Creamy Vanilla Rice Pudding Recipe

  • This delicious classic creamy vanilla rice pudding recipe topped off with raisins is the perfect after-dinner dessert or daytime treat.
    Ingredients for this recipe:
    • 1 vanilla bean
    • 3 ½ cups whole milk
    • Heaping 1/3 cup sugar
    • ¼ teaspoon sea salt
    • 2/3 cup medium-grain rice
    • 1 egg yolk
    • ½ teaspoon ground cinnamon
    • 1 tbsp unsalted butter
    • ½ cup raisins
    Serves 4
    Prep Time: 5 minutes
    Cook Time: 25 minutes
    Cooling Time: 40 minutes
    1. Slice the vanilla bean in half longways and scrape out all of the seeds using a knife. Place the seeds and hollowed out vanilla bean pods in a medium-size sauce pot.
    2. Add the milk, sugar, salt and rice to the pot with the vanilla and bring to a rolling simmer over medium heat while constantly stirring.
    3. Turn the heat down to low and stir every 2-3 minutes for 20-25 minutes until the rice is soft and the mixture is relatively thick, like a thin risotto.
    4. Remove the vanilla pods and stir in the egg yolk and cinnamon until completely mixed in.
    5. Transfer the rice to a casserole dish and spread out. Chill for 30-40 minutes or until cold.
    6. Serve with raisins.
    Chef Notes:
    Make-Ahead: You can make this recipe up to 3 days ahead of time. Keep it in the refrigerator before serving.
    How to Store: Keep covered in the refrigerator for up to 5 days. This does not freeze well.
    If you don’t have a vanilla bean, then use 1 teaspoon vanilla extract and put it in right after you add in the cinnamon for maximum flavor.
    When it comes to adding in fruit or nuts, you can incorporate them when stirring in the cinnamon or add them right before serving. I prefer to add at the end before serving.
    To cool the rice pudding faster, spread it out on a sheet tray or in a casserole dish first before placing in the refrigerator.

    Just served this and my family thinks I am a certified Emerald chef. I can’t tell you how many smiles this put on my family today. I did use the vanilla extract and instead of the heavy whipping cream I used 1/4 cup of carnation milk. It was absolutely delicious. Never made this before, so for my first time I think I did pretty good. Thank you so much for the smiles you helped me out on my families faces today.

      Its ok and taste very good,but you miss one more milk,coconut milk,try and let me know.le llamo 4 leches and is not cow milk,I use almond milk its no diference.

    I used this recipe and loved it. I tweaked it a bit however. I used cloves cardamom and a cinnamon stick as well as vanilla extract. I also prefer mine hot. But this is the best video explaining how to make it

    Ever since I started making it my parents keep on demanding it. I am quadrupling the recipe now, because it does not last long enough. I started to soak the raisins in rum or cognac. Make half with regular raisins and half with the boozy ones, both delicious 😊😊😊 I have also tried it a couple of times with the vanilla bean, cinnamon stick, cloves, cardamom, and star anise…simply sublime! Oh, and don’t forget the lemon or lime zest to brighten things up😊😊😊

    I just made this and I can't begin to thank you enough! I've made different puddings in the past including my nonnas recipe and this is by far thee absolute best I've ever tried. The only thing I did different was to add a bit of lime zest and ohhhh man!! Boom!! Thank you good sir. 😊

    I just made this and I think my stove is a bit weak because after 25 mins of cooking it on low it was still like a soup, I had to raise the temperature a little to thicken it up and as a result the grains are still a little bit crunchy ... The flavor though is absolutely perfect, just the right amount of sweetness. I'll adjust the temperature to suit my stove next time and I'm sure it will turn out perfect. Thank you for the recipe!

    I have been very sick the last 2 weeks. could not keep anything down, Feeling better wanted to be careful what I ate and rice pudding is cool and soothing but expensive, was also reading a French book where they are cooking chicken fricassee in occupied France. the chicken recipe Chef Billy I liked so much it will be leading me to many more new things to cook! thank you, chef Billy. will try them tomorrow and have a feeling they will be wonderful!

    You should also add a couple slices of lemon peel to the milk when cooking. adds slight lemon flavor. This was what my italian mother used to do.

    Great video.
    What would the temperature get up to while it's cooking? I ask because some of vanilla's 500 or so different flavor molecules - it's the most complex flavor by far - begin to break down at 161 F (72 C).

      Honestly not sure. It's at a low simmer so I'm guessing 205ish F

    Actually one idea for the leftover vanilla beans you can rinse and dry them out in the oven and use them again like brewing hot coffee. I dry vanilla beans out and use the whole thing. Lots of ideas.

    Made this today. My mom and grandma used to make this all the time. My kids love it but I had never dared. Really easy but I had to add more milk since it evaporated and cooked it a bit longer...I guess my rice was bit tough. Is it weird that I like it warm?

    I tried this recipe and my rice never fully cooked! I tried covering it with a lid and letting the steam help cook it and nothing was working. When I finally stopped cooking (well over 20-25 minutes) there were STILL some crunchy pieces!

      Keep adding extra milk as it thickens I cook m8 e slowly 8n oven 3 hours

      @@ChefBillyParisi It might have something to do with the beginning of the video, where you say that the recipe uses ingredients people already have in their cupboards, accompanied by the footage of a vanilla bean being sliced open. A lot of people don't make it one minute into the video, and the first time you mention vanilla extract as a replacement happens at around 1:30 mark.
