As you were making this, I thought, that sure looks like my minestrone soup...but I use Ditalini pasta. And I love how you film the preparation, especially when you couldn't find where the tiny whisk was hiding 😊
For the yeast flavor, Marmite (a beer yeast) is available at most grocery stores and is a game changer for soup and stew flavor. You will be very happy you tried it.
Yo! I’ve been watching your older videos mostly (I’m new to the vegan life). I personally appreciate you adding the ingredient quantities on the side of the screen. It beats having to scroll through the adds and entire life stories that the bloggers put on their recipe pages.

A tip if you want to waste less paper towel: you can use rubber drawer liner to help hold your cutting board in place. You can get them in large rolls and cut them down to size. They also are super helpful to get a bit of extra leverage when opening stubborn jar lids!
Eating at a local spot here in San Antonio, I saw a server bring out a huge industrial size whisk ( to stir simple syrup into their tea), I laughed, fondly thinking of you. You are good for my OCD too lol, cleaning & cooking at the same dang time 🍀
The music helped to keep my interest. But I really wanted to see what the paper towel under the cutting board was for…love it, something I would do too! Recipes looks amazing 🎉
This is crazy, I have been in a minestrone state of mind for a few days and finally took the time to simmer some this afternoon! This was a great video that added a few ingredients I must try next time!
This soup is Delicious! I subbed green beans for the zucchini, added some fresh sliced mushrooms and a couple cups of leftover shredded cabbage. The lemon juice was the best finishing touch, and I did not want to add extra salt at thd table (unusual for me). Thank you, Andrew!!
Hello Nard, I saw your video yesterday & I immediately ran to the grocery store to pick up a few items to make this yummy homemade Minestrone soup. This & vegan broccoli cheddar are 2 of my favorite soups. Thank you so much for the details! I paired it with sourdough bread.
Awesome Sunday morning thought provoking for the ‘use ups’ in the fridge! I’ve already been pondering what to make today or tomorrow to use that up, including what is left of red wine from dinner last night. 😂 thanks again, for inspirations for my week’s planning! 🙏🏻🫶🏻✌🏻xx
This soup looks amazing! When I make soup like this at the end of cooking I will take a cup out and blend it in my vitamix and add it back to create a creamy base.
It's not lies... It's love :). Love is Moms secret. So enjoy a good Minestrone! Appreciate that you sautéed all those ingredients before adding all the liquid. Was relieved to see the garlic. :). And the sound effect when the web address popped up... ALRIGHT! Stay amazing! PEEEAAAAAACCCCCCE!

Goodmorning this soup looks so delicious 😋 I'm definitely going to make it will mash it alittle and cut veggies in smaller pieces thanks so much for another soup recipe I'll be making this over and over just like I do your delicious 😋 😊🎉tomato soup until next week❤🎉😊
Soup looks great! You got a new induction cooktop! Do you like it better than your old one? You guys inspired me to get that one. I like it but it can be noisy sometimes. I’m not getting a new one til it stops working. Yes, take out food is SO salty! I’d much rather cook from home so I can control how much salt goes in my food.
I did! this one is REALLY nice but also been saving to get it for a while as its REALLY expensive. has a ton of great features and benefits. I like it a lot! but if I wasn't doing this as often as I am, I wouldnt have purchased it. I so agree. You really dont even know how much sodium/salt you're ingesting. among other ingredients. Cooking at home is always a win! ❤️
Thanks for the recipe. I made this tonight and got a thumbs up from my non-vegan family. And I love having enough leftovers to freeze for later and also for lunch tomorrow. :)
I already had minestrone on the menu for this week! But I'm taking some inspiration from this (love the julienned carrots idea, and I've never used lemon juice to finish a minestrone). Thanks, Andrew!
🙌🏾 I love citrus acid often when finishing stews/soups (many dishes actually). Outside of the added benefits of taste, its a great boost of vitamin C, helps with iron absorption, appetite control, etc. ❤️
Marmite is a game changer in vegan cooking and makes it taste more flavorful. I love it and that reminds me to get some next month, I don't have much left. Mushrooms, spices, yeast, lemon/lime, vinegar/wine, soy sauce, are just great to give the right flavor. My grandma taught me to use a little sugar when you make something hearty and salt when making something sweet. It just balance the flavors much better. Greetings from Germany 🌶️ an old girl and new follower. Love how you explain how cooking works 💚
Ahhh! So fulfilling to watch . I love a great soup and has made an amazing soup myself. I have to try this recipe too, i cant wait. Thanks for sharing.:)
I used to drive a truck for a commisary that made most foods for Olive Garden Canada. All Soups were made in a central kitchen and then shipped to the restaurants. I specifically remember the soup because it was a real issue shipping without spilling. Air tight out of a remote kitchen is tough, more so 25 years ago. All Olive Gardens up here are long gone. But you are correct, most restaurant made soups are way too salty...Going to try this recipe later this week . I think your videos and recipes are awesome.
Thank you for all your great recipes...I am now more plant based and have not had red meat, dairy or artificial sugars in almost 3 months and I feel great. Wish I had of switched along time ago.
Love watching your vids. Even if I never make the recipe! So relaxing and love that u have jazz in the background. It's our fav kind of music. I will try this soup recipe , though , cause it looks easy and in our house, we're lazy cooks!!
Great recipe Nard Dog! I made this and it was more delicious the second day than the first. I did not make enough. I’ll definitely be making this again.
I made this soup for my 5 person family and it was a hit with all except my 15 year old son. He doesn't like beans or tomatoes. I didn't even ask hom to try it.😂 But everyone else loved it.❤
🙌🏾 love that! 😂 I know when I was a teenager I had my mind made up about EVERYTHING! then I got past those years and realize I had no idea eventing I was missing. thanks for trying it out!! ❤️
I love your recipes! You have helped me to start going more plant based - thank you! Having chronic kidney disease, I need to limit tomatoes because of the potassium. How can I adapt this recipe[e using less tomato?
Andrew, two questions: 1. I can’t eat tomatos. What is a good substitute for them, if any? Love ‘em, but my stomach lining does not. 2. Can I add nutritional yeast instead of brewer’s yeast to the recipe? All of your dishes look healthy and delicious 😋 Thank you 🙏 for doing what you’re doing. Helps me a lot!
Hey! 1. You can substitute the tomatoes for roasted red peppers. The texture is really similar all the taste is very different. This recipe also has tomato paste. You could blend the roasted red peppers for a similar effect. There's not really a perfect substitute for tomatoes or tomato paste if you're allergic or your body doesn't agree with them but this is kind of the closest you will get. 2. The brewers yeast is an optional add in. If you like you can leave it out. Nutritional yeast would bring more of a cheesy flavor. Which may not be a bad idea if you want to avoid adding any store-bought plant-based Parm. But eating the soup without the yeast addition is really good. thank yo so much, for trying them out! ❤️
Yes I will! I try to make things based on demand, popularity, etc. of the ingredients and keep it more budget conscious. ill add silken tofu to the list and test options to create in the future. 🙏🏾
Minestrone is a great dish to make even non-vegetarian guests happy. You need less salt when the ingredients are fresh and of high quality. Therefore I would prefer "Your-a-Strone"😋
of course! I use aloe vera (I have plants), for my skin. rub it on under all the hair. Shea butter on my hair along with coconut oil. I wash my beard about 2 - 3 times a week. no special shampoo/conditioner. But maybe focusing on ones for my hair type (thats vegan and has basic ingredients) when shopping for something.
Olive Garden's minestrone is vegan, but if you are vegan rather than vegetarian and/or allergic to dairy, you should ask at restaurants because many places may put a parmesan rinds in for the umami and faint fermented flavor/aroma
One thing I would recommend: don't put the zucchini in with the other vegetables. Instead fry it in a pan until it has a very good colour and put it in the soup right before serving. That way, it has more flavour and a better texture. (In my opinion, so that's what I usually do.)
Yes. They do add wine. Its a red wine. No yeast. 💜📨 Oh.... SUMAC!! Have you cooked with sumac? 💜 A great salt replacement when you want the dalt taste without the actual salt! 💜
thats been a tough one to work on. but I be coming back to it here and there to test. seems it gets a lot of flavor from various protein add ins. im still working to figure it out!
really!? thats amazing! for sure! the pasta is gonna be you're indicator of when its all done. 1 - 2 hours on high and 3 - 4 hours on low. check the pasta starting about 1 hour in for the high temp and 3 hours in on low. 🙏🏾
Just made this and added some extra red pepper and Cajun seasoning for a kick. Wow!!! This is one of the best soups I’ve ever made. Amazing recipe. With some parmesan (it wasn’t vegan cheese sorry) on top, it was a great touch. I also added the lemon and that was great too. Just a wonderful recipe thanks for the video! (I also used chickpea pasta and that’s really good too)
