I like the approach you use in making Melomakarona! One cool thing you can do with them is if you have a whole bunch left over you can put them through a food processor and use the crumbs as a crust for cheesecake :)

As for the honey, I totally never knew that!! Vegans come to our café and buy these all the time and never told me that.. I believe it. I'm just so surprised that I missed that.. 1st. Honey is not from Animals.. they are insects. They are not killed to use their product. I have been vegan and total rad vegans won't use honey because it is food for the bees. And they don't want to take their food source. Chillax hun...

They’re supposed to last for a month at room temperature in an airtight container since they’re dairy free. However, in this home, it’s a miracle if they last a whole week 🤣

This gives the option to not have cinnamon if you dont like it, but also to not ruin the entire tray in case you put too much. Plus, cooking the cloves might overpower the honey since the honey comes later and when cooked inside the cloves create a steam effect.
That’s a lot of extra steps you could just pinch off little pieces of those and put it on a cookie sheet and they will melt down into circles and why are you adding boiling sugar water a.k.a. simple syrup to Honey which is like natural better simple syrup...?I would just put honey right on top of the hot cookies when they came out
Φοίνικας in Greek means both phoenix and palm tree. The cookies are also called φοινίκια because after they shape the cookies they pat them against a grater or a strainer spoon to give them the look of palm tree bark. If you look at photos of melomakarona you'll see what I'm talking about.
I can appreciate you are looking to save time especially because you make tons at the bakery but please encourage people to shape them the traditional way. That is part of the process and history of Greek cuisine.
I think they look lovely cut out like that & definitely are far more arthritis-hands friendly than shaping each cookie. Don't get me wrong, the traditional shape is beautiful too but these are a neat version!
@@creepyspookyicky indeed they are and I don't begrudge anyone to do the shape they wish especially if they are arthritic. I know Dimitra said they used cut outs at the bakery when they were eeking out hundreds but at home it's not anything to do the traditional shape.
Haha! I feel like that about nutmeg. Sure, you can leave it out and use some cardamom (ground) instead. Cardamom with rose is a great combo! Leave them vanilla flavored or maybe vanilla/almond. The best part of cooking is to make it to suit your taste 😊 Greek desserts are usually infused with cinnamon in one way or another..

Made them and they came out like mush. I don’t understand why, cause I’ve made them with your recipe other years and they were fine! So disappointed!

Yes, that's correct and I didn't know that until I made this video. You can substitute the honey for an equal amount of sugar.
