Recipes look great, whenever I see coconut milk in a recipe I just use unsweetened soy milk. You can add a tiny bit of coconut extract to the milk if and when you need a coconut flavor.
Update. It’s amazing! Restaurant quality ! Adding this to my rotation of meals ! Only thing I did was use Better Than Boullion non-beef paste to make broth how directions say.
I made this soup yesterday and WOW! ... it is so delicious. The only problem I have with it is that I wanted to continue eating until it was GONE. But I restrained myself and only had one serving. Now its the next day and I'm counting the hours until dinner when I can have another bowl. OMG, those soft pillowy lasagna noodles are luscious! Thank you so much for this recipe ... it will be on constant rotation in my house. PS. This was the first recipe I made in my brand new Instant Pot!
If you add kale to the lasagna soup, I suggest adding it sooner as kale is tough & takes time to get tender. Spinach cooks quickly & so is okay to add after soup is done.
I have made the white creamy soup which is delicious, but just tried the lasagna soup and loved it!!! Love the lentils and coconut milk together so tasty!!😊

One thought on the lasagna soup - any thoughts on swapping out all (or some) of the 9300mgs of added salt with either table tasty or No-salt for the S.O.S. plant based peeps?
NutriBullet blenders 600 or 900 watt work great as an alternative to expensive high speed blenders. I have a Vitamix as well, but rely heavily on my NutriBullet for travel and every day smoothies, creamy sauces, mousses, etc.
I just finished the last of the first soup with the wild rice you made. It was delicious. I'll definitely make again. I pretty much ate it by myself but did freeze some. Hubby had a bowl before he left for travel and my son said it was okay but he's insane LOL Thank you for the recipe. Looking forward to trying the others.

@@plantwhys Thanks so much!! It's cold here in North Carolina lately, this will be a perfect time to try this. and a while ago I discovered a type of pasta that would work great for this, and save having to break up a lot of noodles, it's called "mafalda" pasta. Like very thin lasagna noodles.
It's lasagne, not lasagna. If it were lasagna soup, there would only be a single lasagna noodle in the soup. If there are more, it's plural and it's then lasagne.

I make it with 1 teaspoon of salt, not a tablespoon. Love it that way!

We have it in Australia. I'd not heard of it in Aus, but it is in one of the 2 biggest supermarkets! Have you googled for it in UK.
