- We're so excited to share one of Jemma's PRIZED recipes from the Crumbs & Doilies Book! Specifically the Twicks Bites! Think millionaires shortbread but bitesize - buttery shortbread, topped with a delicious salted caramel, dunked in milk chocolate - they really are as good as they sound!
SHORTBREAD BISCUITS
75g unsalted butter, softened
30g caster sugar
1⁄2 tsp vanilla extract
115g plain flour, plus extra for dusting
1⁄2 tsp sea salt
CHEWY CARAMEL FILLING
90g double cream
1⁄4 tsp vanilla extract
1⁄4 tsp sea salt
90g golden syrup
105g caster sugar
30g unsalted butter, cold and cubed
TOPPING
100g good-quality milk chocolate (at least 33% cocoa solids)

I caught covid in 2020 and as a result I now have frontal lobe brain damage, you and your videos have given me light when I sometimes dip into a dark place.
I never used to bother with baking really, but you have sparked such an enthusiasm in me that I now love it….when I have the energy that is.
Your videos have inspired me SO much and I find you so easy to understand, I’m also now the very proud owner of a KitchenAid Artisan mixer, I LOVE it.
I have made a few birthday cakes now, and even had requests from friends!

It was my daughter’s wedding last Saturday and I made 100 cupcakes , and they turned out fine, with Italy buttercream

SO helpful to have the video as well as the cookbook! Made these a few weeks ago and realized 1) I was impatient with my "forking" 🤣and 2) should have warmed the choc over a Bain marie when it cooled down. Just made the caramel apple cheesecake and would love to see that one, too! Tks as always Jemma and Dane - video helpful AND fun per usual!
Glad it was helpful! The Bain Marie trick will save you A LOT of chocolate and tears (we speak from experience 😂)

One of the best flavor combinations ever! About a hundred years ago, when I was a little girl, my mother and I tried to make a recipe for a rectangular cookie made with shortbread, caramel, and dark chocolate. They were a nightmare to make, though delicious. The shortbread kept breaking, the caramel slid off the shortbread, and the chocolate got everywhere. These look much more civilized. I will definitely make them!
Caramel can be a tricky thing to work with, but once you've got the hang of it, you'll be making all sorts of delicious treats! Including those rectangle ones!

Oh my God, give a pot of strong black coffee and I could sit and eat every one of those cookies. Shortbread cookies are the best. Caramel and chocolate are just the bonus to a great cookie by itself. Thank you for this video.

I lived in Price & Helper, from August, or September 1994 (when my then-partner began his position at CEU), until January 1996 (when I moved back to Ogden), & again (I just couldn't stay away!), from June to December 1996 (when I left Utah, for good, for San Francisco).

I spent 7 years in Utah (Provo, Ogden, & Price, & Helper).
The only parts of Utah that I still _really miss, & visit in my dreams,_ are those beautiful canyons, driving into Helper, (coming from the North).
I spend a lot of time travelling, in my dreams, & _I am always trying to get to back to Price, & Helper, & Carbondale._
*_I so miss Price & Helper!_*
I Love that high desert, & those beautiful canyons, & the smell of wet sagebrush & burning coal, & the lightning-Storms out in the desert, the never-ending sky, the good mountain air (I feel best at high altitudes!), & the damn good people of Carbon County .
(And, the proximity to Moab!

Last time I visited was 2007, & I was shocked at how much more developed Price was, & how many more people were there. 💔
Also, I was surprised to see an *_ART FESTIVAL_* in _"downtown"_ *Helper!!!*

And, community gatherings!
But...
... it made me worry that Helper was falling victim to that scourge of rural places--gentrification.
I hope & pray that Price & Helper have NOT become gentrified!)
It was also during that _terrible, horrible, heartbreaking, _*_& absolutely devastating_*_ mine disaster. 💔_
My friend, with whom I was staying, is married to a coal-miner foreman.
First time I saw that big tough, elk-hunting, outdoorsman cry.💔
*Who could help **_BUT_** cry???*
What a *terrible, terrible, vicious, brutal, awful, hideous, **_heart-crushing, devastating tragedy. 💔_*
For the miners & their families, & _for the whole community._

@@redwoodrebelgirl3010 I grew up in Helper, after I got married, I moved to Price and bought a 1912 craftsman home. We slowly restored it to its old beauty. I am retired now but have lived in Carbon County all my life. The Spanish Fork and Price Canyons are beautiful. The Helper Arts Festival is a fun thing to go to. We go every year. Also in spring summer and fall Helper has a First Friday celebration. The downtown is blocked off to traffic and people gather and visit. The Artists open up their art studios, the Harley Museum is open and there is lots of food sold in town. Something or another is always celebrated on the First Friday. Lots of fun.

I’ve just moved to Chicago from the UK and a mixture of cheese and caramel popcorn is a favourite here! Tried it last week… weirdly addictive!

I made this but the caramel was super hard, delicious but i couldn’t bite into it, i was very careful with the temperature and even adjusted it 10C less beacuse i live 2600m above sea level 😢 i’ll give it another try with a lower temperature

Do you have any recipes or advice for dairy, soy and nut free icing and/or dairy, soy, nut and wheat free cakes or cupcakes?
Eggs are fine.
I can not find any stores that stock such a thing.
I have found some cupcake recipes, although need some advice on the icing; particularly which dairy free butters are best for icing.
Also (if not being too cheeky) do you have any icing tips for beginners who will be using a dairy and soy free butter?

I feel for you. Golden syrup is one of the most delicious delightful sweet products you can get. In the UK you can get golden syrup cake, which I drizzle additional syrup on the top to eat. Consider ordering online? It is an amazing product.

In the book, the instructions say to make the well in the shortbread after it’s been in the oven, whereas in the video Jemma does it before they go in the oven. Does it matter either way?!

It looks like a recipe you invented.. You always do amazing things, this is the first one that doesn't. In my opinion, you can put peanut butter aside and dip instead of chocolate.
