  • What I believe to be the best way to steam crabs, Maryland style. I have watched a lot of videos on here and the crabs look nasty or the video was incomplete. Hopefully this can help out someone looking for a very tasty treat. Any questions or comments please feel free to leave them.

    This is actually an excellent video. I was born and raised in Maryland. It’s true he doesn’t explain the reasoning behind some of common mistakes but I think that was in the interest of brevity.
    For example, you don’t keep crabs in water because a dozen or so crabs will go through the oxygen in standing water relatively quickly and they will literally suffocate in water rather than in the air.
    Putting them on ice is great if you have the extra time, it’s a solid step. Beer, vinegar etc is all a personal preference but most folks in Maryland steam with some type of beer combination. And most importantly, he makes it clear that they are to be steamed and not boiled - excellent video.

    I've seen many crazy videos on how to steam crabs the MD way. It made my DMV-raised wife upset because many of them were off their rocker, violating the traditional MD techniques. She didn't get upset about this one. This guy does it the right way.

    I think in the south boiling is common thing for crabs craw fish and shrimp. I dont see too many people steaming them here but i plan to steam my crabs tonight! Thanks for the video

    Great video. Leaving out the water and just using vinegar and beer did the trick. A nice good dry steam resulted in non-soggy, non-watery, delicious crabs. Thanks for taking the time and effort for posting. I'm in NC and couldn't find the last missing ingredient - Natty Boh :)

    I grew up around the Chesapeake in Virginia and learned how to steam crabs when I was 10 or 12. This is pretty much how we did it except we used Old Bay "Crab Boil" seasoning - actually a more traditional seasoning for crabs and shrimp. The beer is typical but any kind of alcohol will work. It doesn't add flavor to the crabs, but alcohol produces steam at a lower temperature. Water steam is hotter so cooking times are reduced if you use water, and reduced even further if you put a weight on the top of the pot. The vinegar helps keep the boiling water from frothing up as the crabs drip protein rich juices into the water. After being in southern Louisiana for the last 13 years, I learned the various methods for boiling crabs and shrimp. The main difference is that the crabs hold more water and make a bigger mess as you pick them when boiled. You have to choose your spices more carefully when boiling because unlike steaming, the boiling water carries the spices into the inside and flavors the meat. Steamed crabs the spices get on your hands as you pick the crab and introduce the spices more that way than during the cooking process.
    A really good tip: If you are not one to sit down to a picnic table covered in news paper and spend several hours picking crabs with your friends and family, but prefer to pick the crabs in the kitchen and use the meat to make crab cakes or stuff a fish fillet , or to cut into your seafood gumbo, stop cooking the crabs at the point where you still see darkness (sorta' bluish brownish copper) on the crab's back. This is about 80% cooked (for most people) but it allows you to further cook the meat in whatever dish without turning the meat into a stringy pulp. They are a little more difficult to pick but worth it to have whole crab meat chunks floating around in the Gumbo.

    Love the way he’s handled the crab and preps so professionally and with little drama. My only complaint is way too much salt in the all purpose seasoning to use so much of it and with beer and no water I would be running for the water tap.

    I grew up in MD and this is actually the proper way of doing them. Most people use Natty Boh though. But it's a personal choice.

    I'm a lifelong Marylander, and I steam crabs at least ten times every summer. This is the way to do it. Many of the crab steaming videos on TH-cam aren't great. This guy does it right.

    down south we get a big pot boiling with cajun seasoning and lemons, then we throw the crabs in with vegetables included, boil for a little bit, shut it down and let them soak for a while

    Tall can of Busch, about 8 ounces Pepsi left in the cooler. Rice vinegar. I didn't do it your way, but steam is definitely better than the last time when I boiled. Second time catching and cooking crabs. Had some shrimp in the steam-pot too! The beer, cola and vinegar was great for peel an eat. Good man!!!

    I'm from Houston, Tx, I use Modelo and Apple cider vinegar with lousiana Crawfish and Shrimp boil on top of the crabs.

    And just so you all know that Jo #2 is what most crab houses use. It is the BEST!!! Next option is old bay. Only other thing I like is a light dose of dry mustard and a light dose of rock salt. But light on those two. Again great video, I'll eat your crabs any day of the week

    People calling you a d bag cant handle the dmv. Honestly were all assholes, we have the worst road rage but we have the best blue crabs. I've never seen anyone steam crabs with vinegar though, I'll try it. I usually use old bay, a couple of beers, slice some onions, lime and throw it a handful of cilantro. Thanks for the video

    I love boiling them, mainly because I grew up boiling em. I clean em, boil in slightly salted water, drain then salt and lime over them.

    If you're using Coors light you could just save a few bucks & go with straight water..In Wisconsin that isn't even considered beer. I do remember as a kid we had had us a pile of these blue crabs in Maryland and they were delish.

      You're missing out then, I've always done it this way or had them this way growing up in MD. It's gotta be cheaper beer though with a decent water content to it, hence why he uses Coors.

      Scorpio Brown really? does it? alaskan fisherman say to boil in freshwater (not saltwater) for meat to not stick...
      also, if u understand the water distillation process, isn't it pointless to use vinegar and beer as only the h2o will steam...leaving all the other minerals n flavorings at the bottom of the pot? u can of course smell the beer and vinegar boiling in the pot, but none of that flavor is being imparted on the crab meat, no? unless, the maryland thing is to pretend to boost flavor for mental stimulus? ...for show?

    That looks so good. 👍🏾 My uncle uses Heineken beer, vinegar, garlic and of course put the old bay seasoning on the crabs.

    I grew up, during the summer, on the Virginia side of the Potomac River at Mattox Creek. We had a 12 crab pot string in Mattox Creek. We would crab every other day and put the crabs in a sluff pot at the end of the dock keeping them alive and fresh. On Saturday the family would show up. We would drag the sluff pot on to the small section of beach, and immediately cook them in the pot. We rarely had claw drop when we pulled them out. So, the idea that you have to ice your crabs down to prevent claw loss is inaccurate. It may prevent all claw drop, but it's not actually necessary. I'm not a hater, I'm just pointing out my own life long experience.

    Ok here's my issue. I born and partially raised in NYC, my family moved to the lowcountry or Charleston SC. I immediately saw there was a difference in cooking crabs. Obviously DMV steams and we boil. I just never understood the point of putting the season on the crab as you dont eat the shell., whereas we obviously put in the water so it gets into the meat. I no our crabs do not get mushy. the sad part is we have family in maryland but they are allergic to seafood so I never was able to see if the taste is different

      reso1349 old Bay is just as good and u can find it in any grocery Store. im frm BMORE and crabs are our thing only thing i would mix dried mustard and mix with the old Bay.

    What’s the point in putting a pound of seasoning on the shell for smoking crabs? I get boiling cuz it’ll all run thru the meat but i don’t understand the point in doing it for steaming

      Grant Foster I'm sure 95% of the south do low country boils, which I do enjoy but I just wanted to venture out so far I've tried fried, curry, and steamed which I actually enjoyed more than the boil (probably mainly because since I've been old enough to pick them I only had them boiled) the steamed were really going minus the sides I'm use to having, but yea I think I'm gonna keep. steamed in my rotation.

    When you put the jimmies in and after it comes back to a full boil and the pot is really chugging along go for 10 minutes at full steam then cut it back to half burner for 7 minutes. Then turn off and let sit for 10 more minutes.

      +Gregory Watkins A few things that we've been lying to people. Putting vinegar and beer in the pot does nothing. You should put seasoning om the crabs after you steam them by spraying a little bit of water and lightly dust them with seasoning. You should season a bushel with one pint of seasoning. The seasoning can't get into the crab meat when you steam them. We steam crabs everyday. So we don't want to use too much seasoning.
