I've never seen anything like this in my life! I live in SoCal & have been to Mexico multiple times. I've eaten & made many tamales, but I've never seen anything like I just witnessed. i don't know where you live or where you got this recipe--maybe these are Tex-Mex or something(?) but they're not Mexican tamales. Raw ground meat? Masa as a dry coating? Cooking them in a sauce? Surreal!
I'm not a 'hater' nor a 'troll.' I clicked on this because I was hoping to hear some of '...The Word' & was immediately drawn to the metal box in front of you. Willing to accept ground meat--not traditional, but okay. Using the extruder to fill the tamales seemed logical, clever. However, when you rolled them in dry masa flour & covered them w/sauce, you invented something totally new!

But for today, we’re going to call them Cajun Mex because the recipe came from a Cajun friend of mine from South Louisiana. I am actually from Central Louisiana. And talk about “surreal”, when you take your first bite of these, you can’t wait until your next bite. Trying to get back started with the channel, had some editing issues that we think we have cleared up (my wife is editor & producer. lol.) We should be producing some “Word” videos soon. Stay tuned!
