The way I view it is "tasty" implies what he ate. Starts obvious with doggie food because he writes that he ate it. But after he killed Scott, I believe that he confesses he tried some of Scott. Then finally, he scratched an itch, and from the earlier page ( where his scratch pulled some skin off) this time he ate a piece.
@David Stud thanks I appreciate welcome to racoon city movie because of this one. They did a decent job with the mom and child at the beginning who both seem infected. But the child isn't far gone enough and probably ran away from the mother because she was too far gone. Basically the child was Scott and the mom was the keeper. It's like a feverish "losing your mind" mindset. You don't just get really sick and die...then become a zombie. But more so that the tvirus is slowly breaking you down and you should be dead, but it's keeping you alive until it has put you in it's most basic function. Which was spread the virus via bite scratch fluids. So this hunger they feel and describing everything as a little tasty is when the virus is manipulating your sense of satisfaction to help spread itself.

No, I believe it's referring to a hunter. IMO, lickers don't have the characteristics of a gorilla as they crawl very flat and don't have the broad shoulders and the hunched posture like the hunters do. I also believe that the diary is foreshadowing what the latter half of the game brings when the player discovers that the mansion has been overtaken by the horrible reptilian mutants known as hunters after returning from the guardhouse with the Helmet Key. I also don't think that lickers were even thought of during the first Resident Evil game's development. Hey ho, I could be mistaken, but I actually think that the "gorilla with no skin" is a hunter.

I know he was slipping due to the T-virus, but he literally killed a guy because he thought his face was ugly. What a goofy Zombie.
