I made a dish like this--based upon memories of my Vietnamese Childhood and whatever was in my friend's kitchen. So, I decided to check out your video to see how you do it! I didn't do the step with the green onions...because I was grilling a fish and was doing that with the fish...and didn't want things to taste too similar! Thanks!

Cindy En Btw, the way I eat them is simply dipping the eggplant into fish sauce with only chilli and garlic. Not with the sugar/vinegar mixture, but either way is nice. :)
This was the first dish my mom complimented me on. That's a HUGE deal for a kid! It is a very delicious way of making eggplant. I finish it a little differently. After I run a fork through the meat and sauce, I hold the stem and a fork at the end of the eggplant for durability and twist at the stem. Then I take a scissor and cut them into smaller bites to make it easier to grab with chopsticks. I think the presentation and easy grabbing was the show stopper for my mom. LOL

Clifton Wan It's not induction but infrared stove. It doesn't work like that with induction cooker unfortunately
