Bravo Akis! Your recipe is the best one online that I've come across. Great instruction too! The semolina is key. I also like to add a little Cognac to the dough, but unlike you (and so many others on TH-cam)--I just toss everything into my Kitchenaid and the dough comes out perfect ever time. Even if it's not perfect (sometimes a little on the dry side), it really doesn't matter b/c they get dipped in the honey/orange/lemon rind/cinnamon stick syrup... Just made them for my Serbian family and everyone loves them. Kali orexi to all!

I did this as well, but half of the quantity. Also, I reduced the amount of sugar, as it was a bit too much. Also, I added a twist to the recipe: ground ginger. I know it's not Christmas in May but with this recipe and the lockdown it's just like in December. Goes well with mulled wine. Thanks Akis for the recipe! I love Greek cooking!
My Yaiyai use to make everything from scratch or fresh, this recipe was one of them as a kid she had a whole tub of them and i would eat a ton straight away haha, they are just too good.

Just made them with success. Thanks for sharing. A small comment. When the first set of, say 20 of them, comes out of the oven, dipping the first couple of them in the syrup goes according to plan. However after 4 or 5 have gone into the liquid, the syrup is not anymore cool. Yet you can't wait for it to cool down again as the cookies have to be soaked while warm. So an alternative would be to either separate the liquid in parts or better shower them from the top... (?)
Put the syrup in the fridge. In this way, it becomes cool faster and you won't have to wait for 4 hours. The syrup will be cold by the time you prepare and bake the cookies. Plus, in this way, no matter how many hot cookies you dip inside the syrup, its temperature won't rise up too much. :)
There is an alternative to this. Me and my mom have done it this way for years and thought Akis was crazy for doing it the other way around. We let the cookies cool down, and dunk them into the warm syrup. We find this way works better because the cookies have a less chance of crumbling, and the warm sryup seeps it's way into the cookies. The cookies absorb it weither they are cold or warm. Just remeber: Cold syrup, warm cookies. Warm syrup, cold cookies. That's the only two ways it will work. So, if your cold sryup ever gets warm, try it out! Let the cookies get cool, then warm up the sryup on the stove top. Although they might take 2 hours to cool down. So yea fridge is best bet if you already went the cold sryup route.

I remember when my friend Maria's Mom would bake Koulourakia and Kourambiedes - they were the best!! I am definitely trying these babies - they look delicious.. Thanks for sharing!! :D

Glalaktouburiko (the Greek custard dessert) is the most difficult dessert to make. If you can make that, cookies will be easy peasy.

They last at least two weeks outside the fridge, covered. Theres no dairy or eggs in them for spoilage. But they wont last that long.
