My family is from Zacatecas where the birria is made from goat. Other areas make birria from cows. The birria tacos that are famous right now in the U.S. are from the state of Jalisco.
Birria can be made from goat, cow or sheep and it’s made like that in different parts of the country. Goat meat is not exclusive to Zacatecas. Hidalgo makes great goat birria. One of the best birrias I’ve tried was a goat birria in San Juan del rio, Querétaro.

Jicama in the Philippines is called "singkamas" which is basically a turnip as well. I'm not sure what the difference is but I feel like the "singkamas" is way juicier (as they say about Asian fruits and veggies) than jicama. We enjoy it with sweet and savory stir fried shrimp paste or simply with sea salt if you want a boost of sweetness.

Jicama in the Philippines is called "singkamas" which is basically a turnip as well. I'm not sure what the difference is but I feel like the "singkamas" is way juicier (as they say about Asian fruits and veggies) than jicama. We enjoy it with sweet and savory stir fried shrimp paste or simply with sea salt if you want a boost of sweetness.

You shoud try next gorditas from Mexico City, is a diffent style and they are amazing. Also try food from the state of Yucatan and the state of Veracruz.
