    I grew up on potato pancakes. My dad couldn't make them fast enough. He barely got them out of the pan and they were gone. He served them with his stewed tomatoes and sour cream. We (four kids) loved them. He was a single dad, a great cook, a great man, a kind, caring, capable parent. I miss that dear man.

My husband and I just turned 56 this month and are trying to get back to the good old basics of eating like our grandparents did, basically cutting out all the processed and junk food. The Wise Traditions podcast has a great episode about iron overload. The iron expert on the episode suggests that cast iron pans only leech iron when cooking acidic foods like tomato so if you avoid cooking tomato sauce in your pan it shouldn't be a huge iron culprit.

    For our kids, I believe the culprit is our well water. When we filter it (whole house), we see that the kids don't get the build up. We had the same issue with the toilets, the iron builds up.

    Hi Lisa. I learned something new here today 😊. I never knew that about cast iron pans. The new pans look nice. I’d love an update on them down the road a bit. I’ve found in the nonstick ones I’ve purchased over the years, they end up losing their “nonstick”. Enjoyed the video as always ☺️. Enjoy your evening.

      I agree they lose there nonstick properties.

  • @lisagrimes2018
    @lisagrimes2018 7 หลายเดือนก่อน

    Stainless steel is absolutely non stick IF used correctly. You need to cook on a low heat, and allow the pan to heat completely. Use butter/oil sparingly and you can whip up scrambled eggs with zero issues. Also, if you scorch them, it’s easy to bring them back to life with a little boiling water and some elbow grease.

    • @lisagrimes2018
      @lisagrimes2018 7 หลายเดือนก่อน +1

      You also need to invest in good quality pans. Stainless is a learning curve but I promise after a few tries you’ll have virtually no sticking!

      I’ve always used left overs mashed potatoes in “potato’cakes” as we call them here in the North of England, I just mix in some seasoning, flour & an egg & Chuck them on a griddle, they are great with a “full English” - a breakfast containing a huge variety of things, depending on the family, but there is always smoked bacon, sausage links, fried or poached eggs, I use the potato cakes as a substitute for fried bread, then there’s other trimmings you can add, like fried mushrooms, canned tomatoes with herbs & garlic salt, black pudding (or blood pudding, some get a little squeamish, but it’s beautiful!) the choices seem to be endless! A real “Heart attack on a plate,” I’d only eat it a couple of times a year!

    Interesting about the iron overload. My husband has hemochromatosis which is genetic high iron. Red meat and cast iron were high on the no no list. What’s interesting is that my iron is low even though I use cast iron and eat more red meat and greens. I sometimes suspect it’s a gut absorption issues.

      If she’s a Christian then it’s likely because it’s a biblical commandment from God to be fruitful and multiply, no matter the days we are living in.

    Any idea why I can’t tolerate sourdough bagels but I can tolerate sourdough bread ? I make them with the same flour ? I am very sensitive to gluten for about 10 years now

    Love the potato waffles, I want to try them. I'm a bit sceptical about the iron deposits on teeth, are your children really having that much iron? Presumably you don't have haemachromatosis. Iron liquid supplements stain the teeth though. The majority of children are having iron fortified cereals and from what I have seen you guys don't eat those so I would have thought it balances out. Obviously no harm in changing cookware though.

      This is hard to believe. 64 and Mom always used cast iron. My teeth are tough and maybe not beautiful but healthy. Maybe second opinion. Love your channel.

    I have to be careful using my cast iron all the time because my husband has the hemochromatosis gene and it will raise his iron levels.
