    Edit: I have made this many times now. Worked every single time. Even without a thermometer, just heat the milk until you see smoke rising off the top. That's enough heat. Then pour it into the ginger.
    This really tastes so great in the mouth. Texture feels like solid water, lol. I tried all types of milk, lactose free, regular toned, full fat ... works with everything. But ... do not use condensed milk. It works, but it turns out so heavy, you will feel sick after eating just a few spoonfuls...

      Won't it affect out stomach issue milk is boiled completely or should we use fully boiled cooled milk and then again boil to 70 c

    This is so nice! You have to love the bite of fresh ginger, obviously, which my family does. I had no idea that fresh ginger had this amazing property, so thank you so much for this recipe. I used whole milk from a local farm, and it was delicious and wobbly and fun to eat.

      I make a 'tincture' of ground ginger in Vodka and I noticed the white powder that floats to the bottom... didn't know it was starch! Excellent morning drink in some OJ... really warms you up.

    I was sceptic, cos I can fuck up every recepie in first try and I have mixed feelings whether I like ginger or not but this was to interesting and easy that I decided to try. As I don't have termometr I just let milk on stove to the point it was hot on skin but not burning-hot and it worked perfectly and honestly it's one of the most delicious thinks I ever eat

    For everyone who wondering whether it can be done with soymilk. East meets kitchen here on youtube has a recipe. She does same method but you steam it for 10mins afterward you pour milk into ginger juice . Steam until just set. Hope this helps.

    I love ginger everything. I have never heard of this and will give it a try. I just made it this evening a few days after my initial comment. It is so delicious, but you have to love ginger. Both my daughters really liked it. The pudding formed very nicely. Really warmed my tummy. Great for when the weather is cold.

    I had no idea the ginger juice was supposed to be fresh-squeezed, so I just bought a bottle of stuff at the store. Alas, though it failed to curdle properly, it still ended up being a pretty tasty drink!

    Interesting, never knew ginger could substitute starch for pudding. Just made the recipe, pretty tasty and nourishing!

      It's not the starch that thickens the milk, it's an enzymatic process which denatures the milk proteins in a similar way to how yoghurt is formed.

    My daughter's boyfriend showed me this just a week or so ago but he said it did not turn out quite as well as when his mom makes it, he had not put sugar in it though. It was a little thick but not enough he said. I thought it still tasted nice, has a spicy taste to it, yummy. I'm going to try this recipe cause it was so good and I want to be successful when I do ☺ thank you!!

    it's delicious. it was a little hard pressing the ginger juice, and I wish it was a little bit thicker, but I think I can try another time and it all will work better. thank you for the recipe!

    Will this recipe work with honey or do the enzymes in honey negate the enzymes in the ginger?

      The enzymes in honey are pretty much sugar, so it should be fine.

      Depends on the honey, but you're probably fine, most honey isn't very active unless it's specific stuff from health food shops. !also no sugar is not an enzyme lmao)

    I fetched the freshest ginger I could get from our local grocery. It is from China and the skin of the ginger looks quite fresh. However, it may have traveled for a couple of months though. I am asking myself wether this ginger is fresh enough for this recipe. I tried it 20 minutes ago but the pudding does not seem to sit. My milk is a local fresh milk 3.8 % fat brand "Landliebe".
    Just wondering.

    Do you think it's OK to add some sticky rice or risotto rice for a little more texture or is the pudding to light? I'm going to check that out and see what happens. Next stop my local Asian Market in Lancaster PA .🐼✌💗

      @@clairemcleod8676 If it doesn't set. Try a little gelatin in the warm milk. Strain it. Then add the ginger and sugar. I plan to experiment with it.

      I wondered too but I think the reason that this pudding and simple cheese making [using lemon juice in scalded milk] works are because of the milk protein: casein. This is not present in plant based 'milks'. Sadly :-(

      You should eat it when it is hot or warm. If you let it get cold, it will develope a bitter taste.

    Hi! You have the best cooking channel ever! I am unsure if you were born to teach, cook, inspire or entertain? Or all of the above!? Such talent! I feel like you are a genuine teacher who wants people to learn. I think you are amazing! Will you have a cook book?
    I am wondering, can I make a request or suggestion: Can you please do few more Hong Kong recipes? I was in Hong Kong few years ago, fell in love with beautiful dishes but I can't quite find authentic dishes here in the west. They are all too sweet or just not the same. One being, i am not sure exact name, but steamed custard bun. Its like a desert. It looks like an egg... white soft bread and yellow mild sweetness inside. But Its very hard to find here, and when i do its extremely sweet and sickening. Its just not the same! Same with HK tea and coffee! What is the mystery secret to HK tea and coffee? I haven't tasted anything like it in china towns in the west. Its always different. I am not even sure what made their teas unique. It had some magic flavour i don't even understand!!!?? Mixed with Green tea or Jasmine???? Whats the secret? Milk? Also sesame deserts!? And i am not sure what those rolls are called, with different fillings, steamed rice flour pancakes rolled with different ingredients! I wasn't entirely sure how to eat those either!
    Oh yes, I do secretly enjoy learning from you proper eating technique. Can you do more videos on how to politely eat Asian food? I find that noodles slip out of chop sticks from soup. I cant find nice chop sticks... where to buy nice chop sticks? Also my hand gets tired from eating with chop sticks... i noticed you hold the chop sticks somehow... differently then i do. I mean, i can eat for 1 hour using chop stick... but i get sore hand and fingers... lots of strain. Any teaching methods on etiquette and techniques on how to eat politely, soups, noodles ... rice etc.
    Great Channel! And I love your personality... happy, cheeky, wise, serious and funny! Great combination! I love watching your vidoes, very relaxing. So happy there is no music or crazy sounds and pictures like for teenagers. This is just... pure business art! So... relaxing. Its like 1 on 1 class with a friend or ... chef!? Personal instructional videos. Very relaxing.. like we are your friends invited to your kitchen to see how you cook and learn! Amazing!
    P.S. My family was mind blown by my stir fried pork! You should have seen their eyes! "What did you do to the meat? Its so soft inside yet cooked on outside?" Even I never tasted anything like it in my life! Mind blown! Usually my meat ends up dry! This was.... wowwwww! Thank you! I hope with time and more practice, I will get better! I am not that good... but I enjoy it! (I cheated with store bought dumpling wrappings ..shh ;) ill make them one day from scratch! But atm i am so slow with cooking!)

      I just note she has a video of making streamed custard bun. I guess you may able to find some frozen ones from some of the oriental grocery stores. I guess most of the dim sum restaurants in the big cities/China Town would serve this too. There are quite many TH-cam videos about Hong Kong milk tea in English as well.
      Not sure if there’s Marks & Spencer (a British multinational retailer) near your place. Its Extra Strong Tea with evaporated milk would resemble (of course not be the same) the HK milk tea. Hope it helps.
