    I loved your sons inquiring about avocado oil, it looked like he was trying to find the avocado itself in the pan.😊 He may be a budding cook as well.

      I can't remember which kid is in this video, but if it was Kavik, he is big on helping, he likes to get his hands in there and likes to help with dough and stuff like that! :). He may be my best kitchen helper as he gets older, not many of the others really show much interest in it, they all know how to do the basics, can all cook like bacon and eggs, or reheat food etc. But in general aren't huge on sticking in the kitchen with me.

      These are an Australian manufactured one, Fowlers Vacola, they're a really heavy jar and probably most closely resemble Weck! :D. They are generally quite easy to come by second hand here, though the uptick of preserving has meant they aren't quite as cheap!

    Amazing. Pork looks so wonderful. I’m glad to see you using the Vacola jars. I was hoping they could be used in a pressure canner. My pressure canner should be arriving in the week or so. Great work, thank you for your videos.

      I believe Fowlers states that they aren't meant for pressure canning, but I wasn't aware of that when I started using them and I've never had an issue with it and don't really understand why that is the case! :)

    I am so excited about this channel. I have been wanting to learn to smoke meat. The food looked so incredible. That rub looked awesome. Are you a self taught cook? Looks like you been doing this for a long time.
    I love your outdoor kitchen, all your equipment is awesome. Try some peppermint essential oil on some cotton balls when you are working in the kitchen. Ants, flies mice are repelled by it. I think the smell of it would be comparable to us smelling gasoline. You could make an air spray to spray about. It is worth a shot. I know it is hard to keep flies away.

      When I was young my grandmother lived with us and she taught me a lot of the basics, I'm mostly self taught but I have that good foundation from when I was a child!
      I will have to try the peppermint! I did have some that I was using for ants, but will give it a go for the flies too!

      @@marcellahicks3984 Sonnet (8), Apollo (10) and Kavik (6) are the most inclined to help out, but being the age they are, they prefer to help out on stuff they like to eat lol. It is hard though, with so much to get done each day, sometimes getting them to help takes much longer to get things done, I try and give them the opportunity of knowledge, but I don't force it :)

    Hi, new here! You popped up on my feed and I found your content really interesting, so I’m watching some of your back catalogue. Really enjoy watching your canning/ preserving processes. To know that it’s not just in America that this can be done. But boy, a pressure canner is very expensive. I bought a water bath canner last year, but haven’t bitten the bullet yet

      Welcome! I was really lucky and got one of my big ones second hand, doesn't happen often! Ozfarmer sells the Presto and I think that's still the most economical. You'll love it when you end up doing it, it opens up so many more options! :D

      Walmart has a 16 qt canner for about 100.00 it would be a good starter canner. I have a 16 qt and 23qt. I'm saving to get a All American canner. They are pricey.

    Potatoes under the crackling! Brilliant! My mouth is watering now , haha. Technically all our fat is dirty too, I never render any more as there's never enough for the trouble, we don't raise our own pigs or beef at the moment. I save all the little bits of fat from anything in little jats in the fridge and we use it all pretty quickly. Ive got chicken that I need to pressure can but today I'm dehydrating zuchini, making cherry and blueberry jam and harvesting peaches to freeze until there's enough for pie filling. I'm pretty much doing the every bit counts and the pantry challenge simultaneously out of necessity, my kitchen is trashed daily but we're eating well and putting up food too. Tonight I'll have to finish the big clean up I started yesterday. I'm trying to make more pickled veg and a zuchini bread or two tomorrow. Thank you for taking us along on your delicious food journey on a tight budget. You make something simple into amazing, delicious food. 💚

      I have a bunch of zucchini that needs processing too! it's about the only thing I'm getting significant harvests from so far this summer, I have to remind myself each year that my garden really picks up post New Years when the nights warm up too!
      I can't wait until my fruit trees are established, it is going to make such a big difference to our food purchases!

      @@OurSmallFootprint we have one peach that was here but it was such bad shape that what we did get off it last year , went to the chooks. Weve since done heaps to it, a huge prune ,heaps of poo and compost then added trace elements and seaweed . It now get regular water and its the best its ever looked. The peaches are freestone and good texture , netting is keeping the birds off and somehow bugs haven't discovered it...yet. Its downside is it has hardly any flavour and they're pale. Not great eating fresh so I'm doing pie filling in FV then I'll freeze for pies and crumble too. I'm sure glad to have it anyway. One zuchini filled our dehydrator! Haha

      @@countrymousesfarmhouse497 We have a lemon, lime, orange, mandarin, finger lime, peach (I think Anzac) and I think 8 apple trees, but most are in only their second year and their first year we really struggled to get them going, we now have our grey water irrigation going to them, so they're getting plenty of water.
      We planted a row of raspberry canes too, but they seem to have failed, and we just put a few grape vines in, but they also don't seem to like me much. I really want to add to the fruits, I'd like some kiwi berry's, maybe a couple more grape vines and to replace the raspberry's! but its all money lol
      I'd love to be able to use our dehydrator more, but realistically the power draw is just too high for the small amount of product. I was going to try doing some zucchini chips in the oven, but because our oven doesn't have a thermostat, I'm not sure I'd be able to keep the temp low enough for them! Shredded and frozen for zucchini bread will just have to do! lol, though I do want to try canning mock pineapple with them! but pineapple juice is quite expensive :s

      My Mother in law taught me to skin and slice peaches and place crushed Vitamin C on them so they don't brown. I put in quart size freezer bags and freeze. They are natural and taste awesome. That smoked pork would be good with a peach and tomato salsa or apple Kiwi salsa.

    Hey, just watched this video. I'm in Perth, WA. I have both fowlers and mason type jars and I have the water bather and pressure canner. I saw in a previous comment that you didn't know that the fowlers couldn't be pressure Canned, I'm interested to know your feedback on this, your experiences and if your since stopped using them in the canner? Only because I really wanted to put my fowlers in the pressure canner, I wanted to do butter and meats in them, but I see others do not. Thanks heaps.. great job. 👍

      From all the feedback on other people using them I’m super comfortable using them for pressure canning, they are a high quality glass, much thicker than a lot of other brands!

      It’s not something we’ve eaten a lot of, never been much part of my diet as a child so didn’t carry through. I have been looking at trying to incorporate them more but it’s a bit of an unknown for me. I do can baked beans, the kids enjoy those but I rarely use beans in any other way. Chickpeas for hummus.. I need to bite the bullet and just try and incorporate them

      @@OurSmallFootprint I had a herd of children and found beans to be an inexpensive belly filler! A great source of protein. I am making my husband his favorite dinner tonight... Beans soup. We also add garbanzos to veggie salads in the summer... Or in pasta salad. They mingle well!

      Ball mason states 18 months in their jars for canned goods, so long as the seal is good before quality and nutrition deteriorates, I treat Fowlers the same way. However, we use it indefinitely, so long as the seals are good, there's no smell/mould/etc. Then the jars are good to use forever in our house :)

    Are you able to reuse lids on Fowler jars since the gaskets are separate? I’ve never seen Fowler jars in the US.

      They're an Australian made brand of jars, so I don't imagine they're easily found elsewhere. Yes, the lids that I have are all stainless steel, so you make sure not to bend them as you remove them and you reuse them :). You can buy single use ones, that are a sealed tin type lid, but the cover comes away, so they aren't supposed to be multi use. The Stainless steel are fairly easy to come by second hand at 50c-$1 a lid :). The gaskets/rings are like the single use ball lids, you CAN reuse them, but there's risks to doing so :)
