Its because we modernized and got used to just using premade pastes or sauces like Dona Maria jars. Few people have it in them to fry/roast a dozen ingredients and then grind them in the metate over 2-3 hours lol
I’m from El Salvador and I spent two months in Oaxaca and I gotta say that Oaxaca is a paradise for Mexican cuisine from street vendors to well stablished restaurants. The food was diverse and so amazing.
Mexico is an absolute gem. The blend of Spanish and indigenous cultures has created such a diverse and beautiful country. The colors, the food, the love of family... I really hope I get to visit next year
Mexico is a mini universe, it has 32 states and each one has its own food, music, clothing, etc. The taco is a small part. Mexican cuisine is impressive

As a northerner from Mexico, I haven´t had the opportunity to try the real southern mexican food other than Puebla´s and Mexico City´s. Seeing this from Gordon is hugely humbling and I feel honored about the fact that our cuisine gets this international recognition.

As an American who’s visited most Latin American countries I gotta say Peru and Mexico are definitely up there on the top of best cuisines but if I have to give it to one country it would be Mexico. Their food culture is definitely complex and goes back many generations to pre historic times which I believe Peru’s cuisine has been infused and interrupted by other cultures when they had their wave of Asian immigrants. Definitely both countries put Latin America’s food in the map with the top others. 👌

Gordon just received the best advice ever. Relax your mood when cooking because you transfer that to the food. A lesson told by my Nicaraguan grandmother, I never cook when I’m depressed or sad, even my American husband now understands why I do it. I cooked once when I was sad and everybody got sick.
How funny, I’m Mexican and I tell this to my Brazilian husband- when he’s moody and cooks in a rush the food comes out awful. I told him to cook with love or don’t cook at all! He thought I was crazy but I guess I’m not the only one who thinks this 😂
There is an Indian restaurant ran by an Indian guyi in my city, it's actually very good and several dishes actually taste, similar, weird haha, he said it's authentic and only uses traditional spices.
There's an authentic Indian restaurant in Mexico City, run by Indian guys, and your food is honestly delicious. Kind of similar in spiciness with ours.

Gordon missed an opportunity when he called the tool used to grind the cacao a 50 year old tool. It may be that age within this family, but the “metate” (meh-tah-teh) goes back to pre-Colombian / Mesoamerican civilizations. It is made of volcanic rock similar to the Mexican mortar & pestle (molcahete - Mohl-cah-heh-teh) used to make salsas. It dates back to somewhere between 5000 - 3000 BCE and is also used to grind corn which was domesticated in Mexico 8,000 years ago. A little history for you… it’s important we understand Mexico’s incredibly long and sophisticated agricultural history and the millennia of knowledge, skill and scientific discovery behind its culture and cuisine. ❤
I’ve only had moles at my college friend’s family place and now wife’s family. Every time it has been a special occasion and they’re always so proud of their recipe and to get a gringos feedback and it’s always been amazing! Now I want to eat some mole!

My name is Reyna too, and I'm Nahua native of Guerrero (the state next to Oaxaca), but there are a lot of similarities between the two states. The cuisine is the best, especially Guerrero Pozole. I guess Guerrero and Oaxaca both share the love for chocolate and mole very much.

Yes, I always say the same thing. We both have the best mezcal, tobalá for them, cupreata for us in Guerrrero. Same with our ancestral chocolate drinks like tejate & our very own chilate. Our aguas frescas de maracuyá, guanábana, nanche, guamuchil. I love Oaxacan cuisine & I wish Guerrero had better representation.
In the cooking cultural world, the taste and cuisine is limitless. Eventhough Gordon is a master of culinary skills, unfortunately he will not find the ingredients in another country. So it is really a priceless experience on food and culture

Correction: Not potatoes, those originated and were domesticated in Peru but you’re right about the others..as well as vanilla, chia, all chili peppers including bell peppers, all squash, most of the common legumes/beans (except garbanzo, lima and lentils), sunflowers, and sooooo much more! I saw Gordon a ddecade ago go to Asian countries. I always wondered of his amazement at Mexican cuisine, which is on par with the most complex Asian flavors, just as delicious. I knew he was going to be as blown away by different Mexican cuisines as he was by Asian recipes. I enjoy seeing such a nerd of good food (foodie) appreciate what it is SO good about Mexico. its truly number one cultural asset. I always appreciated very much, but having emigrated, now I treasure it more than anything I can remember from there.
I like when Gordon is challenged. You could tell that he was feeling nervous if the critics would actually like his food or not since it's so different and a learning experience for him. I much prefer this "relaxing" atmosphere.

Although I am NOT a fan of Gordon Ramsey, I appreciate his love for Mexican & all food in general. Its truly hilarious to hear him admit that he struggles with his own issues, like listening & not talking, lol. Basic Molè is very time consuming & not difficult. Of course we, at least most in the City do not use a Metate. We may use our Molcajete, however we do not use as before. Anywho, example, my Mole is Rojo/red & made half scratch. Actually, when I make a huge batch of fresh Enchilada Salsa/Sauce, I am able to make Molè from that. So for those of you atad worried that its difficult, nope, not the Basic delish Molè. Definitely ALOT of ingredients & tike consuming. IF you love cooking, you'll enjoy it. I listen to 🎶 in Español while I cook. I hope this is encouraging. I’m Mixtec , my dad is from la Mixteca Alta in Oaxaca and our state is the most indigenous in our country there is so much to our lands ! There’s dishes specifically from each town it’s crazy how complex our food is !

I've eaten at Contramar in Mexico City, it's amazing. Mexico City has some absolutely incredible restaurants, many Latin American cities do. And of course all very affordable, with gracious and attentive service that doesn’t require an outrageously ridiculous gratuity on top. Puts the US to shame in a way, a lot of places do.

Gordon experincing Mexican culture is great. I dated a Mexican girl and her grandmother would make fun of how skinny I was and feed me the whole time I was visiting. It was amazing, but I had to be a good sport. They have a very sarcastic, roast-friendly, ball-busting culture and it’s always fun watching Gordon roll with punches.

As an American who’s visited most Latin American countries I gotta say Peru and Mexico are definitely up there on the top of best cuisines but if I have to give it to one country it would be Mexico. Their food culture is definitely complex and goes back many generations to pre historic times which I believe Peru’s cuisine has been infused and interrupted by other cultures when they had their wave of Asian immigrants. Definitely both countries put Latin America’s food in the map with the top others. 👌

Gordon just received the best advice ever. Relax your mood when cooking because you transfer that to the food. A lesson told by my Nicaraguan grandmother, I never cook when I’m depressed or sad, even my American husband now understands why I do it. I cooked once when I was sad and everybody got sick.

There is an Indian restaurant ran by an Indian guyi in my city, it's actually very good and several dishes actually taste, similar, weird haha, he said it's authentic and only uses traditional spices.

Gordon missed an opportunity when he called the tool used to grind the cacao a 50 year old tool. It may be that age within this family, but the “metate” (meh-tah-teh) goes back to pre-Colombian / Mesoamerican civilizations. It is made of volcanic rock similar to the Mexican mortar & pestle (molcahete - Mohl-cah-heh-teh) used to make salsas. It dates back to somewhere between 5000 - 3000 BCE and is also used to grind corn which was domesticated in Mexico 8,000 years ago. A little history for you… it’s important we understand Mexico’s incredibly long and sophisticated agricultural history and the millennia of knowledge, skill and scientific discovery behind its culture and cuisine. ❤

I’ve only had moles at my college friend’s family place and now wife’s family. Every time it has been a special occasion and they’re always so proud of their recipe and to get a gringos feedback and it’s always been amazing! Now I want to eat some mole!

My name is Reyna too, and I'm Nahua native of Guerrero (the state next to Oaxaca), but there are a lot of similarities between the two states. The cuisine is the best, especially Guerrero Pozole. I guess Guerrero and Oaxaca both share the love for chocolate and mole very much.
If Gordon was surprised to see several types of mole, he'd go crazy to know that Guerrero has SEVEN kinds of pozole!

Yes, I always say the same thing. We both have the best mezcal, tobalá for them, cupreata for us in Guerrrero. Same with our ancestral chocolate drinks like tejate & our very own chilate. Our aguas frescas de maracuyá, guanábana, nanche, guamuchil. I love Oaxacan cuisine & I wish Guerrero had better representation.

I saw Gordon a ddecade ago go to Asian countries. I always wondered of his amazement at Mexican cuisine, which is on par with the most complex Asian flavors, just as delicious. I knew he was going to be as blown away by different Mexican cuisines as he was by Asian recipes. I enjoy seeing such a nerd of good food (foodie) appreciate what it is SO good about Mexico. its truly number one cultural asset. I always appreciated very much, but having emigrated, now I treasure it more than anything I can remember from there.

I like when Gordon is challenged. You could tell that he was feeling nervous if the critics would actually like his food or not since it's so different and a learning experience for him. I much prefer this "relaxing" atmosphere.

Although I am NOT a fan of Gordon Ramsey, I appreciate his love for Mexican & all food in general. Its truly hilarious to hear him admit that he struggles with his own issues, like listening & not talking, lol. Basic Molè is very time consuming & not difficult. Of course we, at least most in the City do not use a Metate. We may use our Molcajete, however we do not use as before. Anywho, example, my Mole is Rojo/red & made half scratch. Actually, when I make a huge batch of fresh Enchilada Salsa/Sauce, I am able to make Molè from that. So for those of you atad worried that its difficult, nope, not the Basic delish Molè. Definitely ALOT of ingredients & tike consuming. IF you love cooking, you'll enjoy it. I listen to 🎶 in Español while I cook. I hope this is encouraging. The flavor of any food is given with the heart. Mexico is number 1 that love to cook
I've eaten at Contramar in Mexico City, it's amazing. Mexico City has some absolutely incredible restaurants, many Latin American cities do. And of course all very affordable, with gracious and attentive service that doesn’t require an outrageously ridiculous gratuity on top. Puts the US to shame in a way, a lot of places do.
I am from Oaxaca and I used to eat mole once a week growing up. NGL Gordon Ramsay's mole looks amazing!
He really honored Jorge's mole base, the finished dish looked great.

Gordon experincing Mexican culture is great. I dated a Mexican girl and her grandmother would make fun of how skinny I was and feed me the whole time I was visiting. It was amazing, but I had to be a good sport. They have a very sarcastic, roast-friendly, ball-busting culture and it’s always fun watching Gordon roll with punches.
