My Gambian friend makes this and she allows the rice on the bottom of pan to slightly over cook and it adds a wonderful texture to the finished meal, she always serves with fish & boiled African veggies, she's a amazing cook.
Washing rice doesn't eliminate starch. It removes away the chalk used by manufacturers to harden rice. Thats why when you cook processed rice it does stick together like ugali, unlike rice straight from the farm

we already added two cups of the stock and also the rice gets to cook faster on steam so you might not need more water but I also mentioned in the video, you might need some water incase your rice is not fully done

You did so well.. the next you make this try roasting your tomatoes and bell peppers and adding a few bay leaf it take the rice to the next level
