How to Make Portuguese Sweet Bread, Part II - Carmen’s Bakery Recipe
You made the dough, now you're in for the long haul (the next 6 hours or so!) Are you ready?

Smaller Round Baking Pans - 2lbs of dough
Large Round Baking Pans - 2.25lbs of dough
Allow time for the dough to rise in the pans
Cut top of sweet bread with the traditional X and wash in egg
Bake in oven at 275*F for 45 minutes (small), 1 hour (for large pans)

1 tablespoon salt

I never saw a tutorial using hand measurements and using a liquid measuring cup for measuring the dry ingredients. Baking is a science and I think you need to revise your recipe and measuring techniques. Also, Parchment paper won’t tear like your wax paper. Lastly, my mother made the best biscoitos and never used Bisquick.
Where is the recipe? Usually a video shows you how to do it step by step. I didn’t learn how to make them 😮

You can put 2 tablespoons of sugar with the yeast, but otherwise no sugar (just as a coating once it's fried).

I made the malassadas today and they came out real good. Was able to make 16 giant ones. Since we don’t have any Portuguese bakeries here in Georgia we now can enjoy them once in awhile. Thank you so much for sharing your recipe. Much health and love to you. ❤️

Thank you for sharing your recipe. I love malassadas. Your bakery was the first place that I would stop at when we visited our family in New Bedford. Your malassadas were the best. Your bakery is surely missed but we understand that when we reach a certain age it is time to enjoy life. I have not tried your recipe yet but it is on my to make list. Thank you for sharing your recipe, like you said before you go. So funny! LOL

The biscoitos look very delicious.. If you would like to make a different shape using same dough roll dough then twist dough then shape into. ring. Now you have a pretty twisted biscoitos. Enjoy have fun baking.
how many malasada
It really depends on how big you stretch the dough. We made a mix of small and larger malassadas and got a couple of dozen.

Ha! Believe it or not this was the smallest mixer at my mom’s bakery and used just for making muffins. Once she retired she brought it home so she could continue to bake. It is huge! 😂

Where do you get the pans? If you don't have that industrial mixer, can you use a regular home mixer? I have a Kitchen Aid Pro. Is there any way I could get the full recipe with the directions as well?

As for the mixer, a standard home mixer would work as well, but the capacity would need to be reduced. Our mixer is (I believe) 20 quarts. I'll update this video to include the recipe from video 1.

Hi JoAnn! If you are using the yeast tablets, we think about 2 packets would do. You'll need to combine the packets with 2 tbs of sugar, 1/2 cup of lukewarm water, and 1 tbs of flour. .

I never had a chance to visit your bakery but I enjoyed your video immensely. Thank you for sharing that recipe.
