    Progression after Nito:
Check your ring lore to progress in the New Londo Ruins.
Practice your parkour more on the right side of the elevator in Firelink Shrine.
    Fully explore Lower Blighttown.
After that, revisit the location of your glorious victory over Ceaseless Discharge(a feat I have never seen accomplished until you) and face to demon horde.

I could be remembering wrong but I think there is a silly trick to avoid the ground sword move. If you two-hand wield your zweihander, stand still, and hold block I think the sword will not hit you. That move looks like a big sword coming up from the ground but it's actually just a hitbox on the ground. The blocking stance you get while two-handing makes your character stand with their feet so far apart that you can avoid standing in the sword hitbox when it appears underneath you. You can also just roll like you were saying. He does an animation where he stabs his sword into the ground you can use to time it.
The problem is all the skeletons though right? If you avoid the back of the room the large ones won't engage you. Also, some of Nito's moves actually damage them so you can take advantage of that. There is one strategy that is even more effective though. If you want the main trick to beating this boss easily keep reading. Otherwise good luck with your future attempts!
The biggest hack to beating Nito easily is having a weapon built for the fight. You need a divine weapon with as many upgrades as possible. A divine weapon stops the skeletons from reviving if it lands the killing blow. To create a divine weapon you need to bring Andre the divine ember and some green titanite. You may have done this already I forget. If you want to fully upgrade a divine weapon you need white titanite chunks, the large divine ember, and a white titanite slab. All of those things are in the Tomb of the Giants. If you build a strong enough divine weapon to kill the skeletons then you can fight Nito alone which should be fairly easy for someone with your skills and 20 flasks. It's not needed though so it may not be worth the time and effort to build.

Yo Chris coming in the info of a lifetime, I really do appreciate it. I didn’t read the last part cause I wanna figure it out myself, still though thanks. I knew I just rolled at the right time I could avoid that attack. I didn’t think about staying in the area where I fall in to avoid the big boys, thanks 🙏🏿🤝🏿

Dude come on, most all those attacks are so telegraphed. Skill issue.
