Grow almost all of the ones you mentioned, except for broccoli, I grow Arcadia or Waltham and for Cauliflower I grow Durgesh 41. I also start my onions this time of the year. My favorites are White Creole and Red Creole.

Your in a colder climate that I am. Not sure when your first frost date is. Mine is the last week of December so I have plenty of time to grow lots of things. I would focus on quick maturing varieties of things to make sure you harvest before your first frost arrives. Or start planting things that survive/produce during the winter.
I just bought some of those really long squash ( don't ask me to spell it though lol) banana peppers, and rosa bianca eggplant seeds, from your Etsy site, they should be arriving soon. Can't wait to try them!

I have a question I would like to seed save but I'm a worry wort and I worry about what my plants look like what does the fruit looks like...is my worrying justified or do I need to relax and save seeds.
Relax and save seeds. You have to allow the flowers and fruit to dry out in most cases to harvest seeds out. So the plants will not look great by that point. Seed saving is different depending on the crop.

Have you ever tried growing Ethiopian kale? Seeds are available from Echo.
Yes, I have some growing in my garden right now. I still think the lacinato kale is more heat tolerant. I have seeds on my website for both.

I have a hard time growing milkweed from seeds, you got a tutorial to grow them?
They can be tricky. Sometimes it helps to place the seeds in the fridge for about 4 weeks before sowing seeds.
