Nevaeh, you should be very proud of yourself for exposing your own health issues to an audience of people. This allows those who also have problems that they can find help by listening to others who are in the same predicament thereby gaining an ear to listen to.
I developed a gluten allergy after 40 years of eating my favorite food. Home made bread. I got to the point where my body wouldn't process it anymore. Blood coming from my liver and Kidneys. I'm so glad you caught it early. I do miss it. But I can breath better., that's the most important thing.
Going gluten free when you're not in control of the menu is tough! If I go out, it's almost always Mexican food, broiled chicken, fish, or a hamburger patty, and you still have to play twenty questions about seasonings, and making sure the bread doesn't get put on your plate. But it is so worth not being sick!

Awesome job Nevaeh. I have RA & I do intermittent fasting & did the JJ Virgin diet years ago to find what foods trigger a flair up. Of course it was gluten. I’m not faithful but I try to keep my gluten intake to a minimum. At my age, I’m just enjoying life, eating somewhat healthy, cardio classes & yoga ninja gramma. As a young person, TAKE CARE OF YOURSELF, it’s the only body you get. I knew something wasn’t quite right as a teen but wasn’t diagnosed with Rheumatoid Disease until my late 30’s. You are your best health advocate, never be bullied, speak up to your medical provider. Prayers to you & your sweet family, debby
Totally feel for your struggle! Our whole household had to transition to gluten free after our daughter developed extreme sensitivity to gluten after chemo treatments. It took two years before the rest of us stopped "cheating" when away from home. But we all felt so much better for it! By going GF in the home, our daughter's health improved so much! There was no cross contamination to her foods. I agree, travelling is so much work. We have to pack a cooler with prepared GF meals and a suitcase of foods. We found a great app to help us find GF restaurants and plan our stops accordingly. Mr. Mike's in our town is super accommodating, so we can eat out there from time to time. We feel so blessed to have her with us still, so it is all so worth the effort. Thankfully, more and more options are out there for the GF folks. You are so worth every effort and may God bless you were ever you go in Him!

Once you've had fillet mignon you never go back ... My granddaughter is only 4 and gluten free , I know how hard it is for you ... but it's made you feel so much better and better for overall health .... know your struggle! I was diagnosed with crohn's and celiac over a year ago. It is hard to go out and eat but one thing I have noticed on all my visits to Idaho, is that there is actually more places that have gluten free options than in California. Next time your family goes to CDA I would suggest to eat at Izzy's Country Kitchen. Their fried chicken sandwich on the gluten free bread is the best.
I think it’s great how you’ve learned a lot on your health issue with gluten and learning more about foods that are good without the gluten. We have a family member who also can’t eat gluten, but they have managed to find foods that are good and can be enjoyed. Your a inspiration to the younger generation who also can’t eat gluten. Kudos to you 😊

Excellent video! Fortunately I don't have a gluten problem but do have family members that do. Last year at Christmas time I invited my niece & family for lunch. I was concerned regarding what to serve. She told me not to be concerned but her 7 year old son has gluten issues. I went to the supermarket with a small list she provided. Didn't find most of the items but then I met a young man stocking shelves. I asked questions regarding snacks for my nephew and this employee happened to be a non gluten person. He helped me choose snacks that he enjoyed that were gluten free. He saved the day. My niece told me it was really nice to eat away from home and not have to tell her son he couldn't have the snacks that everyone else enjoyed. The best part is the other kiddo's didn't know they were eating gluten free and they all enjoyed the snacks. You did a great job on this video. You've helped bring awareness to others that gluten can be a health risk to many. Keep up the good work. I look forward to your next video. Merry Christmas Nevaeh!

My daughter didn’t find out she had celiac until she was in her twenties. It is a real learning curve for the entire family. You might want to read the label on “Rice Crispies” though because in our area they are made with malt which means barley which has gluten. She can eat fruity pebbles though and we make the marshmallow treats with them.
This, picking off the cracker from her salad, and her comment about eating deli meat off the sandwiches left me concerned because of cross contamination. I will say that it’s typically the Rice Krispies brand that has malt while other popped rice brands go without it, but it is always prudent to check the label. If her issues merely stem from a gluten sensitivity rather than celiac disease however, it may all be moot as perhaps it’s just minimal enough for her body not to react.
Great job Nevaeh. It truly is hard to adjust your eating habits after many years of eating a certain way. And with dietary restrictions, every facet of life can and will be affected. I found out I was allergic to FOWL meat when I was 8. Yep.. can't eat Chicken, Turkey, Dove, etc... EVERYONE serves chicken when you are a guest for dinner. My daughter is the same as you. She found out her gluten allergy when she was 16. Changing her eating habits completely eliminated many health issues we dealt with unsuccessfully. As a parent, I felt terrible we did not figure it out sooner - she had 3 endoscopies, several CAT scans, and too many trips to the doctor (poked and prodded and blood work done constantly). Now my daughter is completely vegan, has NO health issues, and is the healthiest of the entire family - an active hiker and rock climber. One tip as you get older.. do not be afraid to speak up about your allergy if you are going to a banquet or someone's house for dinner. Not speaking up will cause you to miss out on a nice dinner and potentially make the host feel bad because were only able to eat a dry salad (they will notice). Hosts asually appreciate knowing and being able to accommodate your eating restrictions (not always though) and you'll have to get used to the attention you'll draw as you get your "special" meal. Comes with the territory kiddo.. sorry. Hang in there. You'll get more and more accustomed to it and you'll find plenty of ways to inculcate your new diet into your life. God bless!
Hey Nevaeh. I have a good friend who FINALLY found out that she needed to be gluten free too. She now cooks some really terrific stuff. Has had me over for dinner a few times and, oh boy, what she made was always super good. Anything she made ! ! One time it was spaghetti and meatballs. But, the spaghetti was Spaghetti Squash. Fantastic with the meatballs and sauce. I have a spaghetti squash currently that I am going to do the same here at home. Have already made my own meatballs for it. She texted me about how to cook the spaghetti squash successfully that she finally figured out from trial and several errors. It really looks like spaghetti. Let me know if you are interested. She's taught me some other things too. I'm not in need of being gluten free, but I definitely have been in need of eating more healthy.

Good for you, Nevaeh! So proud of you to be willing to hit it head on at your young age. I've been GF for about 25 years now and trust me, it's a good time to be GF! There is sooo much out there and most restaurants are fairly knowledgable. Stay strong for you, sweet girl!

Hi Nevaeh! I have a similar problem, I’m on a low sodium diet, and like gluten, sodium appears in practically everything, so I have learned to be very vigilant. I usually try to go to restaurants that have a proper chef, then I ask to speak to the chef and tell him my dietary needs. It works especially well if they’re not busy, so you can often call them or speak to them before meal times. Any produce that’s part of their menu, is what he has to work with, so I usually ask for chicken and vegetables without sauce, salt or stuff that’s pre-packaged such as cheese and other deli items. I’ve also learned which products are low sodium so I can substitute those for other seasonings and sauces that are bad for me. Keep reading the ingredients labels on everything, you’ll gradually adapt and make note of the products that are great for you.

Nevaeh, I loved the expression on your face at your first taste of Filet Mignon. My family went out to eat on Sundays after church at a nice restaurant in my hometown. I alway ordered a hamburger and my dad would get a filet. One day, I was 5, my dad told the server to bring me a filet. He always said that was one of his biggest mistakes raising me (for obvious reasons). Keep it up. You are a wonderful, lovely young lady.
Talk to your Mom about learning to using quinoa flour and other glutin free grains I’ve made into flour. Had several friends with Cekiac disease that were wanting cinnamon rolls. Took me 5 tries but I did it!! Happy friends.
You got some MAD editing skills grrll, love me some cauliflow pizz myself, make sure you get the right pH water but not too much to prevent headaches as well, avoid anything with dyes as well like candy or cereal, what lovely family memories you created to cherish when you get old, happy holidays!

Nevaeh, completely understand your issue with eating out. I am Celiac, so not only do I have to ensure things are gluten free but you also have to be sure of no cross contamination by those who prepare or process the food. I remember when I was diagnosed in 2011 having to read the labels on products for gluten ingredients including additives. Thankfully over the years gluten free options have increased however Cooking and preparing your own fresh food is the best and healthier option. Cheers Louise from Australia
So sorry you struggle with food allergies sweetly! My daughter has mass cell activation syndrome. She is allergic to lots of foods and personal products like makeup etc. the list is enormous. She was renting a beautiful apartment in Colorado and she was poisoned by carbon monoxide leaking from the fireplaces he was 30 at the time & that is what triggered all these lists of food and environmental allergies. 🙏🏻🙏🏻🙏🏻Blessings

I worked at the CD'A resort for 2 days when I was about your age. lol FYI (if it's still on the menu) The Dockside butterfly shrimp is awesome and be careful when you order that big ice-cream thing in that huge cup! It's really huge! The whole time I saw you in the toy store, I was thinking I hope they go to the candy store! And what was the very next scene? lol No trip is complete without going to the candy store! And just when this video couldn't possibly get any better, you whip out the 100 Grand bar! My favorite of all time!

It was a lot of fun seeing the trip to Coeur d'Alene through the lens of one of the Sousa kids! Great video, Nevaeh! ~ I can relate to changing one's diet completely, but like you, it made a world of difference in how I felt. I started a ketogenic lifestyle five years ago (end of January) and it was one of the best things I've ever done for myself. I cook and bake SO much more often now and usually always have about 20 different main courses in the freezer at all times. This week I even made keto ketchup! I've made mayonnaise for years now, but this was my first attempt at ketchup. I think I have a new favorite condiment. Good cookbooks are essential!
I definitely feel for and with you Neveah! Food intolerances are a huge downer when you are unable to cook from scratch. I will share part of my personal journey, in order to give you and others some food for thought and encouragement to explore alternatives and refine your own diagnosis. Among my cousins and second cousins on both sides of my family are quite a few who are gluten or lactose intolerant, and we suspect one of my grandfathers to have had at least one of them. Research seems to suggest that gluten and lactose intolerances are inheritable. So when I started to develop an itch (but no rash) all over my body, celiac was high on the suspect list, given the fact that I had an intolerance to cow's milk for almost a year as a toddler. Lab tests of blood and intestinal biopsy where inconclusive, and a gluten-free diet offered only a very minor improvement in quality of life at a huge premium in the cost of living. Especially since the gluten-free products cost on average almost triple that of "normal" products. So my doctor told me that it was not worth it and to just grit my teeth and bear it. After a new GP became available and my symptoms became worse, I went back for another consultation. My new doctor finally suggested a detox diet with a commitment of at least three to four months and referred me to a dietitian. This consists of detoxification of your body for two weeks on a VERY restricted diet: rice, chicken breast, fish filet, salt, sugar, water. (Please consult with your local health care provider!) As the allergens get purged from the body, the symptoms should disappear. Then add one ingredient (e.g. apple, rye, oregano, quinoa, etc.) to your diet. If you remain free of symptoms for three days, you can keep it in your diet permanently, otherwise remove it and purge for three days. Rinse and repeat. This process of elimination takes at leas three months, and can easily stretch up to six months. Keeping a food diary can also be extremely helpful. For myself, I discovered a host of food ingredients that I can not tolerate. At worst a trace amount will trigger within two hours. And at the other end of are ingredients that are tolerable in small amounts once every three to four days. So my list from worst to least is: Mango, Figs, Sesame, Olives, Onions, Wheat (not gluten), Pork. There have been recent studies in Europe that found non-celiac intolerance to wheat, based on the breeding and selection of varieties for higher yield over the centuries. I could eat wheat products about once every three to four days. But if I consumed wheat products two days in a row, I suffered the consequences. After moving from Paraguay to Germany, I discovered that the wheat varieties commonly used on the German market caused me no issues. But a brief visit back to Paraguay revealed pretty severe symptoms to the wheat varieties used in central South America. Another thing to keep in mind with food intolerances is, that the preparation of the food also has a big influence on how well the body can tolerate and digest the food we eat. In my case, deep frying, frying, searing, sautéing and roasting with additional oil or fat is very bad for my digestion and general well-being. So I am preparing my food by either boiling, steaming or baking. Most of my meat (mostly beef and poultry) is slow-baked with a water-based marinade. You can take a 2nd or 3rd rate chunk of beef in marinade and slow-bake it at 160℃ for about six hours, and you will get a roast as tender and juicy as any 1st rate filet that costs three to five times as much. The microwave is also a good tool to prepare low-fat food and meals. Also keep in mind, that your sensitivity to the allergen can vary. So depending on your sensitivity you might be able to get away with the occasional "transgression". Case in point: Except for mango, figs and sesame that all trigger within less than four hours, I can get away with occasionally eating the other allergens. But for my sister, even the trace amount of butter left behind by cookies on a cooky sheet triggers an almost violent lactose intolerance reaction. With that said, I suspect from your apparently not having any negative reaction to the cracker that was on top of your salad, that you could safely ignore the warnings of "MAY CONTAIN TRACES OF GLUTEN". That label is basically a butt covering just in case of a cross contamination by either not getting all crevices of the equipment cleaned to perfection, or using gluten at the other side of the physical space. The fact that you use the same utensils as the rest of your family to prepare, serve and consume your food as the rest of your family, also supports the assumption that you are not affected by trace amounts of gluten. I wish you all the best in your ongoing journey of discovery. Also many congratulations to your family for accommodating your special needs and making the effort to either adapt their own diet and/or double cooking for you.

Yep, Mexican is the safest way to go! Almost everything on the menu is safe (minus flour tortilla)

I think it’s great how you’ve learned a lot on your health issue with gluten and learning more about foods that are good without the gluten. We have a family member who also can’t eat gluten, but they have managed to find foods that are good and can be enjoyed. Your a inspiration to the younger generation who also can’t eat gluten. Excellent video! Fortunately I don't have a gluten problem but do have family members that do. Last year at Christmas time I invited my niece & family for lunch. I was concerned regarding what to serve. She told me not to be concerned but her 7 year old son has gluten issues. I went to the supermarket with a small list she provided. Didn't find most of the items but then I met a young man stocking shelves. I asked questions regarding snacks for my nephew and this employee happened to be a non gluten person. He helped me choose snacks that he enjoyed that were gluten free. He saved the day. My niece told me it was really nice to eat away from home and not have to tell her son he couldn't have the snacks that everyone else enjoyed. The best part is the other kiddo's didn't know they were eating gluten free and they all enjoyed the snacks. You did a great job on this video. You've helped bring awareness to others that gluten can be a health risk to many. Keep up the good work. I look forward to your next video. Merry Christmas Nevaeh!

My daughter didn’t find out she had celiac until she was in her twenties. It is a real learning curve for the entire family. You might want to read the label on “Rice Crispies” though because in our area they are made with malt which means barley which has gluten. She can eat fruity pebbles though and we make the marshmallow treats with them.
This, picking off the cracker from her salad, and her comment about eating deli meat off the sandwiches left me concerned because of cross contamination. I will say that it’s typically the Rice Krispies brand that has malt while other popped rice brands go without it, but it is always prudent to check the label. If her issues merely stem from a gluten sensitivity rather than celiac disease however, it may all be moot as perhaps it’s just minimal enough for her body not to react.

Great job Nevaeh. It truly is hard to adjust your eating habits after many years of eating a certain way. And with dietary restrictions, every facet of life can and will be affected. I found out I was allergic to FOWL meat when I was 8. Yep.. can't eat Chicken, Turkey, Dove, etc... EVERYONE serves chicken when you are a guest for dinner. My daughter is the same as you. She found out her gluten allergy when she was 16. Changing her eating habits completely eliminated many health issues we dealt with unsuccessfully. As a parent, I felt terrible we did not figure it out sooner - she had 3 endoscopies, several CAT scans, and too many trips to the doctor (poked and prodded and blood work done constantly). Now my daughter is completely vegan, has NO health issues, and is the healthiest of the entire family - an active hiker and rock climber. One tip as you get older.. do not be afraid to speak up about your allergy if you are going to a banquet or someone's house for dinner. Not speaking up will cause you to miss out on a nice dinner and potentially make the host feel bad because were only able to eat a dry salad (they will notice). Hosts asually appreciate knowing and being able to accommodate your eating restrictions (not always though) and you'll have to get used to the attention you'll draw as you get your "special" meal. Comes with the territory kiddo.. sorry.
Hang in there. You'll get more and more accustomed to it and you'll find plenty of ways to inculcate your new diet into your life. God bless!
Hey Nevaeh. I have a good friend who FINALLY found out that she needed to be gluten free too. She now cooks some really terrific stuff. Has had me over for dinner a few times and, oh boy, what she made was always super good. Anything she made ! ! One time it was spaghetti and meatballs. But, the spaghetti was Spaghetti Squash. Fantastic with the meatballs and sauce. I have a spaghetti squash currently that I am going to do the same here at home. Have already made my own meatballs for it. She texted me about how to cook the spaghetti squash successfully that she finally figured out from trial and several errors. It really looks like spaghetti. Let me know if you are interested. She's taught me some other things too. I'm not in need of being gluten free, but I definitely have been in need of eating more healthy.

Hi Nevaeh! I have a similar problem, I’m on a low sodium diet, and like gluten, sodium appears in practically everything, so I have learned to be very vigilant. I usually try to go to restaurants that have a proper chef, then I ask to speak to the chef and tell him my dietary needs. It works especially well if they’re not busy, so you can often call them or speak to them before meal times. Any produce that’s part of their menu, is what he has to work with, so I usually ask for chicken and vegetables without sauce, salt or stuff that’s pre-packaged such as cheese and other deli items. I’ve also learned which products are low sodium so I can substitute those for other seasonings and sauces that are bad for me. Keep reading the ingredients labels on everything, you’ll gradually adapt and make note of the products that are great for you.

My family went out to eat on Sundays after church at a nice restaurant in my hometown. I alway ordered a hamburger and my dad would get a filet. One day, I was 5, my dad told the server to bring me a filet. He always said that was one of his biggest mistakes raising me (for obvious reasons).

Talk to your Mom about learning to using quinoa flour and other glutin free grains I’ve made into flour. Had several friends with Cekiac disease that were wanting cinnamon rolls. Took me 5 tries but I did it!! Happy friends.

Nevaeh, completely understand your issue with eating out. I am Celiac, so not only do I have to ensure things are gluten free but you also have to be sure of no cross contamination by those who prepare or process the food. I remember when I was diagnosed in 2011 having to read the labels on products for gluten ingredients including additives. Thankfully over the years gluten free options have increased however Cooking and preparing your own fresh food is the best and healthier option. Cheers Louise from Australia
So sorry you struggle with food allergies sweetly! My daughter has mass cell activation syndrome. She is allergic to lots of foods and personal products like makeup etc. the list is enormous. She was renting a beautiful apartment in Colorado and she was poisoned by carbon monoxide leaking from the fireplaces he was 30 at the time & that is what triggered all these lists of food and environmental allergies. 🙏🏻🙏🏻🙏🏻Blessings
Nevaeh, my wife has this condition, and it makes things difficult when going to the store or restaurants. This is becoming a common thing, mostly due to how farmers and others treat their crops. Good luck in the future.

OMG I lived in CD'A ID for years! I worked at the CD'A resort for 2 days when I was about your age. lol FYI (if it's still on the menu) The Dockside butterfly shrimp is awesome and be careful when you order that big ice-cream thing in that huge cup! It's really huge! The whole time I saw you in the toy store, I was thinking I hope they go to the candy store! And what was the very next scene? lol No trip is complete without going to the candy store! And just when this video couldn't possibly get any better, you whip out the 100 Grand bar! My favorite of all time!

It was a lot of fun seeing the trip to Coeur d'Alene through the lens of one of the Sousa kids! Great video, Nevaeh! ~ I can relate to changing one's diet completely, but like you, it made a world of difference in how I felt. I started a ketogenic lifestyle five years ago (end of January) and it was one of the best things I've ever done for myself. I cook and bake SO much more often now and usually always have about 20 different main courses in the freezer at all times. This week I even made keto ketchup! I've made mayonnaise for years now, but this was my first attempt at ketchup. I think I have a new favorite condiment. Good cookbooks are essential!

I definitely feel for and with you Neveah! Food intolerances are a huge downer when you are unable to cook from scratch.
I will share part of my personal journey, in order to give you and others some food for thought and encouragement to explore alternatives and refine your own diagnosis. Among my cousins and second cousins on both sides of my family are quite a few who are gluten or lactose intolerant, and we suspect one of my grandfathers to have had at least one of them. Research seems to suggest that gluten and lactose intolerances are inheritable. So when I started to develop an itch (but no rash) all over my body, celiac was high on the suspect list, given the fact that I had an intolerance to cow's milk for almost a year as a toddler.
Lab tests of blood and intestinal biopsy where inconclusive, and a gluten-free diet offered only a very minor improvement in quality of life at a huge premium in the cost of living. Especially since the gluten-free products cost on average almost triple that of "normal" products. So my doctor told me that it was not worth it and to just grit my teeth and bear it. After a new GP became available and my symptoms became worse, I went back for another consultation. My new doctor finally suggested a detox diet with a commitment of at least three to four months and referred me to a dietitian. This consists of detoxification of your body for two weeks on a VERY restricted diet: rice, chicken breast, fish filet, salt, sugar, water. (Please consult with your local health care provider!) As the allergens get purged from the body, the symptoms should disappear. Then add one ingredient (e.g. apple, rye, oregano, quinoa, etc.) to your diet. If you remain free of symptoms for three days, you can keep it in your diet permanently, otherwise remove it and purge for three days. Rinse and repeat.
This process of elimination takes at leas three months, and can easily stretch up to six months. Keeping a food diary can also be extremely helpful.
For myself, I discovered a host of food ingredients that I can not tolerate. At worst a trace amount will trigger within two hours. And at the other end of are ingredients that are tolerable in small amounts once every three to four days. So my list from worst to least is: Mango, Figs, Sesame, Olives, Onions, Wheat (not gluten), Pork.
There have been recent studies in Europe that found non-celiac intolerance to wheat, based on the breeding and selection of varieties for higher yield over the centuries. I could eat wheat products about once every three to four days. But if I consumed wheat products two days in a row, I suffered the consequences.
After moving from Paraguay to Germany, I discovered that the wheat varieties commonly used on the German market caused me no issues. But a brief visit back to Paraguay revealed pretty severe symptoms to the wheat varieties used in central South America.
Another thing to keep in mind with food intolerances is, that the preparation of the food also has a big influence on how well the body can tolerate and digest the food we eat.
In my case, deep frying, frying, searing, sautéing and roasting with additional oil or fat is very bad for my digestion and general well-being. So I am preparing my food by either boiling, steaming or baking. Most of my meat (mostly beef and poultry) is slow-baked with a water-based marinade. You can take a 2nd or 3rd rate chunk of beef in marinade and slow-bake it at 160℃ for about six hours, and you will get a roast as tender and juicy as any 1st rate filet that costs three to five times as much.
The microwave is also a good tool to prepare low-fat food and meals.
Also keep in mind, that your sensitivity to the allergen can vary. So depending on your sensitivity you might be able to get away with the occasional "transgression". Case in point: Except for mango, figs and sesame that all trigger within less than four hours, I can get away with occasionally eating the other allergens. But for my sister, even the trace amount of butter left behind by cookies on a cooky sheet triggers an almost violent lactose intolerance reaction.
With that said, I suspect from your apparently not having any negative reaction to the cracker that was on top of your salad, that you could safely ignore the warnings of "MAY CONTAIN TRACES OF GLUTEN". That label is basically a butt covering just in case of a cross contamination by either not getting all crevices of the equipment cleaned to perfection, or using gluten at the other side of the physical space. The fact that you use the same utensils as the rest of your family to prepare, serve and consume your food as the rest of your family, also supports the assumption that you are not affected by trace amounts of gluten.
I wish you all the best in your ongoing journey of discovery. Also many congratulations to your family for accommodating your special needs and making the effort to either adapt their own diet and/or double cooking for you.
