  • Scroll down for ingredients Assam Prawns (Tamarind Prawns) is a delicious Nyonya dish that is easy to make. You will only need tamarind, soy sauce, sugar & salt. Just simple ingredients, yet the result is a mouth-watering complexity of flavours. Keep the shells on the prawns when you cook them so that they get coated by the caramelised sweet, tangy and savoury assam sauce. It is truly a finger licking experience when you peel the shells off at the dinner table! Assam Prawns is a great side dish for Nasi Lemak, and is equally good with simple white rice. Enjoy! 🦐🦐🦐
    Ingredients:
    14 Large Prawns (Anne prefers the flavour of Sea Prawns)
    Marinate prawns in:
    1 tbsp Light Soy Sauce
    1 tbsp Black Soy Sauce
    3 tbsp Tamarind (dilute in 1 tbsp water to make a thick paste)
    2 tbsp Sugar
    1/2 tsp Salt
    Assam Sauce:
    4 Dried Chilli (Cut into 1/2 inch pieces)
    1/2 tsp Black Soy Sauce
    2 tbsp Tamarind (dilute in 2 tbsp water)
    Sugar (we used 2 tsp, but you will need to adjust based on the sourness of your tamarind paste)
    Salt to taste
    Important Note:
    Tamarind of different quality will have a varying level of sourness, so adjust accordingly.

    This dish is absolutely delicious and so easy to cook. Perfect for dinner with friends. Love the sweet and sour taste with a pinch of spice: My next go will be her steam fish and bee hoon!

    Black soy sauce is sweet or salty kind?

    • @AnneSoosayCooks
      @AnneSoosayCooks  2 ปีที่แล้ว

      Hi there. It is neither sweet nor salty. This is the Black Soy Sauce which is a Chinese cooking caramel. A popular brand is Cheong Chan (Elephant). See this link:
      www.google.com.sg/amp/s/my.seetracker.com/product/267543970/3841133849%3famp=1
      It is an essential ingredient for this dish. It gives the prawns a lovely dark colour. Not really used for flavour though. Hope you find it. Happy cooking!

      @@AnneSoosayCooks looks like dark soya sauce.

    • @AnneSoosayCooks
      @AnneSoosayCooks  2 ปีที่แล้ว

      @@22Harponyo It’s the Malaysian type of dark soy sauce. It has many names… black soy sauce, dark soy sauce, thick soy sauce and cooking caramel. Just don’t get the Singapore type of dark soy sauce which is more watery than the Malaysian one, and salty.
      This is the wrong one:
