Lots of folks show you how to prepare and freeze veggies for storage but they never seem to show you what to do with it when you want to go use what you have saved. Major kudos for showing us that step Donna!
My wife and I always have a “corn day” in August when we put up about 4 to 5 dozen ears picked that same morning. Our process is similar to yours but messier. So, we will adopt your tips gladly! Especially cutting blanching time to 45 seconds and no ice bath. Also, I use a corn kernel remover tool so I get a bit less creamy product off the cob. Thanks for the wonderful video!

I used the two knife system last year and it worked great, glad you are sharing that technique with your viewers! I saw a video on using a pound cake pan for cutting off corn from the cob. Put the small end of corn into the hole of pan and cut while turning the ear, the pan catches the corn and corn milk. It really works very well!
I tried it too using a bundt cake pan but kernels went all over my counter. I found this way works best for me, but I'm glad it works for you. Thanks for sharing!
I used my new mandolin this morning on top of a large stainless steel bowl and it worked like a charm... compared to using a knife it was at least three times faster and so much neater than last week when I used a knife! We were also making scalloped potatoes and so when we were at the kitchen store we bought a new mandolin. After we did the potatoes I ran the cheaper XOX mandolin back to the store because it wouldn't stay at the right width. Richard told me to go ahead and buy the next level up which was black plastic and stainless steel. So I did... I think it cost me about $30 more but it is so wonderful I will use it ten times more than the all plastic one that frustrated me to begin with. Another thing I like about the second one I exchanged the first mandolin is that unlike the first one where you have to change out blades, etc. The mid level one you just turn a knob and you can have a plain straight cut as small as 1/16th of an inch to 3/8ths of an inch and switch it to julienne or french fries without switching out blades.
My Mom has since past away... but we usually did our corn sorta the same way but a little different. Anyway your video brought back some good memories. Thanks for the all your tips for putting up sweet corn.

Great vid! I appreciate the thorough explanation. I also have to echo your sentiments on the Quikut knives, my late father worked at their manufacturing plant decades ago. My mother still has a few that he got for her all those years ago and they still cut well to this day! She is very protective of them!

I just read that you don't need to do the cooking step.... so we are skipping that because my husband's family never did... I had to verify that that was safe and sure enough it is! That makes it so much easier too!
Hi! Yes, you can even eat corn raw if you prefer. Briefly cooking it before freezing helps preserve the texture. If you do not quickly boil it, the enzyme which makes vegetables rot will continue to break down the vegetable and cause soft kernels. I guess it just depends on how you intend to use them. I do not blanch my peppers before freezing because i use them in soups, so it does not bother me if they are a bit mushy when they thaw. Personal preference I guess?
What a great video. I learned so much from this. I have had issues with too much water in the corn, issues with it tasting sour and also bagging it in the sealer. You answered all those issues. I was leaving my corn out too long as well. Also I was cooling it in ice water, hence corn was too water logged. No matter how hard I tried to get the corn dry, I never could. Thanks again for posting this video. ❤️
I have a hard time finding yummy sweet corn fresh locally.. going to try a farmers market this weekend. My family Loves corn! and this video made me hungry!! Great video, love the way you talk through your cooking!
This is such an insightful video with plenty of detail. I've never seen giant bags of ears here but noticed a few people growing their own so may be something to consider planting for next year.
Oh yes, wonderful sweet & fresh corn is a true delight. It is huge here in the south US. I hope you can try a nice tender heirloom variety if you choose to grow corn. I really like an old white shoepeg variety called Country Gentleman. I am growing some in my garden and hope I will get a harvest of it this year. If I do, it won't make it to the freezer! :)

S Brown Oh yes, I bet you had some good corn. :) I have childhood memories of shelling field peas forever. I loved those peas but hated that shelling.:) However, I do think all that shelling has made me appreciate food more as an adult.

My bride got on me last year because she wanted canned corn or frozen cord "off the cob". I blanched and froze about 100 ears. I still have more corn than we eat in a year so I didn't even grow it this year. I will be using this video next year though! just added it to my favorites! Chuck

yes, I think I would. It is just much easier for me to work it into recipes by taking it off the cob and it saves freezer space. :)
