Chicken Ramen Recipe (Instant Ramen)

Today I'm sharing my easy and delicious chicken ramen noodles! This recipe is packed with veggies and meat to make the already delicious ramen even better! You can use the seasoning packet for a strong taste or use light seasoning for a mild taste. This best part of this ramen recipe is that it works with a lot of different brands of instant noodles. Give this delicious chicken ramen recipe and try and let me know how it turned out!

RECIPE (1 serving)
1 pack instant ramen (used shin ramyun)
1 small carrot
6 mushrooms (any kind(
1 tsp mined garlic
1 small chicken breast
2.5 cups (600 ml) water
Spring onions/scallions
Chilli oil (optional)
METHOD:
1. Finely chop 1 small carrot and 4-5 mushrooms. Slice 2 mushrooms for garnish
2. Mince 1 tsp garlic. Add more or less based on your taste
3. Heat some oil in a pot. Sauté carrot, mushrooms and garlic until lightly browned
4. Pour 2.5 cups (600ml) of water and add seasoning packet OR 1 tbsp soy sauce + 1 tsp sugar + salt to taste
5. Add 1 small chicken breast. Cover and simmer for 10 minutes
6. While the chicken is cooking, fry sliced mushrooms in some butter or oil until golden brown
7. Take chicken off the pot once it’s cooked through. Let it rest for 5 minutes and shred into bite sized pieces
8. Taste the broth and adjust seasoning as needed
9. Cook instant noodles as per packet instructions. Be careful not to overcook the noodles
10. Assemble the bowl with ramen and noodles. Top with shredded chicken, fried mushrooms, sliced spring onions/scallions and chilli oil. Enjoy!

• Other vegetables that can be used?
Onions, bok choy, chilli peppers
• No instant ramen?
Regular ramen noodles or spaghetti can be used

TIPS:
• Adjust the broth to your liking before cooking the noodles
• Add some chilli flakes while sautéing for a spicy broth
• Don't overcook the noodles
