I've never seen a nougat recipe with any dairy products in it. How does this change the texture? It looks shinier and more sticky than Italian torrone nougat.

Yes, it is cooked with the boiling hot syrup. It is safe to eat. If you are ill or immune compromised, buy pasteurized eggs or liquid egg whites in a carton that are pasteurized to kill salmonella.
