I cooled noodles on a cooling rack. I find if I do the the first side for about 2 minutes, flip and cook 1 minute more! My cooling racks are long enough I can place 2 of the crepes side by side. By the time the 3rd crepe cooks, the first 2 are cooled enough to stack on top of each other.
This looks amazing! Also: useful fact; 550g of water will be 550ml of water. You can just measure out 550ml and you'd get the 550g you need for this recipe. This is because when they formulated the metric system, they decided that the 1kg weight measurement would be whatever 1000ml of water weighed. So they weighed 1000ml of water - and that became the kilogram we all know and love. So 550ml of water will always weigh 550g... And 2 litres will always be 2kg - and so on... 😁

So, is it better to have mixed up the water and gelatin before the egg white went in? Or put the egg white in first? Or maybe pre measure the ingredients into bowls and assemble faster?
I use ground pork rinds that i let soak in a bit of heavy cream and it really helps make the meatballs less dense.
