To sail at better angles, tie the windward side further reward on the boat. You can then sail with wind on a beam reach. That's how Norse square sails were used. I'm finally continuing to watch the rest of the series.
I watch all the channels.....you, Jim, Shawn, Joe...etc. You & Jim always seem to make me wanna do bushcraft stuff! lol Now.....by doing bushcraft stuff, I mean reserving the 'no-power/no-water' camp site at the nearby state park for the weekend. Hahahaha! But you get the idea....me, my wife, and our two teen-age boys get away for a few days with no cell phones, start our fires without a lighter...maybe catch a fish and cook it...and just enjoy each other's company for a while. :)
A couple of tuff days with that wind. Looked to me like a forest fire in the distance at around the 18 minute mark. That will give you some nice sunsets. Too COOL

One long canoe would be faster than two separate. So for long lakes it should be better to tie them in line one after another using two poles. May be even connect them with the tarp and duct tape. When it gets windy outriggers would give as much stability as needed. For the floats you could bring some inflatable toys, which should be better for speed than solid wood. This looks better than the catamaran. A mast is not a problem either with this setup

Great episode! Take some simple sailing lessons next summer ~ you can move faster in a head-on angled wind than a straight from behind. tail-wind.
Totally maybe if we tied paddles down as a keel also to stay course. But we would need a more advanced setup all round for sure
