I like to use my ground deer meat to make my own breakfast sausage. I do grind the meat myself and usually add a pork butt for the extra fat. It's fun, healthy, and yummy!

I've been eating ground venison for 35 years. Being a very lean meat you have to ad some sort of fat. I use olive oil or sometimes some bacon grease. When making meat balls I'll ad a little bit of ground pork or Italian sausage. I use ground venison for tacos, enchiladas, chili, meatballs, meatloaf and any other recipe that calls for hamburger. Also have seasoned it to make breakfast sausage patties and chorizo for tacos. Venison is the healthiest red meat you can eat. It has virtually no cholesterol. Good luck and love your videos.

Hi Corey, I have used ground deer a lot in a varity of recipes. I like to put some instant beef boullion in with it when cooking, it adds a lot of flavor to the meat. I have used it in chili, spaghetti, goulash and a lot of other recipes that you usually use ground beef. I really enjoy all your videos and watch every one of them. I also enjoy your mom's videos and watch all of them. Thanks for all the interesting videos. Have a great day.

If I have ground venison that tastes a bit gamey, I will cook it in water first. Just put a cup or two of water in a skillet, add your ground venison, break it up as it cooks. When almost all of the pink is gone, I'll drain and rinse the meat in a colander. Wipe out the skillet, add a small amount of oil, then add the drained and rinsed venison back to the skillet, saute with your vegetables and seasonings. This helps reduce the wild taste. Thanks for the tip about the butter! Hadn't thought to do that, but will definitely be trying it.

John, the whole reason I ground deer meat was to make chili !! Don't feel bad, haven't killed me a deer in 10 years. That's when I stopped bow hunting. This past season I was unable to go for gun season. Thanks for the reminder of that delicious Deere chili and liver /onions!!!

Bless you and thank you for sharing. MIss Corie, my wife always chops up a batch of "pico de gallo" (tomatoes, onions, jalapenos, cilantro, lime juice - many recipes online) to top her tacos. It's also good with tortilla chips, instead of salsa. Yummy

I was never a fan of deer meat, but, I have learned my own way to season my ground beef for tacos. Trisha Yearwood showed how on her cooking how on the Food Network and, I tweaked it to my liking and, cumin, white pepper, onion powder, garlic powder cayenne pepper and, paprika, onions and, Worcestershire Sauce and chicken broth.

Hi Corey, we process our own venison and add bacon ends and pieces when we grind our meat. It gives it just enough fat and flavor. We use our ground venison for any recipe you would use beef burger for including, meatloaf, spaghetti, hamburgers, taco meat etc. I’ve also found an awesome recipe called Venison Tortellini Bake with cheese tortellini and mozzarella cheese. Anyway so glad to see the younger generation eating venison.

I'm so happy to have stumbled across your channel.
Deer burger is so good! We usually get two deer a season and grind one strictly for burger (besides keeping the tenderloins) & the other deer for stew meat or roasts.
We usually just use the burger as a replacement for beef like is chili's, tacos, lasagne and even meatloaf.
I've never tried to can deer meat but I know lots of people who do it.
Maybe next year I'll give canning a try.
Thank you for sharing your recipe 🙂
    Blessings from Down East Maine

Going to try your recipe. My son likes deer burgers. The wife uses ground venison for chili, goulash, and mixes it with beef to make meatloaf and casseroles. My favorite is chili from deer, placed on a flour tortilla with a layer of cheese and heated in the microwave. It'll also work with the proper seasoning in a dehydrator for slim jims and jerkey.

We eat a lot of deer meat, canned, cubed tenderloin and ground. We love, spaghetti, lasagna, manwich and loose meat burgers. To make loose meat burgers I brown the ground deer meat, drain and slightly rinse the meat, return to skillet add grated cheese to top, cover skillet with a lid and melt the cheese. Spoon onto hamburger bun or bread and add catsup, mustard etc etc etc to your liking.

I would grind it in while I’m grinding the venison but now I do as you did and add olive oil. I cook ground venison all the time in tacos, chili, soup, spaghetti and other things but I’ve never thought about adding butter while cooking. Thanks for the advice, I’m definitely doing it next time. God bless you.

Corie, deer meat can be so good. I make spaghetti sauce, taco meat, meat loaf, soups and Chilli. Garlic and pepper helps with wild taste. My Honey and dad always harvest a doe not wet dog taste and smell. Buck meat large ones are so strong wild flavors, seasonings always helps. I just found a meat pie recipe using puff pastry dough. My next recipe to try, easy lunch and on the go for our working men.

Amen on the deer processing. I my opinion the sooner you can get the deer skinned and quartered and in the refrigerator the better it will be. I usually grind the meat 3 days later and vac seal it. We grind everything but the back straps and neck. Good video Aunt Corie.

What we like to do with ground meet is add rice to a mixture, very similar to the one you made and let it cook almost thoroughly. Then we take some large peppers, stuff them with the mixture and bake them. This meal is great on its own, but what really makes it all the more tasty is a side of unsweetened yogurt or any kind of white sauce (made from dairy). Happy cooking! 😋

We process our own deer. We have found that the trick to use in order to NOT have a "gamey" taste is to skin the deer right after you've gut it. We only let our's hang for 2 days, max. Have never had a problem with our deer being "gamey". So many people have commented to us that the dishes I fix with our deer meat tastes like it was beef. (We've never added any fat to it either)

Good basics. There are a lot of youngsters that need to learn these basics. Hint...mix in a portion of ground pork with venison (deer,) and elk to make great ground meat dishes such as Mexican or Italian. They compliment each other. The pork delivers fat. No fat...no flavor.

Looks good, and tasty, butter would be a nice add. Must try Deer one day. Lean is best, I hate fatty meat, see low grade beef mince (ground) next day, all the fat on top. You mentioned a coconut alternative to soy, I am not supposed to have Coconut, so I get the gluten free soy. Another spice I use is McCormick "season-all". I see that Mortons have a similar product. A nice lemon pepper is good as well.

In some of my Spanish/ Mexican recipes, my grandmother and father taught us to season the meats twice in the cooking. We predominantly use this system in cooking certain pork dishes. Thank you for sharing your taco meat recipe! It looked delicious! Have a Blessed day! 🌸🌺🌸

I put some cream cheese in last time and they really liked that too. Another thing they love is cheeseburger chowder. It's really just potato soup with ground deer meat and cheese. I use cheddar bc I'm not a particular fan of american, but any cheese will work. I think the original recipe called for american. All that cheese! I promise we eat vegetables too 😂

Corie, this would also make a great pizza...We use pita bread or flat bread or even a flour tortilla, a few spoons of Pizza Quick Sauce (99cents a jar at Food Lion), put the browned meat/w/onions, add any slice bell peppers (I like the flavor of the orange ones), onion slices, or whatever you like on your pizza. about 8-10 min on a cookie sheet in a 400* oven....yum! You can have a salad, too, if you like. Enjoy! Jane from SC ❤🙏

I know that taste he`s talking about. We call it `gamey` as in Game, or your wild animal you hunted. Maybe anything not domesticated like cows chickens pigs etc could have a gamey taste. but 9-10 times i`ve had deer meat stew or chili it was great. Also Bison is really good if you can get that somewhere. Lastly, Colby beef is so good to if you can find it. More pricey but, kinda worth it for the eating pleasure. ;-)

Sounds like a really good idea!
A little tip, sweetheart... When you make something without a recipe that you think is good, WRITE IT DOWN AND HOW YOU DID IT, AND FILE IT AWAY. By your thirties, forties, fifties you will start forgetting - not because of your memory so much as because there is SO MUCH IN THERE (your brain). You never think it when you are young, but it happens. You will be glad you did.

We have a lot of deer meat in my family. I love taco meat in many ways so I definitely will give this a try. I make homemade enchiladas so I bet your recipe will be perfect. Thanks for sharing. Everybody have a good day 🙂

Tasty!! I have a deep freezer full of deer meat! A bunch of ground deer meat. I too am in Kentucky around the lake Cumberland area… we have a local processor in Casy County called Showalters and they add fat to their deer burger it’s so good. I think your recipe would be awesome if you added some diced tomatoes and elbow macaroni then it would be Goulash!!! Wich I too love!!!
