If you like making and growing your own characters, 9 is heaven. If you can understand Japanese, the voiced 3DS remake of 8 is heaven (though I imagine the localized version is equally so; they seem to be good at finding the right voice actors). Seriously the Japanese voice acting was ridiculously good. Really brought the script to life. 11 has some flaws but stands very tall indeed. I recommend the 3DS version for a second playthrough; the battle system is more akin to 9’s where you need to plan each turn for your entire team. I highly recommend 5 at your earliest convenience; it’s such a good game. Also a good entry point for Japanese learners. 6 has some major flaws but is still enjoyable. 7 is too long and drawn out. 10 is okay; you’re not missing that much if you haven’t played it. 4-8 had fantastic party chat. 9-10 opted for multiplayer/party builder so don’t have it. 11’s party chat is very lackluster in comparison to 4-8, requiring a menu trip to a separate screen where they don’t say much other than major story hints. DQ monsters series is awesome but niche; you’re either in the mood or you’re not.

For DQIX, is there anything missable if you don't go online? I haven't played that because I've been worried about that but if it's all experiencable in singleplayer, i should try it out!

Nah you can play DQ9 completely offline and miss nothing. The online was just a cool feature that was in there and was pretty crazy for the time.
