      I was in Sham Shui Po Tai Nan Street just an hour ago. Its crazy hot today and packed with domestic helpers (Sunday holiday) shopping around the second hand market.
      Yesterday i had some chill Tsing Tao beer with claypot rice on Apliu street near C2 exit. Sunday is crazy packed, i'll be there in the evening for some beer. Yaaay !!!

      @@justhappenedtowalkby3709 The temperature in Hong Kong has been kept rising for resent years, thanks to climate change. So, unless you are a beach guy, I won't recommend you to visit to Hong Kong from May to September. In the old days, April and May was definitely good for picnic and travel around in Hong Kong, not too hot, hot too humid. But now, it's melting hot in May..

    Kudos to you! As a Hongkonger who works at this very district in Hong Kong, you've done a great job in recommending some truly local street foods here. Anyone planning to visit Hong Kong should watch this series of videos to taste the best food Hong Kong has to offer (if you don't mind the heat and the non-so-hygienic environment)

    No, it is a ritual and nothing to do with cleaning the dishes. It is just to sort of sterilise the utensils and cups and bowls. Very popular in Cantonese style eatery in Malaysia too.

      Ha ha... apparently the dishes are sort of clean.... 🤣🤣💩💩🤣🤣

    • @xpaperxcutx4588
      @xpaperxcutx4588 4 ปีที่แล้ว

      they also do it in mainland china, apparently water is not clean so even though the dishes and chopsticks were pre-washed, it's customary to use hot water to sterilize them.

    • @msbrownbeast
      @msbrownbeast 4 ปีที่แล้ว

      The hot water would not do much to kill off the germs (much less sterilize the dishes). I think sometimes it may be better just to leave the dishes and utensils alone, because pouring the hot water on them just stirs up whatever that's on the surface.

    Your video really brings up my childhood memories. Sham shui po is where I grow up and I lived there for almost 10 years before I moved out!

  • @MingWLee
    @MingWLee 3 ปีที่แล้ว

    Come across your video today, weird TH-cam algorithm lol
    Anyways, I used to live in Sham Shui Po for nearly 10 years before I moved back to Canada. I born in HK then immigrated to Canada then back to HK to work for 10 years. Sham Shui Po definitely changed a lot since then! If I may, I would love to add some information of the food you had.
    1)Sun Hang Yuen, their fresh beef scramble egg sandwich, both bread used to be not toasted. Secondly, their beef with scramble egg was double that size! Yes, double! The reason why their beef are tasty is because they have marinated it, it boosts the taste and favours in it.
    2)公和 is more than 50 years old, all their products are freshly made each day and they maintain their quality very well throughout the years. You guys should have try the soya pudding (hot), that is one of the famous dish! The smoothness and melt-in-your-mouth texture is one of its kind, too bad you guys missed that...
    3)合益泰 steam rice roll has two unique factors, first is their rice roll are freshly made in a factory every single day, the ratio of rice and water is in the perfect texture. Secondly, have you wonder why it tastes soooo good with the sauce? The secret is simple - they added lark (pig fat) with that peanut paste which add its aroma and smoothness into the overall texture. (Note that there is another kind of steam rice roll which is freshly made, that texture is completely different than this one you have)
    4)愛文生 Dai Pai Dong I am glad you did not go to those at Women's market, I'm not saying they are bad but here at this one is where you can experience one of the best taste of dish and also the whole atmosphere along the street. Not much I could add to the food you have because there are way too many to mention, my only 'advice' would be any dish involve with that wok cooking lol That is the soul of Dai Pai Dong food, everything was 'forged' through fire.
    Peace out~ :D

    A bit of clarification...bowls, plates, glasses and utensils are indeed washed and cleaned by the staff. The table side hot water dousing by customers is a holdover from the old days when perhaps hygiene wasn't of paramount consideration. I live in HK and have eaten my fair share of dai pai dong food without the dousing (I'm a lazy S.O.B.)...never got sick and don't have hepatitis as far as I know. But good intro to our street food nonetheless. Cheers.

    • @Echo7steel
      @Echo7steel 5 ปีที่แล้ว

      Hotspur62 yes I was very confused about that. Did they give them dirty dishes and chop sticks? And a bowl and hot water to rinse them off in? And you just use them after rinsing them with hot water???

    • @Hotspur62
      @Hotspur62 5 ปีที่แล้ว

      @@Echo7steel You sit down at the table, they lay the "place setting" down along with a small wash basin and jug of hot water. Customers can choose to rinse the setting or not before they start serving the meal. Afterwards, the staff cart off the used settings and wash every plate, bowl and glass. Like I said, I'm lazy and if it looks clean I don't bother :-)

    • @Echo7steel
      @Echo7steel 5 ปีที่แล้ว

      Hotspur62 so I guess the hot water is used to make sure they’re clean. I thought they served you dirty dishes and had you to wash them yourselves before eating

    The mystery sauce is a bit of a Hong Kong thing. It is a (fermented) bean paste base but sweetened, and is unsurprisingly, called "sweet sauce". It's use is mainly in street food, especially the cheung fun but is so popular that you can get sanitized versions from big brands in supermarkets.

    I'm Irish/Chinese American and that final Hong Kong Cantonese meal reminded me of my childhood. I've never been but my great Auntie owned a Chinese buffet while I was growing up and would take trips to Hong Kong to scout chefs and food. For family get togethers she'd search out the most authentic places in the Bay Area, CA and we'd have a Cantonese feast. Those black bean clams take me back, one of my favorite dishes of all time but it's not available local anymore. Sadly all my Chinese side has pretty much died off, they never had many kids and the greater families were quite racist against race mixing and had no interest in our white side of the family, so I don't get these experiences anymore.

    The red mystery sauce and the the sauce on the rice rolls is a sweet hoisin sauce.
    The water is to rinse off your dishes and utensils. Because Hong Kong can get dusty especially since this is an outdoor eatery. This happens at indoor restaurants too. Please amend the comment that they don’t wash the dishes. They would be able to operate that would be a health violation.

    • @lkiing
      @lkiing 5 ปีที่แล้ว

      Yes I went to some indoor restaurants and they also give you hot water to rinse the dishes off. Yes sometimes it is the dust. But my wife's relatives living in HK told us that they just don't trust how clean the dishes are sometimes so they rinse them in hot water just in case.

    • @nyee1
      @nyee1 5 ปีที่แล้ว +1

      True enough that hot water or tea rinsing of dishes and utensils is an HK tradition. It is not a replacement of washing dishes. Many believe it is to rinse dust, but I believe the tradition started as a rinsing of insect powder that was sprinkled in all cupboards and storage areas in the past. The powder. Oiled stick to dishes and such, so a rinse took care of that. In terms of sanitizing, most people don't realize that the water is never hot enough or used long enough to sanitize. Need greater that 60C for 20-30 min as a minimum.

    At 10:00. Twin skewers actually have a practical reason: use both at same time to pierce food. It stops the morsel of food from spinning and flicking sauce.

    Wow! You had San Miguel Beer. Do you know that it is from Manila? The brewery started in a district of Manila called San Miguel, hence the name of the beer. It is a special place for me because it is where our family is from. I'm glad that you are able to showcase some of Hong Kong's hidden culinary gems. Great format and presentation!
