    0:25 FIRST TIP : How to bake lunch box cakes. She uses a silicone mold with 6 spaces. You can stack the cakes after if you'd like. The mold spaces look to be about 4 inches each. This method you can use all the batter.
    OR 0:58 Use the one sheet pan method and use a cookie cutter to cut out the shape you'd like. With this method, you'll have extra cake pieces left over and you can use it to make cake pops or to eat.
    1:33 SECOND TIP : TRY TO MAKE EVERYTHING AHEAD OF TIME So you can concentrate on just decorating and icing your cakes the day that you need them. Cakes can be stored in the freezer as well as most frostings. Slice the layers so they're easy for stacking later. Put parchment paper between each later so they can be pulled apart easily when ready to use and wrap cakes in plastic wrap. These keep in the refrigerator for a few weeks and will still be really tasty.
    Her buttercream was stored in the freezer in an airtight container and will stay nice for a few months.
    1:53 Buttercream can be thawed overnight in the fridge and then brought to room temperature (usually a couple hours before using.)
    2:37 DECORATING SUCH SMALL CAKES
    The freezer not only helps preserve the cakes, it also helps them get really firm so when you get to decorating, they're not going to flop everywhere and the crumbs won't get everywhere.
    3:00 TIP 3 FOR THE LARGER CAKES you can use straws or a skewer to stabilize the layers. They'll help keep the cake still when decorating and you can remove them later on.
    3:23 BRIEF OVERVIEW OF DECORATING
    Put down a piece of parchment paper and then some buttercream to cement that first layer to the parchment.
    She's using the buttercream as a dam to put some sauce in the middle of the layer. This will prevent the sauce from leaking because it's not as firm as BC.
    You can do this method or pipe a circle around the perimeter of that first cake round.
    Then place on your second layer and proceed to do a crumb coat as usual.
    Do a thin layer of frosting along the top, secure with straw/skewer so the cake doesn't shift about and place some frosting along the sides.
    Once the sides are done, finish the top but pulling the frosting foward towards the middle.
    4:30 Let the cakes chill out in the fridge first before you do the 2nd coat or top coat. For these little cakes it's easier to do a semi naked look. It's very difficult to get a thick layer of frosting turn out really really straight along the sides because of the small size. Any deviation makes the cake look a bit lopsided. So she went with a semi naked look for all the cakes.
    4:55 TIP 4 HARD TO FROST CAKE STYLES
    If you dont want to first cakes, try these two styles.
    The heart cakes will be naked cakes. You'll leave the sides exposed and only put frosting on the insides and top.
    This is great for shapes that are difficult to frost cleanly.
    Just use whatever piping tip you want. She's using a round tip but you can use a star.
    6:04 LAST STYLE for hard to frost cakes
    Layered cake that fits exactly in the container. You don't have to use the piping bag if you dont want to, you can just dollop some frosting inside. Add your second layer, smooth out the frosting and you're done.

      You can def use whipped cream for these cakes :) If you have trouble frosting with it, it may be easier to stabilize it with cream cheese or mascarpone or gelatin.

    Question. When you take the cake out of the freezer do you let it defrost a little or you go right in to adding the frosting while it’s solid frozen. ❤

      So for these I use a couple different recipes - a funfetti box cake mix and my golden butter cake recipe on my website cakeculator.
      If you want to try you recipe again, is it possible to let it chill in the freezer (in the mold) for a little while to firm up before removing?

      I do both - I haven’t found it makes too much of a difference these days. They’re so thin that they don’t take long to thaw by the time you serve them :)

    I love it! thank you for the video. One question though, are there versatile recipes for this cake? I have been wanting to do this korean lunch box cake with a peach flavor and I was wondering if you came up with such fruity recipes for this same texture

      Yeah so I have all my cake recipes in my cakeculator, and I think if you're going for fruity cakes, I find the best way to get that across is with the filling instead of the cake itself.
      So for a peach cake, I would slice up fresh peaches and lay them in whipped cream inside some vanilla cake.
      Or if you wanted to go sweet peaches, you could make a peach jam or peach pie filling and then use buttercream to encase it within the cake. Then you have a contrast in not only taste, but texture as well ;)

I tried the slices before but it messed up my cake because it created a gap between the layers and made the cake has the semi-naked look, which wasn’t what I am shooting for. I’ll try the jam idea! Hoping it’ll work. Won’t the jam water down the buttercream? I had previous failure with melting buttercream between layers and I am hoping to avoid it this time 🥺

    I have been making these, but the problem I have is that they DO MOVE when I am putting in the frosting. Even with skewers, how to prevent that? Unless the skewers go into something under the cake.. I do secure with buttercream. Help!

      I baked my cakes at 350 F for about 18 minutes. You can start checking at 15 minutes just in case ;)

    How many layers the Korean cake should be? Because I see some ppl make 2 or 3 layers,is there a specific or exact height ? Like the size 4 inch ?

      It's whatever you want it to be! I do 2 layers because that's what fits in my takeout boxes, but a three layer cake would be gorgeous. There's no specific way, and I think the more you are creative with these, the better they will look :)

    So when the cakes get out of the freezer and they're super frozen, you don't have to thaw them out or anything?
    You just put the fillings in and then put it in the fridge for 20 mins? And then place it in the box and finish decorating?

      So if you’re just doing cakes I would recommend the silicone molds. If you plan on doing a little baking such as cake pops or cakes at Kohl’s then I love to use the half sheet tray method. And as far as working with frozen cake that’s fine... but the buttercream should be at room temp before using it.

      About 18-22 mins, depending on the recipe - just think of them like flatter cupcakes ;)

    I hace a question, how long does a cream cheese buttercream lasts in the freezer?

      So usually I don't freeze cream cheese buttercream, I don't think it should be an issue, but most buttercreams last for many weeks in the freezer in an airtight container. :)

    Can I store these cakes in the chiller instead of a freezer?
    If yes, how long can it last?

      Sure - at least a few days - check out my freezing cakes video if you want to see the effect on keeping cakes in the chiller. Only thing is make sure wrapping is airtight :)

    your tips are really helpful:)!! do we have to freeze the cakes after baking them or can we just let them sit out and cool before frosting ?

      You can absolutely frost fresh cakes! I do that sometimes too. I usually split up my tasks over several days though, and freezing helps preserve them if you want them for later.
