    One of the finest chefs ever. My mom follows a different recipe. She doesn't actually completely cook chana dal to make it mashy. She keeps it chunky for perfect crunch in every bite and uses coconut oil or ghee

    A variant of this is popular in the Bangalore/Mysore region of Karnataka, where it is just called Vada/Masala Vada. Staple in breakfast and evening street food. Also is a common Bhog in Ganesh Chaturthi. We add finely chopped dill leaves for an added boost of fragrance and flavor. Ahh, this brought back so many memories. Thanks chef!

    Being a South Indian , this was a Staple Dish in my house. My Mom was an Amazing Cook.
    This Dal Vada is one of my Favourites.
    We also soak some of the Vadas in Curds n have it the next day.
    Tastes amazing.

    In my State karnataka its a traditional festival item , but without onions , but dill leaves is used famous as Ambode ( am bo dey )👍🏾

    This is kadlebele vade from Karnataka, a very old traditional recipe from Karnataka. This is a must in shradh karya, prepared on 12 th-13 th day remembrance day after someone's demise. Otherwise also eaten as an evening snack!

    It is called masale vade in Bangalore, Chattambade in Mangalore. Add dill leaves(sabsige soppu/ sabbakki soppu in Kannada) to enhance the taste of the vade.

    For dal vada, classic dal used is peas dal/ matar dal... That's tastier than chana dal too... Always add hing along with curry leaves dal and grind... For better taste as well as easy digestion.... Can add ajwain too...

    This is Masala Vada of South India and is a must for wedding meal as it is considered 'SHUBHAM' now you can increase the flavour by adding finely chopped 'SUEE' (it's called Diil Leaves in the King's Language I think), also finely chopped Methi Leaves (Fenugreek) and also finely chopped Cabbage.

    I love these vadas. Miss the ones we get in Nagpur. Mumbai dal vadas don't have the same taste.
