ISFAHAN, IRAN
1. PEDARKHAN: Ab Goosht + Beryan
SOCIAL MEDIA: @pedarkhan_esf
AB GOOSHT (veal/lamb stew): Broth: Cut the windpipe of the lamb. Cut veal leg and lamb leg. Put in a pressure cooker with the sheep fat, sheep bone and two onions. Boil for 30 minutes. Put fresh water in the pot. Add lungs to pressure cooker. Cook for 2 hours. Grind veal and lamb and season with ginger powder, salt and chopped mint. Dish: In a bowl, add pieces of torn sangak bread. Pour in broth and allow the bread to soak. Pour out broth and drizzle the fat on top. Add kashk (sour yogurt) and drizzle more fat on top. Add chopped mint, cinnamon, a slice of tomato, pickled cauliflower and minced lung meat into the bowl. Top with sesame seeds, saffron (sauce/water) and almonds
BERYAN (bread with minced meats): On a grill, mix minced veal and lamb with chopped mint and saffron. In a giant spoon/mini skillet, add cinnamon and sesame seeds. Scoop the mixed veal and lamb and put it into the giant spoons/mini skillets and cook over fire. While this is cooking, take a piece of sangak and drizzle fat on it. Put a scoop of lung meat on the bread. Add green pepper, half a boiled tomato and yellow pickled cauliflower. Add the cooked veal/lamb on top of the bread. Top all of this with almond, mint and saffron sauce. Fold the bread in half and enjoy.

2. KEBAB RESTAURANT: Variety of Kebabs
KEBABS: Cut the meat into cubes and place on a skewer. Grill sheep heart, liver and kidney kebab. Wrap the kebabs in bread and remove the skewers. Eat with this bread, yogurt and basil.

3. DALMAN (GAZ FACTORY): Gaz (candy)
SOCIAL MEDIA: @gazdalman
GAZ: Mix water, sugar and glucose and cook for 2 hours. Add some rose water, honey and herbal manna (desert plant sap). After cooking for 2.5 hours, add egg white. After cooking for 3 hours, add pistachios and almonds. Remove from heat and place it on flour so it doesn’t stick. Put in trays to cool down. Cut smaller and package.

This series on Iran has been (I'm embarrassed to say) so eye opening. The spin the media puts on this country is so undeserved. The culture is beautiful and the food amazing!! I would love to see and experience this for myself

Honestly this is very accurate. Tbh there is way more to do and you can get from the best beaches , weather, food and much more. If you are travelling I will definitely go to Shiraz, Tehran, esfahan and Kish (an island in south). You can can the best food and spices there and yes the people are extremely friendly. I’d love to visit Iran. The people seem awesome and their culture is beautiful. It makes me really sad that our government and media portray us as mortal enemies. Iran is clearly a beautiful and advanced country. Also most Americans judge Iran without even considering the history. They totally ignore the fact that we installed a BRUTAL dictator solely in the hopes of stealing their oil. Our government denounced them while being friends with Saudi Arabia, a much more brutal country in terms of human rights abuses. It makes no sense. I hope one day we’ll be friends with Iran. I lived in Isfahan 84-92. That beriyani is not to be misstaken for the Indian or kurdish beriyani. The Isfahan beriyan is a totaly different food and it tastes AMAZING. It will be the first thing I'll eat if I ever go back.

Its like their beauty is almost manufactured in some way. I truly think Sonny's co-host's eyes are prettier than Mrs.Rai's but its not a competition. To me personally the down to earth, natural beauty, and beauty that has been manufactured and sold like a commodity are barely comparable. They're both beautiful women though. There's beautiful women everywhere. To be honest, in my opinion, the beautiful women far out weight the not so attractive ones. Especially physically. If you got a bad attitude, or are selfish.. Tried "Doogh" at a middle Eastern restaurant in North America. VERY salty, yogurt drink with no added herbs or flavors (plain). It was a bit much at first as the flavor was very bitter and salty. Absolutely delicious and refreshing though after a few sips. I love yogurt and this was very concentrated. Next time I buy it, I am going to try it mixed with fresh fruit. Don't give up on it after the first couple of sips; it gets much better and recommend drinking it very cold.
Doogh is ayran in Turkey, cold water very little salt and yogurt sometimes you add dried mint.

But I did read mean comments about Arabs sometimes that breaks my heart. However, I can say this is not what majority of people think/say. Iranian hospitality could be a strong barrier for being mean to anyone. I don't know how to say, kinda like "it's all barks but no bite". Hope I made sense

Although our culture & language are different but we do share a lot. Its hard to explain. Iranian, Afgani, Turkish dishes are quite famous in India. The buttermilk or yogurt is also exactly the same in our country as well and is prepared the same way, its called chass in India. Infact some of our deserts, dishes are direct adaptations of Iranian Dishes.
