with a walker, do light housework, bathe and dress without help, and I am still looking forward to seeing you this coming year. Merry Christmas.

    Extreme props to Jose and to you for taking captions seriously. So many times the AI text will contradict what the person is saying, if they lower their voice on the "not" so that "It's not what I would do" becomes "It's what I would do."
