No Bake Energy Bars for Busy Dreamers

  • Here is a simple recipe so that you can have the energy to spend more time doing what you love.
    Dry Ingredients
    200 g / 1 3/4 c oats
    45 g / 1/4 c flax seed, ground
    25 g / 1/2 c slightly packed
    1 tsp cinnamon
    1/2 tsp salt
    Wet Ingredients
    255 g / 1 c peanutbutter
    130 ml / 1/2 c maple syrup
    1 tsp vanilla extract
    Optional: dried fruit for decorating such as cranberries
    Blitz the flax seed in a blender for about 30 seconds until it creates a rough powder. Mix all the dry ingredients in a bowl and stir together until evenly distributed. Add the wet ingredients and mix well until combined.
    In a 18 x 18 cm / 7 x 7 in square tin lined with parchment, press in the mixture. It helps to flatten it with the back of a spoon. (Alternatively you can roll the mix into balls). Chill for 30 minutes in the refrigerator. Then turn the tin out onto a cutting board. Cut into 9 squares or 18 triangles. Leave as is or decorate the top with dried fruit. Store in the refrigerator, best eaten cold, but they do make excellent travel companions.
    Experiment by adding in chocolate chips or a bit of cocoa powder or coffee powder, varieties of dried fruits or nuts. Certify that the oats are gluten free if you are celiac.
