Green Minestrone Soup (Fast & Easy) 🥣

    Ingredients.
    2 cups of Fussili
    1 14 oz can Cannellini beans
    1/4 cup of Pesto
    6 cups chicken Stock. Use stock NOT bullion
    4 cloves minced Garlic.
    Parmesan Cheese and a 1 inch piece of its rind
    1 medium zucchini
    1 medium leek
    1/2 cup of fresh Peas
    About 8 oz of Asparagus trimmed
    5 oz of spinach
    A half of a lemon
    Directions:
    Begin by trimming the ends of the leek and slicing it into thinly cut half moons. Then wash them well.
    Cut the asparagus into 1 inch pieces.
    Cut the ends off the zucchini Cut it in half. Then quarters and dice.
    Half your lemon.
    Dice the garlic.
    Place a dutch oven over medium heat with 3 tablespoons olive oil.
    Add the leeks and stir often until they begin to brown, around 3 to 5 minutes.
    Add the garlic and a pinch of salt and cook for 2 minutes, or until the leeks are lightly browned.
    Add the stock.
    Place the cheese rind in the pot.
    Bring it to a boil then reduce the heat to medium low. Cover it up and let simmer for 10 minutes.
    After 10 minutes uncover and add the pasta and the beans. Give it a stir, bring to a boil and cover for 4 minutes.
    Add the asparagus and zucchini and cover for another two minutes.
    Then add the peas, pesto, and spinach.
    Once the spinach is well wilted add lemon juice.
    Plate it with graded Parmesan, and another dollop of pesto and serve.
