Before he behaved more like the type of customer that just likes to watch stuf without buying, instead of someone that has something bad on his mind. Its a subtle change, but it makes sense that the shopkeeper behaves differently.
A few things confuse people in the anime adaptation. Subaru didn't go through the same ally to meet the gang, he had problem with finding his way around the city and they tailed him waiting for a moment he enters a deserted spot. Also the idea of respawning came to his head around the second time, but he found the very thought ridiculous. He thought it was more probable that someone healed him and other people, or resurrected them, anything else would make more sense than dying and coming back to life on the same spot.
I don't know if someone said this yet, but Edge of Tomorrow was actually based on a series of Japanese Light Novels named Ōru Yū Nīdo Izu Kiru, it also has a Mangá (which I've read and is pretty good btw).
Give the MC sore credit, in the light novel it’s described that there’s no lag between his death and him resetting and we know through psychology that the brain will try to explain anything that will disorient it
