when i was a little girl growing up in santa barbara, my dad’s cousin would begin dinner by making fresh tortillas every afternoon. all of us little cousins would line up at her door. then, she would hand pieces of tortillas to us rolled up with butter or bits of grilled pork chop 😊. today, i am 72 years old and vividly recall the tender tortilla in my hand and the delicious flavors of the treat this “auntie” fixed for us.

@voxifera2300 I just roasted 10 pounds of Hatch chile! I was raised on it growing up in NM. I used to have to order it fresh directly from Hatch for years after moving to SoCali, but many of the grocery stores now have it available here, thank goodness. But you've got to be QUICK, or it's all gone from the grocers as soon as they receive it and put it out for sale, lol... so I'm always ready in August and call the produce managers to inquire when they'll be receiving their stock. Naturally, I'm banging at their doors as soon as they stock their bins, lol. Hatch chile is a part of my native New Mexican soul. Ü

These are thicker like a Texas/Chihuahua style tortilla. Sonoran tortillas like I grew up with are much thinner. Similar ingredients (though baking pow isn’t always used in Sonora) but rolled thinner. Also, lard will help ensure the tortilla stays chewy/flexible when rolled so thin. Butter/shortening tend to make it crispy when rolled thinly.
