  • On this episode of How to Drink, thanks to Luxardo and Anchor Distilling I am making a Singapore Sling. This gin flavored drink was developed by a Hainanese bartender working at the Long Bar in Raffles Hotel, Singapore. This tiki drink was absolutely delicious and I highly recommend it! Cheers!
    Singapore Sling Ingredients:
    - .75 oz or 21 ml Lemon Juice
    - .25 oz or 7 ml Demerara Syrup
    - .5 oz or 15 ml Luxardo Sangue Morlacco
    - .25 oz or 7 ml Benedictine
    - 1.5 oz or 45 ml London Dry Gin
    - 1 Dash of Orange Bitters
    - 1 Dash of Angostura Bitters
    - 2 oz or 60 ml Seltzer
    - Garnish with a Lemon Wheel

    Isn't pineapple juice and grenadine used for the original recipe?
    Honestly, as a Singaporean, the SG Sling is very meh~

      Hong Fu Teo there's a lot of fog surrounding the original recipe. The earliest version of it apparently turns up in 1897, way before it was supposedly invented at Raffles. By the 1970's the the Drink at Raffles did involve grenadine but that ingredient doesn't show up in any of the earliest recipes. Later Raffles decided to bring it back to its roots, apparently they didn't have the recipe written down anywhere. They had to find guys who worked at the Long Bar in the 30's when they were young and ask them what the remember about the drink! This recipe should actually be pretty close to the original, but it's honestly hard to say.

    Today my uncle told me an interesting story about the Singapore sling. About 35 years ago he worked as a flight attendant for KLM. One time he flew to Singapore and visited the Raffles Hotel just because of the drink. He wanted to know how they made it and the bartender wrote down the recipe for him. The recipe is similar to the one you made but the proportions are different. My uncle wrote it down for me (this is what he could remember so it could still be slightly different), so here is the recipe:
    1 part Gin
    1 part lime juice
    1 part Peter Heering cherry liquor
    Shake with ice and pour it in a glass
    Add Seltzer
    1 dash of cognac
    1 dash of Benedictine
    Garnish with an orange wheel

    I've been drinking...however, pretty sure the original recipe calls for pineapple and lime juice -- which makes for an awesome drink btw. Cool channel none the less...

    Excited to try this one day. Other Singapore slings I've tried have used pineapple juice which ends up sitting really heavy in the stomach. Plus, I just love another cherry flavoured

    Greg, I asked what I could do with my bottle of Cherry Heering. You suggested Singapore Slings. I love them. I don't even like gin, but in this cocktail I can barely taste the Juniper berry. Thanks for the tip. Singapore slings are now in my rotation.

    I tried your recipe - love the taste! I expected the color to be more red, but it's actually more like an iced-tea color. Taste reminds me slightly of a Long Island Iced Tea, but more refined. Did I mess it up?

    I read a bunch of recipes and it took a few attempts to get a balance we liked.
    Funny... I handed a version to my wife and she was unimpressed. Then I realized I had forgotten the 1/2 oz of lime juice which changed the entire effect and pulled it all together.
    Where 8 ingredients were too many, 9 was just right. :-) Then it was delicious... for us. Amazing how a small change can make a big difference.
    Just a little of these rich sweet liqueurs goes a very long way so I tend to use less of them.
    1-1/2 Gin (I used Beefeater which I like as a mixer)
    1 100% Pineapple Juice (bottled)
    1/2 Lime Juice
    1/2 Heering Cherry
    1/2 Benedictine
    1/2 Clémont Creole Schrubb
    1/4 Grenedine (optional for color) It comes out a murky wine red anyway from the Cherry & Pineapple Juice
    Dash of Fee Bros Orange Bitters
    Top with Seltzer.
    It tastes better and more refreshing diluted so it's not so syrupy.
    As I look at this recipe... If the gin were swapped out for dark rum it might make a decent Hurricane.

    I'm trying to teach myself to like gin after bad experiences in college with terrible gin coupled with the realization that I don't like tonic. I went to a cocktail bar at a local distillery that specializes in gin and had their Singapore Sling, and just about jumped out of my seat. It was so good! And since then I've been trying to figure out their spec, because there are a LOT of Singapore Sling recipes out there. I need to figure out how to make them at home because I'll bankrupt myself if I have to go to a cocktail bar every time I want one.

      We did try the Singapore Sling at the Long Bar earlier this year. It was disappointing and bland but it absolutely heaving there, full of like-minded tourists! I like the look of your version a lot better!!

    i remember having this at the raffles hotel and thinking how painfully sweet (and artificial tasting) the drink is. I think this recipe (and the final appearance) looks decidedly less sweet and hopefully more balanced... will try!

    Yesterday I made a Singapore sling and didnt notice that my Cherry Heerying had gone bad. Still was drinkable but made my eyes water some...Also I like the "Raffles" recipe better (adds 120 ml Pineapple juice, grenadine and Lime juice instead) - but thats just my preference...

    Sorry if you've already talked about this in a previous video but I'd like to know your thoughts on the most versatile aperitifs and/or liquor add-ons a starting home bar should invest in. The Sangue Morlacco looks delicious but I have a hard time convincing myself to pay up when its usage, like other liquors, seems rather specific? I'm a big fan of all drinks in the tiki / citrus realm! Thanks for the awesome video!

    I bet an egg white would be good in this to give it a different texture and some head at the top of the drink. Kind of like pineapple juice, so many variations of the Singapore Sling have it, but I think this will only be the second I've tried without, and likely the closest to the original too. Sounds pretty good!

      Depending on your market you may or may not find the Sangue Morlacco with ease... Possibly you can order from the internet though? It's legal to do so in like 21 states, but I don't know which off the top of my head.

      Thank you! I've done some work with Luxardo in the past, 3 episodes last season and 3 episodes this season. The demerara is just a 2:1 simple syrup made with demerara sugar, nothing very fancy. Regular simple will work just fine!

    I recently had one of these at the Long Bar at Raffles in Singapore, they charge $32 and mix it in a loud machine that ruins the atmosphere of the place, and they honestly weren’t even that good, I’m glad I have had the experience but not particularly worth it, neither me nor my parents enjoyed it and we all have quite different tastes in alcohol.

      Not really IMO - Cheery Heering is very special and just makes the drink. But again IMO...

      Cherry Heering is the traditional cherry component for a singapore sling, but as long it's cherry, it's fine. I've on occasion used Cartron Cherry Brandy, and it works ok. If you'd go to a bartender and ask (me included), they'd insist on using Cherry Heering

    Have to say this is a wonderful recipe, and much better than those I've tried which include pineapple juice! I only had maraschino, so I substituted grenadine for the demerara syrup for colour, and added a quarter ounce of Cointreau, and went with Tanqueray Rangpur for some additional citrus notes.... Needless to say, it was perfect! Just another alternative...

      Hunteromega I did a Fog Cutter a while back and I hadn't planned to revisit it in this tiki series. At some point in the future I'd like too though... I'm not in love with how mine came out. I agree with you too, one of my absolute favorite drinks.

      Jerry Walker like navy grog, the tiki cocktail made with the ice cone, or legit historic grog? We've found recipes for actual grog, it's not really for getting drunk. Going from memory I think it was 12 parts water to 1 part rum or Gin and 1 part lemon or lime juice. My understanding is that it had to do with disinfecting the barrels of stagnant water you had to drink while at sea.

    Do yourself a favour, don't order one at the Long Bar at Raffles. They pre-batch it and serve it from a soda gun then charge you an arm and leg for the privilege. Well, at least they did when I went there in 2008. Disappointing to say the least.

      James Burtton this is what I've heard. I also hear their recipe uses pineapple which probably wasn't in the earliest incarnations of the drink.

      Not the case now. They make them fresh. They have a couple of versions, the traditional and a "vintage" version that is pretty damn good.

      I was there last year and they were made fresh. They have dozens of different recipes on the menu. We had one “original” and one “modern”, they were both sensational, though I blew about A$70 for the privilege.
