For example, I see that rice is continuously used in Iran, we in Italy have many different varieties of rice that have specific use for each dish. For example, we have pasta of all types and shapes filled and unfilled. Each city has its own pasta suitable for each different sauce. For the first courses we have rice, pasta, polenta, gnocchi with all kinds of condiments because Italy goes from the depth of the Mediterranean and almost African and Middle Eastern products to the alpine ones ... We have no food taboos and we also use the pork that has a thousand different uses and products. We use alcohol that is integrated into food and sweets in a thousand different ways. We have traditions that originate from the Italic peoples prior to the Romans. Specific ancient grains that I grow only in some areas. We have a higher and more sophisticated use of fish. We use ancient and modern cooking techniques (modern because we invented them!) To make sweets and breads of all kinds. We have a thousand types of cheeses, a thousand different types of wine. We have a much more varied use of spices, in Iran saffron, cinnamon and turmeric are used everywhere. So yes, I believe that cooking in Iran is a great kitchen and has a great tradition but I don't think there is a better and more varied and healthier cuisine than the Italian one. What I love about Iranian food is the fact that you have all the spectrum of taste. You can have rich flavorful combination of ingredients like in Ghormeh Sabzi or the simplicity of original taste like in kaleh Pacheh or just barg. Good delicious food does not have to be expensive or complicated.

yeh the same here in morocco, a dish based on sheep's head, first the head is grilled on charcoal to remove hair and precook it then finished on water vapor. a simple recipe just salt and cumin.

What I love about Iranian food is the fact that you have all the spectrum of taste. You can have rich flavorful combination of ingredients like in Ghormeh Sabzi or the simplicity of original taste like in kaleh Pacheh or just barg. Good delicious food does not have to be expensive or complicated.
