    I LOVE your process! Thank you for sharing. My best practice: If you chill the crabs on ice while waiting for the pot of water to boil, they won’t fight you AND all the digits will stay attached.

    i wonder if putting them in to cook, so far apart (in time) will make some over cooked, but looks yummy.

      No it wouldn’t , crabs are a totally different texture compared to shrimp and lobster..
      lobster and shrimp get rubbery when over cooked , crabs do not. . I actually prefer cooking longer so the seasonings get infused in the crab making it more flavorful.

    if you mash the garlic with the side of the blade, it makes it very easy to peel. It also releases more oils even if you are going to dice them. I make them almost the same way, except i add a bit of vinegar to the boil and add lemon and old bay to my dipping butter. Vinegar removes any muddy flavor their might be and also makes the meat peel out easier.

    Put salt on your cutting board when mincing garlic. It will help it stay in place. Great video!

      Hi Octavia, any seafood blend seasoning would do. Old Bay is very popular in the U.S so most persons here will use it .

    Try doing the cleaning first so you keep the flavor in the meat and don’t have to clean the gunk you can get rid of it first. And won’t have to put them alive in water they’d be ready then
    They are so good!

      Harmful bacteria can grow in already dead crabs which can make you sick. It is always recommended that you dispatch crabs yourself then cook or freeze.

    Why do you recommend discarding dead crabs? I've always refrigerated any we couldn't cook immediately and they've been fine for a couple days.

      Never eat any crabs that you find that are already dead. Crabs, after they die quickly, start decomposing, which results in bacteria, and toxins rapidly multiplying. You can preboil and then freeze to store then safely.

    I was taught to remove the gills before cooking because they could have impurities in them that taint your meal.

      I never really heard of that for cooking live crabs, if you take the back off to freeze uncooked, then it would be best practice to take the gills and all the insides out before storing.

      @@ChefKevinRiese I have never made a soup with crabs , however if I did. I would either put live crabs in very icy water which would put them in a hibernating state so I could take the back off and clean out all the stuff while it is raw .
      Otherwise I would just lightly boil the crabs then clean out the stuff before adding it to the soup.

      Yes , unfortunately that is how you cook live crabs. The ones bought at the supermarket are steamed alive at the factory as well.
      Crabs produce deadly toxins once they die , that is why you don’t cook a dead crab.

    How come you didn’t just broil the crabs in the butter sauce in the oven? You basically cooked them twice.

      Because with my Caribbean background , we season everything. BOiling the crabs in seasoning ensure it is infused with all that flavor from the seasoning . Broiling would not achieve that much flavor.

      @@cookingwiththesalmons2474 I have a secret for you. You should buy the crabs alive, but you can lean them raw and cook them afterwards. I let the fish market clean them I will bring them home while their on ice in a cooler. Than cook them, within 30 minutes after getting home in most cases. I have to try the butter sauce. I’m looking for something different.

      @@tax905972 I know how to clean them alive for storage just like the fish market would but I hate doing it , it involve putting them on ice to slow them down or put them in a state of dormancy then rip off their backs while still alive. That’s the part I don’t like 😩

      I also use the clean first method at times ,
      I put a lot of ice over them and then take the backs off when they are in the “hibernation” state.
      I will make a video on that soon.
      I put the crabs in oven for a few minutes to warm back up

    Please. You need a bigger pot , more water and don't over crowd.. the temperature drops every time you put one in.
    Please, it's torture for them. Put them in completely covered in boiling water and keep it boiled. I'm not being mean. I say this with love.. for the animals mainly.
