My experience with venison is limited because my grandparents usually shot elk. It tastes more like beef. They went hunting in Utah yearly, come hell or high water. It was very rare for neither one of them to get a buck. They had a guy there who trimmed it out & packaged it, in exchange for a cut of the meat. They were both still hunting on into their 70's.
