These recipes look so delish! Eggplant is one of my favorite foods. It's so versatile, too! It can be a jam, a dip, a side, a main, and even (believe it or not) dessert! Season 2 is off to a great start!
I love Middle Eastern eggplant salad: roast whole eggplants in the oven (puncture them to let steam escape), cool, scrape out flesh and mash. Mix with finely diced tomato, pepper, scallions, and fresh herbs. Dress with lemon, olive oil, cumin, salt & pepper.
@@sandybowman7140wanted to clarify for you. As directed above, the eggplants are roasted WHOLE, which is why it states to puncture the skin to allow steam to escape. If you were asking regarding the recipe in the video, then yes, the eggplant is placed cut side down in the cooking vessel nestled amongst the cherry tomatoes. This avoids toughening of the cut side as well as preventing the stuffing from falling out of the filled crevices. Happy cooking!
I just made the Vietnamese dish. It was so good! I'm usually terrible at cooking eggplant, although I love it so much. But this turned out great. It's a new favorite.
I'd love to try to prepare both. My favorite eggplant dish is the Chinese spicy garlic eggplant (魚香茄子). I didn't like eggplant as a kid, but I've grown to love it in all preparations and from all cultures. Growing up in a Chinese home, my mom made something similar with the steamed eggplant but instead of lime juice she would use Chinese black vinegar. I also wonder if it would be good to put the scallions on the eggplant, and then pour the superhot oil on it? Hmmmmm...ideas.
Love eggplant dishes. It's not something my mom ever cooked to my recollection, but I grew up in a town in the 70s/80s where there was a great number of immigrants from Turkey, Italy, and Greece. So I did eat a number of their dishes. And I pretty much loved them all. Then after I moved to the US I used to go to this one Chinese restaurant and fell in love with hunan eggplant. I moved stated a few times, and unfortunately can not find that dish locally. I have made a few eggplant dishes myself over the years as well.
@@Pammellam it's been a while, but to the best of my recollection the base recipe for human dishes had a mix of veggies (broccoli, onions, carrots, bamboo shoot, maybe bell pepper). It was in a brown, spicy sauce. You could get it with eggplant (it was most like fried in oil prior to be mixed with the rest of the veggies, as it was very soft), or with chicken, beef, or shrimp. The meat was not battered and deep fried. I think it was velveted so. I can find Hunan dishes locally, just not with eggplant. I find that the dish is differently prepared in different parts of the country. The kind of veggies can vary and the spice level. Hope that helped.
In Dominican Republic we love eggplant. We have it stewed with lots of onions and peppers. We also slice them in thick rounds, dip them in egg wash & then flour and fry them 😋 😊
I love exploring new recipes too. Thanks for the 2 tried & true ones! Now u just have put Printable Recipe Cards or Cookbook online! I only started trying Eggplant in my mid 40's (just a few yrs back 🤭 jk) and instantly fell in love with Eggplant Parmesan! ❤

What an amazing episode. There was an Italian recipe for a marinara sauce with egg plant. It involved heavily salting the slices of eggplant to extract the harsh juices and then rinsing them in cold water and then drying them. The eggplant was mixed with the marinara sauce. This was the only time I liked eggplant. The chef who made this for my brother in law was very secretative about the recipe since he would make this in his steakhouse restaurant.

We make several types of Eggplant 🍆 dishes but my most favourite one is called "Gutthi Vankaya", it's a type of curry stuffed eggplant with Sesame paste/peanut/or my favourite Poppy seeds and Cashew paste, most of the western countries Don't know these dishes but they only know Tikka Masala, butter chicken etc, mostly in india you don't find anywhere and also we don't eat spicy food daily but some occassions but most of the time just normal spice just enough to give flavour not to burn off your taste buds...
Beryl, whenever you wax rhapsodically about eggplants, I think of your fellow New Yorker and enthusiastic home chef, the late great Laurie Colwin, and her essay "Alone in the Kitchen with an Eggplant". I'm not a huge fan but ... this makes me want to try stuff!!
My favourite eggplant dish is kaap ..made with disc of eggplant coated with semolina,ginger garlic paste and spices ... shallow fried ... This is normal served with rice and lentils 🤤
I,love eggplant! My best friend makes an AMAZING eggplant parmigiana, and my other favourite eggplant dish I found here on TH-cam, it’s from a recipe uploaded about a decade ago by a “Chef Tifa” and her “sexy” cooking channel. It’s stir fried eggplant with pork mice- oddly addictive!🥰🥰🥰
I actually hate eggplants/brinjals. I think it’s because we cooked it and mash it until it resembles a mashed up dough. But after seeing how it can be cooked and prepared and presented beautifully, I’m convinced to give eggplants a second chance
I come from an Italian background and I love eggplant. The Italian and Vietnamese eggplant dishes looked delicious. However, this is the first time I have ever seen dill in an Italian dish. Is this a traditional Italian dish or was your mother trying to satisfy your father's Polish palate?
Dill ( or in italian aneto ) is known and well used in italy , although not among the first things that come to mind when talking about Italian cuisine.
I normally don't like eggplant, even though chinese cuisine has a love of eggplant. The one eggplant dish I love is from korean Gaji-namul by Maangchi.

My favorite eggplant recipe ? From south of France, chichoumeille. Just eggplants, tomatoes, oil and garlic. So long to make, so good and easy to eat.
