Mixing Pancakes the Perfect Amount

- Pancakes (yield: 1 dozen pancakes)
2 c (280g) AP flour
1/4 c (50g) maple sugar
1 tbsp (12g) baking powder
1/2 tsp (3g) baking soda
1/2 tsp (3g) fine salt
1.5 c (341g) milk
2 eggs
1 tsp vanilla extract
2 oz (57g) melted butter or vegetable oil
1. Mix all the dry ingredients together in a bowl.
2. In a separate container, whisk together the milk, eggs, and vanilla. Add in the melted butter or oil.
3. Combine the dry and wet ingredients and mix just until you can't see dry flour (there will be some lumps).
4. Scoop onto a lightly greased griddle, cook until the bottom is golden, flip, and cook until golden again.

Here's another tip, overmixing works really well if you make them thin, it gives more of a crepe feel rather than something being done wrong
Also add an egg for a crepe

Example: Lawn sprayer breaks down while working in someone's yard, I talk over the phone and my boss says "good, you see that wingnut? Just tighten it until it feels right, BUT DON'T OVERTIGHTEN IT!!!! OR THE WHOLE THING WILL EXPLODE!!!!"

This is why my pancakes always turned out fluffy 😂 I never purposely did it it’s just after a while I’d get tired of mixing and would just think “I’m sure the rest of the lumps won’t make much a difference”

@@SnailHatan Well more likely I use the wrong materials since I use like a spoon and I make a lot of pancake mixture because I have a lot of mouths to feed. It definitely takes longer than 15 seconds for me but yeah 👍

The only time you want zero lumps is cake mix from a box. Even cakes and brownies you want a little bit of lumps.

Mixing until it's completely smooth is just the European way of doing it. It's not wrong just a different result

Sir, you’re a life saver. I always thought I had to get the lumps out.
I separate the egg whites from the yolk, whisk them until they are stiff and fluffy and them fold them into the batter. Always a safe bet to make them fluffy
I do this, but I also use milk instead of water.
@@roarnell Me, too. Couldn't imagine using only water for the batter; you can add a spritzer of sparkling water to it though, makes them even a little airier
Okay so hear me out.. I always “over mix” mine. But I use this protein pancake mix and I make waffles with it. I always overcook them to where they’re crunchy (and I add some chocolate chips before I cook them) and then I top them with a tiny tiny tiny amount of maple syrup and I’m not even kidding. They taste exactly like chocolate chip cookies. Like exactly the same. Crunchy on the outside but chewy on the inside. I would say I like them 10x more than any cookie I’ve ever had and I used to love cookies more than anything. I’d take these over any cookie I was offered. They’re literally perfect.

Another tip is to use sparkling water instead of regular if you want really fluffy pancakes. The carbonation really does the trick.
Water to the pancakes? They don't even need water in the first place
Whole milk is 87% water so even if you use milk you're adding water.

@@JnManuelAG some European recipes call for milk+water and people usually go for carbonated water. You could experiment with your American pancakes and add sparkling water instead of half the milk

This is so true! In culinary school they tell you not to overmix and to let the batter sit for a few minutes to dissolve the lumps! (Dont let it sit TOO long or it’ll use up a good amount of the leavening if your baking powder isn’t double acting. )
(the reason over mixing is bad is because gluten is activated by agitation and liquid- and gluten is responsible for the texture, high gluten= chewy and gummy)
It can't JUST be the gluten - I have to eat gluten free, and not overmixing makes a HUGE difference in gf pancakes as well. My guess is that it has something to do with how the moisture disperses through the pancake - maybe the clumps soak up the steam as it cooks?

Love this! I learned the hard way one Saturday morning. Pancakes were chewy and almost rubbery in texture. Did it again; mixed until flour was not visible and the pancakes came out perfect! 😊
Overmixing isn't always a bad thing, as long as you adjust the thickness of the batter to get the perfect texture! Thank you for the tip!

I always make the overmixed batter. So that is why my pancakes always failed. I thought it was the ingredients.
Ok I have made tons of pancake variations and currently this is my favorite (trust me yall these are crazily fluffy and so good)
2 cups all purpose | plain flour, (290 g | 10 oz)
1/4 cup granulated sugar or sweetener, (60g | 2 oz)
4 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups milk, (440ml)
1/4 cup butter, (60g | 2 oz)
2 teaspoons pure vanilla extract
1 large egg
*Blows up pancakes with mind*
I honestly can't say how many times you have genuinely saved me with your videos.
I also want to add, replacing water with milk can really help make a fluffier pancake. Yes, I used to just use water because that was in the instructions of the packaging and sometimes we ran out of milk.
I put beer for tempura
Nah the real trick is to use buttermilk and let it sit for at least 20 minutes to an hour so they form BIG air bubbles. Always fluffy and no lumps of flour in your pancake. It should look similar to a sourdough starter. Letting it sit overnight will make them taste better but won’t make them as airy (it tends to fall flat in my experience if left too long, at least at cold temps). Forming the bubbles and getting them into the pan ASAP is the best for texture.

My mother used to over mix, while one of my older brothers didn't mix them properly. Eventually i took control and now they are always fluffy

I thought about you when making brownies from scratch. I aimed to fold until no dry flour was showing. I was careful not to overcook, but aimed at just very slightly undercooked and let it rest for a while. They came out perfectly. They wouldn't have if I hadn't watched some of your shorts over the previous few months for tips :)

I've also found that letting the batter sit for a couple minutes to hydrate those clumps before cooking helps too!
