    I grew up in my wifes Laos family and my maa and paa made the best food. Laos food is sooooo good. If you know! YOU KNOW! This dish is so freaking yummy! Thank you for the video! Sab sab!

      Lao food is ok. Some good options like laab or kem or that veggie stew with pumpkin or raw minnow laab. I think Hmong food is better as they don't use padek in every dish and they have a variety of dishes that are more true to the flavors. Lao food overkill for the masking of their natural flavors. For example, Hmong sour green is better than Laos.

    My Hmong workmate gave me some laab made with fish. I don't know jack about Asian types of dishes. I ate it and it tasted nice. But now I'm going to have to ask him if the fish was raw or cooked.... Sorry. I'm just a clueless American. God bless you, Nouk!!!!

      Most likely fish are cook for laab

      Raw has a soggy texture. Cooked has dry texture. Raw is better. The exception is when they use say round egglants in the cooked stuff, then it becomes soggy. This is shown by the seeds? Not hard to tell.

    Do cook tripe first? If yes how long?

      Between 5-10 mins. You can cook them ahead of time or as you are making the laab

      What about stomach? How long to cook if you are using that?
