How to Make Malassadas - Carmen's Bakery Recipe

- Our malassada recipe has been the most requested recipe since retirement and was one of our best-selling items. Made fresh daily and not just a weekend treat, we're hoping you and you family will enjoy this recipe for generations to come!
This recipes makes roughly 3 dozen small malassadas.
1 teaspoon of salt
1 stick of butter
8 eggs
Roughly 1/4 of Fresh yeast bar, 2 tablespoons of sugar (optional): redstaryeast.c...
Lemon extract or fresh grated lemons (to taste)
5 cups of flour
3/4 cup of milk
Combine ingredients together for 10-15 minutes until dough is translucent when stretched. Dough should not be wet.
Cover dough for 15-20 minutes for the dough to rise
*If you are using dry yeast, about 2 packets would do. You'll need to combine the packets with 2 tbs of sugar, 1/2 cup of lukewarm water, and 1 tbs of flour*

I made the malassadas today and they came out real good. Was able to make 16 giant ones. Since we don’t have any Portuguese bakeries here in Georgia we now can enjoy them once in awhile. Thank you so much for sharing your recipe. Much health and love to you. ❤️

I never had a chance to visit your bakery but I enjoyed your video immensely. Thank you for sharing that recipe. I kind of knew how my grandmother used to make it but I didn't really know exactly until I watched your video and then I remembered. Cheers!
Thank you for sharing your recipe. I love malassadas. Your bakery was the first place that I would stop at when we visited our family in New Bedford. Your malassadas were the best. Your bakery is surely missed but we understand that when we reach a certain age it is time to enjoy life. I have not tried your recipe yet but it is on my to make list. Hi Maria, you can put 2 tablespoons of sugar with the yeast, but otherwise no we use the sugar as a coating once it's fried.

Ha! Believe it or not this was the smallest mixer at my mom’s bakery and used just for making muffins. Once she retired she brought it home so she could continue to bake. It is huge! 😂

It really depends on how big you stretch the dough. We made a mix of small and larger malassadas and got a couple of dozen.

Hello Anatilde! Thank you for watching. When we made these videos they were just for me (Carmen's daughter) to have and share with Facebook friends that were asking for recipes. We didn't really worry about the presentation since it was for personal use. We will have to work on that moving forward.
Wish you would give us the right measurements not a little bit of this and a little bit of that also where I’m from we do not have fresh yeast , very disappointing video you’ll have a thumbs down 👎 from me ,thank god there are other people who give us all the measurements and step by step on their channels.
