I also loved the Gino Ginelli Toffee and Fudge ice cream, I wish they'd make it again. The mint one with the little crispy bit of mint in was also amazing. Both better than anything you can buy today. But, I'm tired of all caramel being salted caramel nowadays so I just won't be putting salt in :)

Lovely video! Question from an amateur here: what can I do if my caramel becomes hard while I incorporate the double cream? Do I have to heat it again or is it ruined?
Low heat while stirring to warm the sugar back up will allow it to mix with the cream. Also, if you heat your cream first (just warm not boiling) it's less likely to shock your caramel into hardening
Jem! The 50g caster sugar mentioned after the eggs isn't in the video. Do you add that before you pour the caramel into the eggs, or after you pour the eggs back into the caramel? Thanks!
Yummy! I have an ice cream maker! But, the last time I made caramel it kept crystalizing on me, I didn't stir it at all. I tried more than once too. I might need a better sauce pan to start with. What do you recommend and what size?

Very decadent tripe fudgey ice cream 🍨 ... but think I’d add a little vanilla ice cream layer to offset all that sweetness.
